  1. Food is broken down into three basic types: fat, protein, carbs. Carbs are more than just bread--carbs are basically ANYTHING that is plant-based. (Minimal amounts of carbs are also found in organ meats, dairy, eggs, shellfish, etc.) Carbs are breads, yes, but also fruits and vegetables. Nuts have carbs, dairy has carbs (lactose), wine has carbs, legumes...
  2. I have a similar situation to you! I had been gluten-lite for basically 3 years, with patches of being totally grain-free and gluten-free. I went in for the celiac panel, and everything came back normal, but they did not test total IGA. I found a new doctor, had them run another celiac panel (though I'd been gluten-free), checked TSH, CBC, metabolic...
  3. I was also wondering this myself, since I am gluten-free AND corn-free, like the original poster. As of late, rice has NOT been agreeing with me. Are there any tortilla recipes that are completely grain-free (as well as potato-free)? Could I sub the cornstarch for something else in the bean flour recipe?
  4. Most of those items don't worry me, but yuck, medical swabs? Is nothing sacred?
  5. I'm not much of a "carby" breakfast person either, and I also don't like getting up early to make breakfast! Here's usually what I like to eat: **apple with peanut butter **hardboiled eggs or egg salad (I boil 12+ eggs on Sunday night and have them all week) **sausage patties (I make this myself from ground sausage and approved seasonings, cook a pound...
  6. My pinkies are short, too. But then again, ALL of my fingers are short. gluten wrangler--I know what you mean about making it difficult to be a musician! I always had problems playing the piano, and in college, in my string techniques class, the bass professor didn't know what to do with me. I couldn't even play in the basic finger positions, the...
  7. Oh, threadjack--question about the rosacea--how do you know if it's rosacea and not just rosy cheeks? My doctor tested me for lupus because my face was so red. I have one sip of wine and I look like Rudolph, too.
  8. Aren't those little red bumps (on the arms) Keratosis Pilaris? I have those. They went away for a while (when I was grain-free) but now they're back. Ugh, also had the butt bumps. Those are THE WORST! Mother of Jibril--I think you'd posted in a different topic that there might be a relation between KP and celiac? I've read quite a few Celiac/Gluten...
  9. This is a wild thread! When I was a kid, I'd always sneak play-doh and eat it. I liked that it was salty and slightly rubbery and had that wierd chemical smell. I also loved to put keys in my mouth, they had this sort of metallic heat. (Just typing that...I can taste them now!) I would also always want to put coins in my mouth for this same reason...
  10. glutenfreebaker--funny you should mention that, because I think corn might be problematic for me as well. I have tried a few other brands since that post--a few different styles of Tostito's, and some other store brand, as well as the Carmen's chips again. Only once did I not have an immediate reaction. I figured the chips were CC'd. They very well...
  11. Have you added any anti-fungals? Getting rid of candida needs a 3-part treatment: yeast/sugar-free diet (to stop further growth), anti-fungals (to kill what's there), and pro-biotics (to replace "good" bacteria). I really think it's important to use all three. If you don't get rid of the yeast first, it's worthless to take probiotics. There are many...
  12. I made everything 100% gluten-free (even though I'm in the middle of a gluten challenge, I wanted practice with gluten-free holiday foods) and it was great! I bought a small turkey breast and used the bacon-wrapping idea from another thread. My fiance liked it, and he HATES turkey! For sides we had fresh string beans, homemade whole berry cranberry...
  13. This link might be helpful if you are interested in GI/GL: Open Original Shared Link You can look up the glycemic index of a specific food, and you'll also be given a glycemic load score based on serving size. Not all foods are listed, but quite a few are, and it's a good starting point.
  14. Mother of Jibril--thanks! I will ask about that at my next appointment (even though my next appointment is with an allergist/immunologist, perhaps she can refer me to an endocrinologist or at least have them test my T4/T3.) That might help to explain the fatigue and other non-GI problems I've been having for the past year.
  15. I am 27. Since I had my first period (14 years ago), they have been amazingly regular, every 28 days, like clockwork! This changed last year, my menstrual cycles started to spazz out--my period started coming a couple days early or a couple days late. I had 2 missed periods (there's a possibility this was body fat/exercise related.) I've never had...
  16. I'm on a gluten challenge and have been for the past 2 weeks. I got my period in the beginning of November, and it was right on schedule. Yesterday, I got a SECOND period, I'm not "scheduled" for another one for two weeks! Could this be due to the gluten challenge? I know my body is NOT liking it (from a GI standpoint) but can this also effect menstrual...
  17. Oh shoot, I forgot about specifying that I wanted the IgG test. I will call and ask that they do that one specifically (if they haven't already.) Is that all I say? "I would like you to run the IgG celiac panel"..? Or is there a more specific name for it? Yes, they said the dose would normalize my thyroid but there was always the risk of it going hypo...
  18. Low carb diets are FABULOUS for controlling diabetes. I have many friends who actually no longer need to take any sort of pills/medication/insulin because they've learned how to control their blood sugar and prevented pre-diabetes from turning into full blown type II diabetes. Low carb is really quite easy! It's very healthy, and it tastes great. The...
  19. Nora, that is VERY interesting about going hypo after graves! I had symptoms of grave's disease for 4 years before I told anyone. Once I started treatment (PTU) I was on meds for about 2 years, then went in for radioactive iodine, meds weren't working. After my test (to see how much iodine I'd need) the hospital called and said my thyroid was completely...
  20. Yes, good point. I hope my doc will be as willing to work with me on this as yours was with you! This gluten challenge has SUCKED, but at least it's reaffirmed the fact that I do have a serious problem with gluten. After I'd been gluten-free (for only a few weeks!) it's almost like I forgot how bad I felt eating gluten...and was afraid it was all...
  21. Raven--that is very interesting about the KP! Now that you mention it, it did disappear when I eliminated grains from my diet for a few months, and slowly returned after I'd added them back in. It's not nearly as bad as it's been before, but now it's certainly the worst it's been in a long time. I am definitely mentioning the burning BMs. That really...
  22. Nora, thanks I will check that info out. What's interesting is that I used to have Graves Disease (it somehow reversed itself, but I guess that's not totally uncommon, especially at the age I had it) and now I'm feeling like my thyroid has gone HYPO instead of HYPER, I don't even know if that's possible... I'm seeing him on Wednesday and I'll ask about...
  23. Lizard, I will ask him about gene testing at my next appointment. Something tells me he won't be overjoyed about the idea, but I'll discuss it anyway. Like you said, the NOT KNOWING is very scary. I keep thinking, "OK, if it's not celiac, it's gluten intolerance, fine, but WHAT ELSE is wrong with me? What caused the gluten intolerance, do I have other...
  24. Raven, thanks for your reply. I've had mucus before, but this seemed more solid than that...but then again, it could very well be mucus, because like I said, basically every BM I've had since starting the challenge has burned. Luckily I have an appointment on Wednesday, and I'll be discussing this with him. (I was just hoping that someone had some...
  25. Would passing a stone like that be painful? It wasn't really painful, but it did burn a little--but since I've been on the gluten challenge, basically all of my BMs have burned.
