"Cooler" products are actually just flavored beers, made by a similar process as beer brewing. Distilled spirits generally separate from any gluten during distillation. -

Milk makes me itch now. I've had a large patch of eczema on my calf for about 20 years. I noticed that milk caused me sinus congestion. I dropped milk to see if it would help. My shortness of breath continued to persist until I dropped dairy. I think dairy effects my lungs. -
I wanted to report my experience that GarFava flour makes the best roux for cajun cooking. I've tried several. The last I had tried was soy, but found it gritty and it also effected the aroma of dishes. It takes only about 5 minutes to cook the GarFava roux. It takes about 3 minutes before it starts to turn dark.

I'm at the 2 year mark. I had good/bad days too. I discovered my bad days were not from gluten, but other food problems. I dropped milk and now have almost entirely good days. I suggest you get tested first.

It's said a person how serves as his/her own physician has a fool for a doctor, but reading these boards there seems to be no shortage of fools in the medical community already... I'd say it's rather improbable a gluten-free diet will cause you to improve from some other ailment. If it doesn't help you, go back to the doctor. -

Anyone in your family have lupus? It killed my grandmother. I figure it could kill me, too. Anyone have rhumatoid arthritis? That would be a nasty thing to get. Since going gluten-free 2 years ago, I'm now starting to have problems with other foods. York allergy testing reveals milk and soy (among too many others) are a problem. A gluten challenge is a way for the doctor to convince him/herself that you have celiac disease. If the biopsy doesn't happen to support the diagnosis, you are left with a dilemma. If you feel better without gluten, go with your gut. -

I look at it this way, what if my next presentation of gluten sensitivity is lupus or rhumatoid arthritis instead of the lovely mess of eczema I now have. My grandmother died from lupus. I don't think a donut or piece of cake or once favored fast food item is really worth it for me. -

Everything I've read indicates that its all about too much water at the end of the bake. The steam holds up the loaf. When it cools, the steam cools and the loaf collapses. The loaf has to "set", such that the bread holds itself up. Too much water and/or too little baking time is generally the problem.

I'm not saying that anyone should be happy about getting any amount of gluten in a "gluten-free" product. I'm just saying that it will be impossible to achieve - all the time - and still be affordable. If anyone wants to ensure they are 0ppm gluten-free, all the time, they should stop eating any gluten-free grain products. No breads, cakes, cookies,... -

travelthomas, To suggest that 0ppm is practical by "just creating the proper environment", to paraphrase, is unsupportable. Generally, quantums in purity are achived by quantums in additional cost. I doubt anyone will be able to afford a $40 or $400 bag of 0 parts per million gluten-free grain flour. -

I won't cook anything with gluten; others in our home may cook what they like. I keep my own toaster ($10) and crumbs on the counter worry me, otherwise I use the same pots and pans. Beware the butter dish! Some people say that you damage yourself even if you don't react, but that is assumed, not proven. -

Be aware that so-called non-dairy creamers often contain sodium caseinate. Casein is the protein in milk that bothers us. Non-dairy creamers bother me. I switched to Silk brank soy creamer and it hits the spot.
