  1. I'm teaching a class full of 3 and 4 year olds for homeschool co-op and for an activity, I'm planning on making some sort of play dough with them.

Thing is, I don't want to use a bunch of expensive gluten free flour, nor do I want to do anything that requires the stove. I want something relatively simple.

Does anybody have a simple, cheap no cook gluten free play dough recipe? Or would you just use regular flour and be careful? None of the kids that I'm teaching have any food issues, I'm only worried about the possibility of me inhaling flour while working with them.

  2. Gluten and soy free together is a tough one. Probably the easiest way to do it is to buy basic whole foods (fresh fruits, veggies, meats, nuts, beans, eggs, dairy, rice, quinoa, etc.) and for treats, to buy stuff from a known safe producer. For example, if you want gluten free, soy free chocolate chips, Enjoy Life is free of the top 8 allergens and is gluten free.

  3. I think that generally speaking, children absolutely do need a DX and they need as bullet proof of one as possible. If my daughter tests positive on the bloodwork, I absolutely will take her to a GI and do the whole route. Children are in so many situations with caretakers in their lives that it is absolutely critical that there be no doubt of the need to avoid all crumbs FOR LIFE.

  4. It was so wonderful to have a doc who would dialog with me. My old doctor was so quick and non-communicative that I always got the impression that he was trying to get rid of me or move on to the next patient.

The new doctor I wrote a report for, about my daughter's symptoms, etc. and she actually read it, wrote notes on it, and really appreciated it. After all, she didn't know much about us when we came in, so it gave her an idea of our concerns.

So glad that we found a better fit for us! :)

  5. My silicone spoon snapped right off its metal handle while whipping up a batch of Pamela's bread this morning. I'm thinking that I need a one piece design. Anybody know of any stores that sell silicone spoons that can't separate from their handle?

Either that, or mostly use metal and wooden spoons. My cheaper silicone spoons with a plastic handle also have a tendency to separate.

  6. Pretty much it's next to impossible to get in a gluten free food rut when living in a small town--as soon as I get attached to a gluten free product, the stores stop carrying it. Canyon Bakehouse is my favorite but regrettably it didn't last long here, before the store discontinued it.

I've tried ordering it via mail before and the day that I got it delivered by FedEx, I saw another identical box from Canyon Bakehouse. I looked at them wondering if they had packaged my bread in two boxes, no they hadn't. The name on the second box was one of our former celiac support group leaders, apparently I wasn't the only one sad to see it go.

Now I usually just bake my own bread or go without. On the rare occasion that one of those two things isn't an option, I buy Udi's.

This is my favorite bread recipe:

My favorite bread mix is Pamela's.

  7. I saw her doctor today and everything went very well!

She ordered a celiac panel, among other things, and also referred us to a pediatric dermatologist at University of Michigan, she said that my daughter had one of the most advanced cases of vitiligo that she had ever seen in someone that age.
