  1. I've heard of wheat paste being sprayed on oranges to prolong shelf life, though I'm not sure how true/untrue this is. I believe someone tested some produce with those gluten testing strips and it came up positive? Again, I don't know the validity of this, but I'm just saying that I have also heard these things.
  2. BRING A COOLER and a hard-sided food box! Bring more food than you think you need. Pack your cooler with those blue ice packs or blocks. They stay cold for many hours. In the cooler, you can pack pre-cut/pre-washed veggies, cheese sticks, hardboiled eggs, fruit, dips/dressings/condiments, beef jerky, corn tortillas, grilled chicken breasts,...
  3. It sounds like the types of foods you are eating are healthy, but I agree with the others, you need to eat MORE! I had to guess on your age, but by plugging 180 pounds and 5'5" into the BMR calculator, it gives you a BMR of 1579 calories. That means that your body burns 1579 calories doing nothing but breathing. If you get up, move around, do chores...
  4. I know someone on the board (I can't remember who) makes yogurt from coconut milk. I have no idea of the recipe. Hopefully someone more knowledgeable will post!
  5. ang1--I am very glad you posted about the gluten in the packets! I purchased some a while back (thinking that packets would be more convenient than a glass bottle while traveling or camping) and it didn't even occur to me to check the ingredients!
  6. I can't eat rice, so I make Mexican quinoa--it's full of vegetables and good protein. Eat it with beans for a complete meal!
  7. Just to clarify my earlier post, the liquid form (sold in an eyedropper bottle) is gluten-free. I buy KAL brand. I can't vouch for the stevia packets--I had no idea about the gluten, but did know they contain inulin (chicory root fiber or from some other source), which can cause stomach upset in some people.
  8. I use stevia quite a bit, when I need a hint of sweetness. I purchase the liquid form of it at my health food store, though I believe you can purchase the granulated form in packets at regular grocery stores. I'm not aware of any side-effects, but I do know that some people do not like the taste of it--it's sweet, with a hint of something else. Many...
  9. I've not made rice pudding, but I HAVE made tapioca pudding with coconut milk, and it's delicious! It gives a very subtle flavor, very delicate and tasty.
  10. I LOVE Annie's Naturals line of condiments--not only are they gluten-free, they don't have all the preservatives and junk that are in most commercial sauces. They are a bit more expensive, but taste really rich and flavorful! I also use Annie's Naturals ketchup, mustard and sallad dressing.
  11. I think it's a matter of trial-and-elimination. You could start from scratch and do an elimination diet or the SCD, or just experiment with your foods for a while. I can't eat corn products at all--I get the same symptoms as gluten gives me! It doesn't matter if it's corn chips, corn tortillas, cornmeal, etc. I get the same bloating, gas, cramping, and...
  12. With students, I NEVER refuse any gift they give--they want so much to give you something of theirs, something they made or created or purchased, that it doesn't matter what they give, it's THAT they give that makes them feel good. To refuse the gift is like saying "I don't like you" and they won't understand that I can't eat what they gave me. My co...
  13. I did the Fleet's phospho-soda (mixed with ginger ale, which surprisingly DID help to cover the taste!) for my colonoscopy in December. It's potent stuff. Make sure you have some sort of cream for your bottom, because it will be sore and rather raw by the time you're cleaned out. As long as you're consuming GLUTEN-FREE beverages/clear foods for the liquid...
  14. Whenever I go camping or hiking, I make a huge batch of jerky. I don't have a dehydrator, so I line the bottom of the oven with foil and dry the meat at 200 degrees for a few hours. Here's the recipe: 1 cup wheat-free tamari 1/2 cup Frank's red hot spices (to taste, add as little or as much as you like): garlic powder onion powder salt pepper...
  15. B+ blood type, Irish/Scottish/Polish/Romanian descent, hazel (almost yellow) eyes, golden brown hair.
  16. As a child, my hair was sort of an honey blonde, and as I got older, it changed to a golden brown. It's a rich brown now, but I get lots of those golden and honey highlights in the summer when I'm out in the sun. I started getting gray hairs when I was 18! More keep coming every day. I notice them because they're like dog hairs (kinky and wiry and they...
  17. That is good to know. I am anything but wishy-washy--I've been eating the way I've eating (prior to October--no processed foods, grain-free, since October--gluten-free and dairy-free since November) for almost 3 years and people are still constantly giving me grief. So perhaps understanding from these people is right around the corner? Or maybe I just...
  18. Some ideas: **deviled eggs **jalapeno poppers (I make mine without breading. Scoop seeds out of halved jalapenos, mix with cream cheese and shredded cheese. Put cheese mix back into jalapeno halves, wrap with bacon. They are HOT but soooooo tasty. People prefer these over the breaded ones!) **buffalo wings (Cook chicken tenders/wings/drummettes...
  19. GFinDC--thanks for that info! I'm not sure that test would work though, it seems to test IgA levels? I am IgA deficient. Fiddle Faddle--yes, you are right. I plan on getting copies of everything. (At my last appt. the PA made copies of everything for me in advance, I didn't even have to ask!) One, because I'm curious and like learning new things,...
  20. Someone had posted this idea/recipe in another thread, but I don't remember which one! I made sweet potato pancakes (I made them for dinner with my eggs, see, I am fast-and-loose when it comes to eating specific foods at specific times) and they were FABULOUS! All I did was cook a sweet potato, remove the skin, let it cool. Add 1 egg and cinnamon...
  21. sbj--I plan on filing an official complaint, as well as contacting the insurance company. I was under the impression that multiple samples would be taken, since the purpose of the endoscopy was to check for celiac sprue. I was even told this by the PA (my fiance came to the appt. with me and remembered him saying this) and by the nursing staff before the...
  22. Thank you all for your replies so far! sbj--I should have been a bit clearer. The "doc" I saw in the office visits is not the same one who does the procedural work. Since I'm a new patient, I see the PA, and the gastroenterologist at the center is the one who does the procedures. I really liked the PA, and still do like him. I have my appointment...
  23. I guess part of the reason I am seeking an "official" diagnosis is because right now, I feel everybody (with the exception of my fiance) thinks it's in my head. And even sometimes he gets annoyed, thinking I'm playing doctor--which frustrates me to no end. I feel like an official diagnosis would shut everybody up. Even my celiac mother, who has no...
  24. I just got off the phone with the doctor's office and I am LIVID. I am convinced that in the 2-month span that I've been researching and reading about celiac disease and gluten intolerance, that I know MORE than the so-called professionals at that office. I received the results from the biopsy today, and they were negative, just as I'd suspected. I...
  25. Have you had your thyroid checked? Heart arhythmia/palpitations was one of my symptoms for Graves Disease. My palpitations were not necessarily caused by gluten, but as we know, these autoimmune disorders are connected. Graves is an autoimmune disorder, so perhaps it's worth looking into?
