  2. Does anybody have a recipe or idea for a good gluten-free cake flour? I know it has to be low in protein, to make a lighter dessert. By the way, I would be using this in a sponge cake recipe for petit fours.

  5. Everyone knows that Valentine's Day is coming up in just over a month. There are also some candies that come out just around this time of year. Does anyone know if the Hershey's white and milk chocolate swirl kisses are gluten free?! They are some of the only candy that I actually like and can eat in handfulls !
  6. I haven't made them myself (yet ) but I do have some suggestions. First of all, don't use the Bob's Red Mill all-purpose mix, the bean flour would be to strong. Since pizzelles are a kind of cookie, I would use this* recipe from Living Without magazine. I use this in all of my cookie recipes. You can get the superfine brown rice flour at Authentic Foods...
  7. In one of my gluten-free recipe books they say to use garfava bean flour in breads. I know Authentic Foods carries it, but I also know that Bob's Red Mill carries a flour mixture of Garbanzo bean and Fava bean. Would the Bob's Red Mill mix work as well as the Garfava flour?
  8. Does anybody know if rye flavoring is gluten free? I wasn't sure because I know that celiacs can't have rye, but Authentic Foods (a gluten free brand) carries it and some of the Bette Hagman gluten free bread recipes have it in it.

  10. Glutino products are really good and you can do a lot of stuff with them. Easy gluten-free pizza: Halve a Glutino gluten-free plain bagel and put tomato sauce and cheese (soy is fine) on top and cook it in the broiler until it starts to brown on top. It takes at most 10min! Oh, by the way, I am 12 too, going on 13 so I completely understand.
  11. I live in the bay area (Novato) and don't know ANYBODY with Celiac. I'm going on 13; yeah I know, younger that most. By the way, I love to cook/bake!
  12. I completely understand! My mom is usually pretty good, but when I don't want to eat something because of doubt that it has gluten in it, she starts yelling at me for overreacting! It's not our fault that we don't want to get sick!
  13. For me it takes 4-12 hours for the awful digestive symptoms to occur. In my opinion, the longer it takes for the reaction to occur, the harder it is because it's harder to find out what made you sick.
  14. I know what it's like want to give people celiac and then make them try to deal with it. My best friend(sorta...) had major back surgery for her sculiosis (bad spelling) almost a year ago (just about recovered even though she acts likes she should still be pampered!) and is competetive about everything! She is always trying to prove that her disease is worse...
  15. I love Glutino products! Especially the bagels! They taste just like the regular ones. You can also use them to make other meals like bagel pizzas (tomato sauce and cheese on bagel cooked in broiler) or smoked salmon on bagel.

  19. I had no idea how much this happened! I tested positive for mono in january (before being diagnosed with celiac) and was sick for months without getting better. None of my doctors could figure out why I wasn't getting any better. I went to a naturalpath and got diagnose with celiac. I went on the gluten-free diet that day and started recovering from mono...
  20. Does anybody know if hershey's chocolate kisses have gluten in them? I know the plain milk chocolate kisses are gluten free, but what about the others? Especially the white and milk chocolate HUGS (Those are my favorites ). Can't wait for your replies so I can start eating chocolate!
