So my co-workers have been checking the price stickers on my food and commenting on it. Yes, juice costs more than corn syrup. Yes, peanut butter costs more than soy butter. I've started taking the stickers off. They would choke on their cookies if they knew how much I paid for those pretzels!

    I hadn't thought about the fad diet/contamination issue. I can just see a greedy manufacturer laughing and saying, "It's not really gluten free, we just write that on the box so they'll buy it. Gluten doesn't really make anyone sick. It's all in thier heads."

    That would be really dangerous for those who have healed to the point where their bodies aren't screaming with every bite of gluten. They could be eating it for years without knowing it.

  3. Good Morning All,

    I'm wondering if anyone else has had an experience like the one I had this morning. I took my 18yr old son into our local Dr.'s office to request a letter stating that DS needs to maintain a gluten free diet. I took two books and a ziplock container of old pill bottles to prove our case. The P.A. said, "No need, The Dr. already suspected celiacs on your last appointment. I'll have the letter ready for you in about 72 hours." No fuss, no need for further testing.

    My own diagnosis was just as seemless even though I had a different Dr. He asked why I thought I might have it. I explained, he confirmed. No fuss, no further testing.

    Is this getting easier or am I missing something?

    After reading "Too Good to be True? Nutrients Quiet the Unquiet Brain" by David Moyer, LCSW, I was really worried. If you haven't read it, the author's son and father were both bi-polar and suspected celiacs. Each time that either of them were institutionalized they would be taken off their medicine and gluten free diet. My son is bi-polar and gluten gives him "D". He has been hospitalized once and jailed twice (once for being violent during a manic episode, once for driving home after drinking at a senior party). All three times he was fed a high gluten diet and was very sick. So I spoke with his lawyer, a correctional officer and now our G.P.'s office and all have said that a letter stating that a gluten free diet must be maintained to prevent chronic "D" is all that we needed to get DS (still dear to me dispite his illness) a special diet tray if he should be institutionalized again. There are a lot of successful bi-polar people in this world and I hope that my son will be one of those but should his life be a struggle I intend to protect him to the best of my ability.

    If any of you have a been through this and have cautionary tales you think I need to hear please post them. Thank you

  4. Hi Vlo1980,

    Can you take a few minutes to make a menu for yourself? Include three meals and two snacks for each day even if you never eat that much. Do the menu as if you are not gluten free and then modify it. If you would normally have a sandwich have a salad and few gluten free pretzels. If you would normally have a bowl of cereal have gluten free cereal. I never eat all of the stuff on my menu but I never run out half way through the work week either.

    Relax, deep breath, stretch (lazy cat style), it gets easier!

    I just wanted to say that many of us celiacs who are not tolerant of dairy don't tolerate soy either. Almond Breeze, Coconut milk and Rice milk have been pretty easy for me to use on cereal and in recipes. The coconut milk, undiluted, can also be used in place of butter in recipes. There is soy lecithin in the Almond Breeze. Some of us react to it, I didn't.

  6. First you have to decide if you are going to wait until the testing is done or dive right in and see what happens. If you're going to dive in, start with a simple menu and shopping list.

    Here is what mine looks like.........

    Breakfast

    2 eggs fried in olive oil

    1 banana

    2cups black coffee

    Lunch

    apple slices

    all natural peanut butter

    cherry juice (real juice and water, no corn syrup or additives)

    Snack

    Rice Chex

    Rice Milk

    Supper

    Meat

    potato or rice

    veggies

    This is an easy way for me to stay Gluten, Dairy and Soy free.

    Most of us have several food intolerances beyond gluten so you should read up on the elimination diet. It will teach you how to identify and eliminate foods that you are not tolerating. And it will help you find foods you can add to your menu..........like Enjoy Life Chocolate Chips :D

  7. I'm 42 yrs old, 5'6". My weight went from 163lbs to 150lbs and has stayed there. I haven't been trying to lose weight.

    I still feel tired but I think it's because I'm dealing with yeast and other food intolerances (mostly corn). I really didn't want to give up corn but it's gone now. And the aches, pains and constipation went with it.

    So the healing and weight loss/gain is different for everyone depending on what other issues have to be dealt with.

    Miralax is helpful to get me moving again after a mistake but long term ..... magnesium supplements, tart cherry juice concentrate (I use Kings Orchard, they have a web site) and pure maple syrup are way easier on my system. Big mug of warm water with two tbs of cherry juice and two tbs of maple syrup to wash down the magnesium supplement before bed and I'm good to go within a hour of waking up in the morning.

    The cherry juice helps to reduce inflammation and swelling. The syrup has potassium, calcium, magnesium, zinc and manganese. The magnesium supplements help with long muscle relaxation and contraction. It allows your muscles to relax and let it go....

  9. I'm finding that I have to call ahead to make sure that the first of your expectations (that they know what celiacs is) is met before going in. I found that the staff at my local emergency room don't know, don't care, and are to arrogant to listen.

    The emergency room dr told my bipolar and very likely celiac (at that time) 17yr old son that "meds are not the answer, go home and stop acting like that" He was taken by ambulance to another hospital where he was admitted and stayed for a week.

    Another time I called because the instructions on the box of exlax says if it doesn't work contact a dr. Two doses on top of Miralax didn't work........the nurse was so rude on the phone that I stayed home and waited it out.

    I did speak with the administration of the hospital about the ER DR's statement to my son. They seemed to take it seriously and have not pushed me to pay the bill for that evening. I will pay it but in my own good time.

    I should probably call and speak to the administration about celiacs and the need for educated staff but I'm afraid that to many complaints will make me look bad and they will just write me off as as an attention seeker.

  10. OK first, a lot of us went through a good pitty party at first. It's part of the process. Give yourself a break on that.

    Second, no way could I or a lot of the others on this site be veggies. Many of us have low blood sugar. We need our protein.

    Beyond that, at some point you will find that you have matured and forgiven your parents for being real live human beings not perfect creations. So just leave that alone, it'll work itself out.

    And having "D" 4x a day probably means you are eating something you should not. If you are gluten free try also removing dairy and soy. This part should be temporary. You need to give yourself time to heal.
