    ps. thanks for the info about FA. i knew all their products wern't gluten free, but i must have been there on a good day, because the owner (?) was there, and he was super knowledgeable! he even explained and talked to me about ingredients for like 10 minutes before i even bought anything! :) The carrot muffing was AMAzinG!!! Anyways, i will definitley have to check out ener-g foods! i had no idea they were in seattle! im sooo there!

  3. It seems like many of you have other sensitivities besides gluten, and I wondered if you could give me some advice...

    After year #1 on a gluten-free diet, I was feeling great...antibodies came down remarkably well, and I felt like a whole new person! However, ever since then (the last 1 - 1.5 years) I haven't been feeling as consistently well. I don't think I've gotten lazy about the diet, and there's nothing else obvious that has changed. Perhaps I've grown more sensitive to other things in my diet? I recently went through a month-long ordeal of feeling horrible all over again...just like right before I got diagnosed... could barely make it through a day of work (fortunately my apartment is only 2 blocks away & I have a very flexible schedule!!!), abdominal pain again, so tired, etc. Yet, when I went to my doc, all my antibody levels were normal. It's gotten somewhat better in the past couple of weeks, but I'm still not well. It seems that I occassionally get these brief periods of misery that eventually get better for a while. I was so amazed when I responded so quickly to the gluten-free diet initially a few years ago, but now I'm really not feeling well again even though I'm not eating gluten.

    So... how do I go about finding out if I have other food sensitivities? Are there other blood tests? I'm sure it'd be good to keep a food journal for a while to see if I can notice any patterns. I'll make a follow-up appt with my doc too.

    Any advice would be helpful!

    omigosh, i totally know what you're talking about, i've been feeling the same way latley...i'm thinking i have a corn intolerance now...i know for a fact that i wasn't getting glutened from anything, but similar sympotms have recently been comming up. i did notice that i have eaten ALOT of corn in the last few years...like a few meals a day...popped corn, corn chips, hot cereal, polenta, corn on the cobb...etc. anyways, i've been off corn for three days now, and am starting to feel better... it makes me more sad than you can possibly imagine...but i'm afraid that might be it...i'm getting tested next month... is there something in your diet like that, that may be affecting you?

  4. so, is it just me, or does anyone else feel like they are the ONLY person in the entire universe that has celiac disease!?? I mean...yah... you all have it (lol) but i mean like in "the real world" the people you meet in everyday life... (sigh)..... no one gets it... yesterday, this girl at my church ( trying so hard to be sweet!!)) said "i made some bread that you can have... it's called oat maple bread and it doesnt have WHOLE wheat flour..." i said.. wow, yah, thanks! :) um... i can't really have oats and i can't have any flour... she used bleached flour and thought it was okay.... :( anyways... so sometimes when i'm home alone, or even when i'm at a church potluck, but mostly when i'm home alone... i just want to tear into a loaf of great harvest honey whole wheat bread, ( i don't know why i buy it for my hubby-i torture myself!!!) anyways... i want to chuck the stupid "rice LOAF" that's so dense-and-hard-it-could-seriously-injure-someone-if-you-used-it-as-a-weapon, out the window and dump the soggy quinoa spiral noodles in the toilet where they belong and eat some good old top ramen! ai yai yai... i feel crazy sometimes, like this disease is not real and that if i believe that hard enough that i can go back to eating like a "normal person" i mean, i've been SOOOO stinkin good for SOOO long, it's been a while since i've had a bad reaction, and a few years since i've been constantly sick...i feel so healthy now!! :) i think i almost need to be glutened once in a while so i don't feel so deprived....anyhoo...so here i am home alone....barry left some cookies on the counter....RarrrRrr..

    I have been seeing my Chiropractor and he knows a little more about this then I do. He is bone crunching me 3-times-a-week. What he has me doing is having a big meal for breakfast. For me I can't do the peanut butter, ice cream or any of the ultra yummy things like that. I started off about 6 years ago when I came down with celiac disease and the seizures that came with it stared a few years before. I stopped the gluten and dairy cold-turkey no problem. Thought I was doing great and then S-T-R-E-S-S hit hard 4 hurricanes in 2 years and other drama. I thought I was doing good not cheating. I had been eating lots of RICE, CORN, NIGHT SHADE VEGGIES, LEGUMES, NUTS, & SOY lots of soy. It's in everything. Then I developed a major thyroid problem. And my life suddenly changed again... I thought celiac disease and these secondary food allergies, seem to pop up out of no-where-land. And got sicker and now 6 years later I can NOT eats CORN, NIGHT SHADE VEGGIES, LEGUMES, NUTS & SOY.

