  1. Tinky pasta is good -- but it overcooks easily, so watch it carefully.
  2. Due to time constraints, I do most of the cooking in our house (DH has a very busy job and often works late; I own my own web business and have very flexible hours). He was diagnosed celiac in October and we've been gluten-free in our house ever since. Honestly, it just wasn't that difficult; I believe most of the barriers to it are mental. I'm a very enthusiastic...
  3. We were up to my family's house for the obligatory holiday visit this past weekend, our first holiday since my husband was diagnosed. Everyone in my family was mostly curious about gluten-free living and what celiac disease was and all that. My sister gave us a big basket of goodies, all of which were gluten-free; she said she'd had a lot of fun shopping...
  4. My husband is the same way -- he says I'm much more vigilant about it than he is. He was diagnosed with celiac disease three months ago. We're also completely gluten-free at home -- except my breakfast cereal, and beer, which I still drink occasionally. He's switched to cider, since it's much better than any of the gluten-free beers available. It's a...
  5. Babaganoush is also wonderful. It's an eggplant spread. Tahini is generally ground sesame seeds but read the ingredients first. Open Original Shared Link
  6. Well, my test results came back and looks like I am negative. This isn't a surprise since the correlation between my digestive upsets and eating wheat were weak (it seemed to have more to do with eating out than eating wheat in particular; my morning bagels weren't giving me a problem). So, I'm happy I got tested, happy that we as spouses don't have to share...
  7. After going gluten-free at home with my husband, who was diagnosed with celiac disease, I noticed that when I ate out and ate wheat, I'd have some digestive issues. I wasn't sure if this was from eating out or whether I too might have an issue with gluten. I had an appointment with my allergist in the end of October anyway, and asked to be tested. I got...
  8. We're entering Week 5 of gluten free. I bought a copy of Cecelia's Gluten Free Grocery Guide, which helps where the Wegman's friendly yellow Gs leave off. It's small enough to carry in my purse. We've been experimenting with cuisines that don't rely so much on wheat. We've had a lot of fun making Chinese, Korean, and Vietnamese food at home; as long...
  9. I guess my husband is unusual because he had no real digestive symptoms before he was diagnosed. He was diagnosed as a result of finding out that he was severely anemic, after a routine blood panel his doctor ordered to check his cholesterol. His doctor ordered an endoscopy/colonoscopy to find out if the anemia had been caused by an internal bleed. His gastroenterologist...
  10. If you are going to do any gluten-free baking, you want to look at your baking tins, trays, and pans. Dark-colored pans will brown gluten-free baked goods too quickly. You will want to replace any dark-colored baking tins with light-colored ones. Trust me, it makes a difference.
  11. Well, it may have been a very good thing. I started noticing my own digestive issues when we went gluten free, and then when I would eat gluten containing foods when we went out to dinner. I just got tested yesterday myself. So it might have pointed out an issue I didn't even know I had. We'll see. ...Rothane
  12. It's never a good idea to do any kind of testing while a person is ill or taking antibiotics. Just to be on the safe side, wait until she's well and off the antibiotics, and then do the testing.
  13. From the perspective of a beer drinker, Redbridge is, at best, okay. I suppose if you primarily drink American-style beers like Coors or Budweister, it's fine. But if he's a real beer fan who drinks microbrews and craft beers, it's not even remotely a substitute. My DH and I are beer snobs from a long way back; once DH was diagnosed with celiac disease, we...
  14. Our local Red Robin (Rochester, NY) not only has a gluten-free menu -- they even have a separate fryer just for the gluten-free menu where they don't fry anything breaded. Apparently this is pretty common now in Red Robins.
  15. Ooh, I love butternut squash. I might try subbing that for the cauliflower next time.
  16. I put turkey thighs in the crock pot -- for 2 thighs, skin them, put in 1 8oz jar of tomato sauce, garlic, chopped onion, and spices (I use Penzey's Chicken Taco and Northwoods Fire), cook on High for 3 to 3.5 hours. Shred the turkey and it's a great base for corn tortilla wraps, or served over rice, or with black beans, rice, and cheese in enchiladas. ...
  17. That's the cornerstone of this recipe. It's easy to convert to gluten-free -- just use gluten-free elbows and breadcrumbs (which are optional anyway). Best mac n' cheese recipe I know. Open Original Shared Link
  18. I just made my favorite mac n' cheese recipe (from Real Simple - replaces some of the pasta with cauliflower - Open Original Shared Link It's very easy to adapt to gluten free; I just used some leftover gluten-free bread for the breadcrumb topping and used Tinky elbows. The only thing I would say is that next time, I will probably use the Tinky fusilli...
  19. My favorite slow cooker book, NOT YOUR MOTHER'S SLOW COOKER, has some recipes for savory rice porridges. These are nice because you make them up the night before, and you wake up to a ready-made hot breakfast! Perfect if you have no time in the morning, but you have some time the previous evening to prepare. JOOK (Chinese Breakfast Rice Soup) serves ...
  20. "Tinky pasta" is excellent ... just watch it carefully because it's really pretty bad when it overcooks. But then again, so is semolina pasta; it's just that with rice pasta there seems to be a shorter window of good vs. not good. Also, be sure to put a little oil in the water and stir often, because it does stick a bit more than standard pasta. One of those...
  21. And me with fresh rosemary growing on the porch ... Please send!!!
  22. My husband was diagnosed with celiac disease four days ago, which is when we went gluten-free in our house. He was diagnosed when a routine blood panel showed he was severely anemic, which led to tests, and more tests, and finally the celiac disease diagnosis. He had almost no other symptoms, which is fortunate. I made the decision to go gluten-free...
