  1. That's so ridiculous!!! People hear gluten free and they think it's going to taste horrible and so drastically different or something... I have made gluten free mac and cheese a couple times since switching with brown rice noodles and I can't even taste the difference! Sometimes I just want to yell, "unwrinkle your nose, sit down, shut up, and try it! ...

  3. Before I was diagnosed with Celiac I was anemic. I had suffered with low ferratin levels for years and took iron pills that made me very sick. Finally this summer I went to like my 50th doctor and she told me about Celiac disease. She told me that deficiencies like that are a symptom of something else usually. Since going on the gluten free diet I have...
  4. I have always been one with dry skin. My skin drinks cocoa butter. I posted on here previously about my face and it's dryness. I can't find the old post though...sorry. At first I thought it might be DH but then looked at some photos and didn't think that rash looked like mine. Then I went to the Dr. and they weren't very helpful. In the past couple...

  9. Puggirl, I've been to Cali several times and moving west is a possibility, though I would likely go for Colorado. I'm looking into several options including masters programs abroad. Mushroom, I'vealway wanted to visit there...Looks like I should just plan a vacation though.
  10. So, I've kindof ditched the jamaica idea after doing a little more research and then having that researched confirmed here on these posts!!! This is why I love this forum... so much info! 11. Hey Helen! Welcome to the forum! I'm pretty new to all this myself and just went throght the kitchen purge. I kept my microwave and have had no problems because of it. Though, I am not nor have I ever been big on using my microwave. I've had it for two years and it's still like new. I got rid of all my spatulas and cutting boards. I've slowly been...
  12. Wow, Laurie... Interesting perspective. I never thought of it that way. Growing up as a farmers daughter...I guess I wouldn't! What a different perspective...I'm going to explore it more. Just a little bit of irony though...My father farmed corn, Wheat and soybeans...but grain was a very little part of our diet! We were a meat and potatoes family all...
  13. Thanks for the advice! If I get citizenship in another country do I have to give up my US citizenship? Do you know how any of that works? I've been searching online but it's all so confusing!
  14. Hey! Welcome to the forum! I do not suffer from DH but my understanding is that if you have DH often the intestinal symptoms aren't as bad. I've seen that on here a couple times. Secondly, do not be surprised that your doctor didn't think of Celiac Disease or DH. Many Doctors it seems skip over this disease. Third, You need to go to a doctor and ask...

I'm 25. I've had a rough year. My chosen profession is a television news producer but the station I've been working for since August of 2007 has really turned me off...
  16. Okay, I fall under the not very sensitive category. I'm pretty new to this...I haven't even hit the six month mark on the diet yet but here's the deal. It freaks me out that I'm not very sensitive because if I understand this disease correctly even if I don't react damage is still being done. I just want to say that I try my very hardest to keep gluten...
  17. I just don't want this to rule my life. I've always been a bit of a free spirit... I guess I'm having troubles adjustnig to the pre-planning and fore-thought that just goes into a trip to the grocery. Having to think so hard about everything I eat makes me feel obsessive...it's an uncomfortable feeling... I'll figure it out though and make it work! I...
  18. My blood test came back negative and my biopsy came back positive. My vitamin and mineral levels were very low before...that's what made my doc first think I was a celiac. I'm going in to retest my levels in about a month.
  19. I love eatnig hard salami on sandwiches. I was happy when I started this diet that gluten free salami is easy to find. I actually havne't found any that isn't gluten free yet. The woman at the deli I go to is always very nice about letting me read labels of lunch meat before I have her slice it. But the other day I started thinking...What about the stuff...

  24. I couldn't agree with this more. I just went gluten free back in October and When I first started I ate a lot of plane meats like chicken breasts. Also, I bought fresh veggies and fruits and cut them up myself and ate them plain. Pecans, Almonds and Walnuts were also big ones. I steared clear of dairy too. Only ate cheese once in a while. (Would have...