    What my Chiropractor is doing is bone crunching and "resetting" my body as he puts it. What he has me doing is -- a big dinner type meal for breakfast and a carb-like veggie 3 times a week. For a snack after breakfast before lunch I make fresh fruit smoothes (3 bannana's, blackberries, raspberries). I can't miss lunch, and another snack of fruit or sqeezed fresh veggie juice. And then a healthy protein and veggie dinner without CARBS, rice, potatoes, you know starchy veggies like spaghetti squash. NOT at dinner time only in the early part of the day. And I had been exercising at night; he wants me to do it day time.

    I have a hard time with rice & potatoes makes me feel kind-a- bla. I am only doing it 2 to 3 times a week in the MORNINGS ONLY. I don't get the night sweats if I do this.

    I don't know if any of you have a Chiropractor you can "talk to" and understands celiac disease and digestive problems you might be able to realign your body to aid in the area of digestion and weight gain?

    I can't consume Boost or Ensure Plus they are filled with: D Water, corn syrup, maltodextrin (corn), sodium and calcium caseinates, sugar (sucrose), canola oil, corn oil, high-oleic safflower oil, soy protein isolate, magnesium chloride, potassium citrate, calcium phosphate tribasic, soy lecithin, natural and artificial flavor, potassium chloride, sodium citrate, magnesium phosphate dibasic, choline chloride, ascorbic acid, carrageenan, ferrous sulfate, alpha-tocopheryl acetate, zinc sulfate, niacinamide, calcium pantothenate, manganese sulfate, cupric sulfate, vitamin A palmitate, thiamine chloride hydrochloride, pyridoxine hydrochloride, riboflavin, folic acid, chromium chloride, biotin, sodium molybdate, sodium selenate, potassium iodide, phylloquinone, vitamin D3 and cyanocobalamin.

    i was down to 85 pounds, and now i'm a healthy 103 :) i had to meet with a nutritionist because i was having so much trouble gaining weight. i ate really healthy and i love running so i didn't want to give those up. this is one thing my dr. had me do; make a protein shake every morning!

    i put in a handful of strawberries, blueberries, a bananna, 2 tbs. of protein powder, 2 tbs flax seed oil, 1 tbs of ground flaxseed. i also took fish oil supplements as well as mCT (medium chain triglycride) oils. she had me snack on plenty of nuts, nut butters, avacado, and decrease the amount of miles i ran in the morning. to gain about twenty pounds the healthy way it took me about a year and a half. also, you can snack on gluten free protein-ish bars like lara and nectar before you go to bed, pop corn popped in olive oil, and homemade hummus with a generous amount of olive oil and tahinni

  6. When I found out I was gluten intolerant (blood test very positive and positive response to dietary changes) I also found out I was hypothyroid. All I have to say is being hypothyroid sucks badly. I play basketball for the University of Missouri-St. Louis, and our coach weighs us. I can't tell you how embarrassed and frustrated I am when I weigh more than I know I should even though I eat carrots and lean meats all day (I am on the Specific Carbohydrate Diet), and trying to explain any biology or biochemistry to him would be like trying to teach your dog how to fly an air plane.

    I am just wondering who else has thyroid problems as well!

    i feel your pain, i was diagnosed wiht hypothyroidism as well! Are you on medication? i am, and it has helped with the extreme tiredness and dry shkin.

