  11. I'm a sleepy/fatigued gluten zombie, too. I've not been gluten-free for long, but man oh man, on the occasion that I accidentally ingest gluten, not only do I get the GI symptoms, I am EXHAUSTED. I can barely make it through work, I am incredibly lethargic, I have NO ENERGY to do anything remotely taxing.

  15. I've found that coconut milk is an excellent milk/cream replacement in sweet dishes. I make an AWESOME tapioca pudding with coconut milk! I also use it for smoothies and in baking.   19. Other supplements to improve hair health are B complex, biotin, and flax oil. As with any supplements, make sure the ones you use are gluten-free!
  20. For some reason I can't eat rice, but seem to handle rice flour just fine. The grains of rice go through me like glass and come out totally undigested. I haven't had problems yet with rice flour, though I admit I haven't eaten much of it. (I made Christmas cookies that contained rice flour and they gave me no problems whatsoever.)
