It is great to hear you say that. I LOVE baking from scratch. And the past week, I did try a few gluten-free mixes, and they actually were pretty tasty. But, I want to do it from scratch, not a a mix. And yes, all the flours overwhelm me and how you have to add a binder, and check the weight...argh!! I know I will get the hang of it, it just takes time...

I have felt really positive since I found out about having this, 2 weeks ago, and all the sudden today, I feel totally depressed. And it is not because I cant eat this or that. That part, I feel pretty OK about. I had already been very specific about the things we ate, voluntarily,...so now this is just one one thing (albeit major) that I have to cut out...

gosh, i am pretty sure it is endoscopy, that is what my GI dr said. eeks, a colonoscopy would have me even more stressed. like you i already have major anxiety issues, and this is not one i need to take on if i don't need to. -

I am newly diagnosed, and have not yet gone fully gluten-free. Pretty much, and then after my daughter's bday next week, I will do it fully. I don't question the need to do it, I know it has to be done. But my question is this....after reading so much on here, one huge fear I have is, that I will feel worse after I go gluten-free when I come in contact... -
My husband is getting tested this Friday, and i will have my daughter tested as well. We share a lot of food, and co-sleep (she is 4), and she has been burping lately So I want to make sure she is OK too.

hmm...i just typed out a long post, and it seemed to have disappeared...i will try this again.... when i originally went to the dr 3 weeks ago, they told me I had h.pylori...and as an added bonus, i found out i had celiac the dr wanted to through a massive regimen of antibiotics plus more at me, totaling 14 pills a day, including 7 antibiotic...

thank you. My daughter also had IUGR..she was born at 39 weeks, but only weighed 4 lbs, 8 oz. thankfully, she was perfectly healthy, just small =) -

With my daughter, I developed severe pre-eclampsia & HELLP at the end of the pregnancy. She is about to turn 4. One thing I have learned since is that many people who develop pre-e have underlying disorders since as blood-clotting disorders or auto-immune issues. We have a daughter who will be 4 next week, but I have been too terrified to try and get pregnant again, because of the severe pre-eclampsia and HELLP that I developed with her. I have an adopted brother from Russia. He is now 12, my dad and step-mom went to Russia to take him home...

Once you have Celiac, is everyone super sensitive, or can some people handle it if bread touches their food, but they don't eat it? So, now that I have been diagnosed, how do I know if when I get gas, it is just plain old gas, or from the celiac? I mean, I have had gas my entire life, and always thought it was normal, and I would guess some amount is normal...so when do i know? I had beans yesterday, and had gas last night...I don't think I had any gluten...so was it from the beans...

Good point about Thai curries, and yummy since I love them. I have just been diagnosed, but have not gone gluten-free yet. Yes, I do love Thai and Vietnamese...especially Pho soup. How do you know if the soy sauce they use is wheat-free? Do you bring your own bottle, and ask them to use yours? And if so, do you have to worry that they are using a wok that once used regular soy and about cross contamination? -