  7. My Girlfiend is Gluten free, Vegitarian and she enjoys camping and hiking and she really wants to try backpacking. I want to take her for a 2 or 3 day trip but i don't know what kinds of things she can eat that would be easy to prepare and light weight, i trypcally take military rations because they are light and done need preperation, but she wouldn't be able to eat those. Can anyone help?

    my husband and i love backpacking! i'm a vegetarian too and this is what we do when we go on longer hikes. breakfast and snacks= larabars and cliff nectar bars (the chocoate is the best, tastes like a brownie!!) or enjoy life! brand granola the berry flavored is the best...or if you like hot cereal, Bobs read meal mighty tasty gluten free breakfast is pretty good.

    for lunch (if she enjoys ethnic foods) taste of india brand lentils and rice, etc. it's ALL gluten free and very very very tasty! i even get it when we're not going hiking.

    also for snacks bring lots of nuts! they're full of protein and energy! we also always bring in fruit, even though it's more weight, if you eat a few apples a day, the weight, like all the other food, diminishes.

    last, trader joe's has handy pre cooked rice in pouches that you could bring. hope this helps. at first hiking gluten free & vegetarian seemed difficult, but after you do it once, it's really easy. :)

  8. If you like soups, they are inexpensive to make, and can be really tasty!

    I frequently make split pea (my favorite!!), lentil, tortilla, veggie, black bean, etc. If you're a vegan, vegetarian, those are great choices, and there are tons of recipies on the internet. Also, my husband and i do tons of mexican food, (beans homemade salsa, lettuce, and corn tortillas).... um... we also do lots of spaghetti! i love making my own chunky veggie sauce, and the rice noodles are quite inexpensive. If you have a trader Joes, its like $2 for a bag of noodles. Rice is also very inexpensive and you can get tons of great recipes for rice off of the internet... and if you eat potatoes they are cheap! i agree! gluten free food can be soooo expensive~ yesterday, my husband and i drove through portland and went to whole foods market. he wanted to buy me blueberry muffins (they have a gluten-free line) and it was $8 for four muffins!!! sooo expensive! i told him it wasnt fair that gluten-free food has to be soo expensive! but he reminded me that we eat so healthy and we are blessed not to be eating a bunch of processed junk~ :) i agreed. and eating those treats every once in a while (like when we go to portland) makes it much more enjoyable!

  9. i've read a lot about raw diets... one of the main purposes of the raw foods diet is becasue people are concerned with the way that foods loose nutrients and enzymes when they are cooked. I try to eat tons of raw veggies, and steam veggies instead of boiling or microwaving. Some foods have to be cooked for your system to digest. ... if you are having trouble digesting i would reccomend taking digestive enzymes with your meal. the omega-zyme by Garden of Life (from the maker's diet) are super expensive but they help me. Also to aid digestion, if you can not handle dairy, you can take probiotic supplements, and avoid drinking beverages with your meal, wait at least 1/2 hour after eating to drink.

  10. i exercise at least six times a week, (training for a half marathon) i love running and i do totally fine, you just have to make sure you're getting enough carbs and protien, my doctor put me on a protien supplement. and it helps

  11. When i go to the store i've noticed a lot of sprouted grain breads... do they contian gluten since there isn't flour... brown rice bread is the pits!!! :( Also does anyone eat oat meal??? I heard it is only dangerous becasue it is usually processed on the same machines as wheat...if this is true, does anyone know of any oat meal that is "safe"? i 'd really love to know, i miss oatmeal!!!

  12. it was the mustard... i have problems with distilled vinegar as well.. watch anything pickled.. i think it's farmans that is okay.. if you like bananna peppers the only brand i've found that is made with out distilled v. is krogers brand, as for mustard say bye bye to french's, the only brand i've found (i LOVe mustard) that doesnt use distilled v. is the safeway brand.

  13. hey there.. this site is soo great! i just found it today! very exciting.. :D i don't feel so alone! celiac disease tends to make you feel like you're the only person in the world that has it!! okay.. so how many of you have been asked if you are on the atkins diet? hee heee. anyhow, i've been gluten free since june 2003... and i was wondering if anyone has had this same experience when they accidently ingest gluten... the first time i ingested a significant amount (fish sauce in a stir fry) i was sick with diarrhea for about 5 days... i couldn't keep anything down.. that was about five months ago. This time, i felt like the reaction was much worse, just casue it keeps lasting... last sunday night (8 days ago) i ate a tortilla which i was told was corn, but i later found out that it did have wheat in it, since monday i have had "the dirrhea" which causes me to run to the bathroom about an hour after i eat, and the "all too familiar" bloating and stabbing pains in my abdomen. What kind of reactions do you have? just curious...
