Hey Googles, my teens would live on burger, chips, salsa and velveeta if I let them. If it's not on your list add it. No way to mess it up and it's cheap and filling. Hope this helps RA

Ask the chef to cook separately for your child! All resorts do this now. They are required to take classes about CC. The public on the other hand, the folks touching the spoons know nothing. Don't chance messing up your vacation by making your child sick. Also which parent did he get his celiacs gene from? Why is this parent eating from the buffet? Call ahead or bring his food. I would never eat off a buffet ekkk. Blah yuck sneeze guard

From what I've read and experienced yeast when attacked makes a surge of growth. When I take probiotics the yeast surges and my hands itch between my fingers when I wake up in the morning. After several days it stops happening and my mucous in all areas of my body clears and thins out. And then I get lazy, stop taking the probiotics, eat sugar cookies (rice flour) and start all over again!

Yeah that was the reaction we got also... problem solved.... no follow up needed unless you have further problems. If you doubt your dx have a sandwich....... OK nobody said that but that's how it felt.
But on a nicer note. This is less of a change than it seems at first. Eating a rice and corn based diet instead of a wheat based diet makes us just like most of the world.

When she can tolerate fats..... peanut butter and rice flour thinned with coconut milk...... I saw this on a documentary about saving children in third world nations where a lot of the children were lactose intolerant.
Keep a big bowl of cooked rice in the fridge. You can add coconut milk, sugar and cinnimon for cereal or chicken broth and canned or frozen veggies for a quick microwaved soup. Make smoothies with coconut or rice milk and fruit. Mashed potatoes, yams, carrots - these starchy veggies are high in carbs and calories and will help replace breads and crackers in her diet. My kids found that they could replace the wheat flour and crisco (soy) in Grandma's cookies with rice flour and lard without a problem. Use M&M's and natural (no soy) peanut butter and you have Monster cookies! Those are very fattening, I promise! Spartan tatter tots are a winner around here - finger food - bananas faces with raisin eyes! Grapes are high calorie but you have to be careful, cut them in half so she doesn't choke. Rice Chex is easy for little ones to eat on the go and little ones are always on the go...

400 degrees 45 minutes - was just a halfway between the temp and time for pie and cake - we winged it
DD made a chocolate frosting last night from chocolate peanut butter, powdered sugar and coconut milk that was wonderful also
no soy, dairy or gluten

I'm so happy about this I just had to share it and only you guys will understand....
I am no longer reacting to molds, celery, perfumes..... haven't had a headache in ages.... don't even have an antihistamine in the house so I'm taking all those allergies off of my signature! Feels like burning a mortgage!

This wasn't on purpose but just sort of happened..... each person in my family who is gluten free has found another person at work or school who is also gluten free. Having these people to talk to and share with has been so important to us. A few days ago I was able to take a cake to work to share with my co-workers just like before all this happened. My co-worker who is also gluten free was trilled, even offered to buy my kids Christmas presents!
Here's the recipe..........
Two Betty Crocker Gluten Free Yellow Cake Mixes
One can of Libby's pumpkin pie mix
Three eggs
One cup of coconut milk
walnuts
This was seriously good stuff, two thumbs up, made me feel so good to be able to share food with friends again SAFELY

There are a lot of possible reasons for Autism. And yes I can see that a person who's system is already fighting gluten will be less able to successfully fight other enviornmental badies like mercury preservatives in the flu shot or hormones in milk, soy and meats. That said.... I have three fairly healthy kids, much healthier when they are not ingesting gluten. If I had this knowledge then....I would have stopped eating gluten before having children. But I wouldn't have chosen not to have them. They are the best things about my life.

me - A lot. At first I didn't realize how sensitive I was so I was glutened by breathing dog food dust, a reused grocery bag et.
DD - gluten doesn't give me symptoms
Anyone been diagnosed with cancer, kidney or liver problems?
me - Still to scared to have a scope so "not that I know of". My Aunt Susan died of intestinal cancer at age 39 after years of digestive issues.

Have you ever said "what the hell" and just ate something you aren't supposed to? me - I've chanced cc by eating chips that I know are not processed on a dedicated line but never intentionally eaten something I knew possitively contained gluten. Giving up bread was easy because just smelling yeasty breads use to give me a sinus headache.
DD - yes, school pizza, it doesn't make me sick I just get less headaches and gas if I don't have gluten

Mine says that I'm 151.4 lbs. It's a digital I bought at Walmart. Scales are like horoscopes, fun to read but not to be taken to seriously!

Now that I feel healthier and less tired my body is ready for some excitement but all this talk of rashes and poop has put the damper on the mental part of it

I know the answers you were given are very good advise but in your situation where quick relief is needed I use a wax bullet! A suppository inserted before my shower has me going before I leave the room.
When I have a rash and can't go it's to late for flax, water and a jog around the block.

This is an old thread but I just wanted to my experience to the list of happy customers of The Great Wolf Lodge in Traverse City. We were there for a training conference. The chef came to speak with me before each meal and came up with such wonderful looking dishes that the others in my group were asking questions.
We also visited The Bowers Harbor Inn. There I was served ...... salad of greens, dried cherries, candied pecans and a cherry vinegrette......... thinnley sliced chicken breast, the only brussel sprouts I have ever liked, thinnley sliced tomato with a little more of the cherry vinegrette....... for desert........ fresh sliced pear and apple with madarin oranges...... there were a lot of local wines available but I choose a cranberry juice and vodka......
the lighting was romantic (to bad I was there with 30 or 40 co-workers), the ghost was quiet, the staff was very accommodating..... we had a wonderful time.....

my girls have been making cookies by just replacing the wheat flour with brown rice flour so they can take those in the car

I'm really enjoying the way you descibe things! Have you thought of writing a novel? I would love to read it if you do.
On point though, over the last ten years my weight has been all over the place. 140lbs, under 100lbs, 165lbs, 150lbs. Size 8, 0, 14, 10. I would love to get back to a size 8 but my level of sensitivity is getting in the way. I don't see how I can diet while sick or how I will stop being sick if I don't stick to a very strict diet of safe foods. Would love to get to the point where stopping to eat is just a distraction from my busy happy life but so far I'm spending a lot of days on the couch with this computer because I don't want to deal with chores and everything feels like a chore.

I always get pain in my left wrist and hand (and left ankle/foot) a couple days after a glutening.
There is an article somewhere about how vitamins and minerals effect different sides of the body. Like left hand pain may be low vitamin B. And during a glutening my insides are swollen, maybe unable to get vitamins from my food so my vitamin levels drop causing the pain.
I need to do some more reading about this. I know that when my 17yr old gets sick he gets restless leg. Taking iron makes the restless leg go away. So it seems his iron levels drop when he is sick.
I don't believe that the pain you are having is forever. I think it's just a vitamin defiency or gluten withdrawal.

The newest numbers say that 1/3rd of the human population is gluten intolerant. Or maybe it's just that nobody should eat that stuff. I agree with your friend, everyone has celiacs! Nobody should eat grains.

The blood tests come back negative for a lot of obvious celiacs. Screw the blood tests just stick to the diet
Now I know I'm getting better, my sas is back!

It seems the most frequent response to, "I'm gluten free." is "Oh, so is....." Most people have at least seen the "gluten free" on the box of Rice Chex at the grocery store. It doesn't have to be a big deal. Bring your own just in case but feel free to chat about celiacs and find out what your host knows. They may also be gluten free.
