mario, This is just a thought, but it sounds to me like your friend may be eating trace amounts of gluten pretty frequently, so he might only notice trouble when he consumes larger quantities than usual. YankeeDB, I don't think LaChoy soy sauce is fermented like most other soy sauces--at least it is certainly not "aged." I believe it is mostly water and salt with a bit of soy and caramel color to make it look right (and maybe some preservatives as well; I can't remember)! Mario, Lay's chips are supposed to be gluten-free, but I'm pretty sure they are NOT produced on a dedicated gluten-free line, so they could easily be contaminated. Also, did you use a taco seasoning mix, and are you sure it was gluten-free? It's tough trying to figure out where the trouble is coming from, but keep at it and you'll get there! -

Heather, I used to have a couple of canker sores all the time as a child. I've never had a whole mouthful before, though! Ouch! Dessa, Throwing up might help a little bit, but I think that once the reaction starts, there's not much that can be done about it. The symptoms are not caused directly by gluten, but rather by the body's immune system--and once the defenses are marshalled, they're going to do their "job" even if the gluten suddenly disappears!

Libby, Phyllo dough is SO incredibly thin that I seriously doubt a gluten-free version is even possible! Even regular phyllo takes so much time and effort to make that it really isn't worth it for most people. A baklava substitute is one of those things that have been floating around in the back of my mind. I'll post the recipe if I ever come up with...
