  1. I had no GI issues at all, nor did one of my two children who are also positive. I was picked up in a screening after my brother was found to be positive (he had no GI issues either-and has now been found to have osteoporosis, anemia, thyroid issues, vitamin deficiencies)I was shocked when my test came back positive but find I no longer have the migraines...
  2. Wow, that's tough, I sorry I didn't realize you were dealing with a space issue as well. I hope you find the answers you are looking for.
  3. Good luck, I think you will do great. I can give advice on the first two, I often keep soup 3-4 days, although I usually find I don't want it more than a couple of days so I put serving sizes in freezer qt bags and freeze. To thaw out, just pop in a bowl of warm water for a few minutes. Fresh onions will last up to a week for me peeled, I don't slice till...
  4. I use my old pre-gluten-free recipe and it spreads out for a crispy cookie with Namasta all purpose flour blend and it works fine, actually my kids didn't realize they were gluten-free at first and I've taken them to parties and no one notices
  5. I like Namesta, you can use it cup for cup and I have found rather than buy special mixes like, pizza crust or biscuit, the flour blend works well.
  6. I know what you mean about all the different types of flour. I found that I pretty much stick with an all-purpose flour blend (I use Namaste) but I broke down and bought tapioca flour after trying this bread. One magazine you might want to check out is Gluten Free Delights. I found one at Earth Fare and now have a subscription. All the recipes use basic ingredients...
  7. I was at a Brazilian restaurant a few weeks ago and when I asked about gluten free choices I was so pleased to find almost everything on the menu was and then the waitress said "even the bread basket is" I almost fell over. Needless to say I came home found the recipe on line and tonight made the bread. It took 2-3 min. to mix, about 15 min. to bake and my...
  8. Thank you mushroom, I think so too, the only hypo symptom I don't match is the high cholesterol. Sadly I can't get referred to an specialist because this is the second doctor who believes these are "normal" numbers. I am tempted to bring levothyroxin from abroad (I was taking 125mcg daily before moving to the U.S. several years ago). I know there are herbal...
  9. I forgot to mention in my post that my niece is a physical therapist who will be home over the holidays. She is going to work with me to in regards to the possibility of pinched nerves. I bought some sulingual B12 today, hopefully it will help.
  10. I spoke with my doctor today, my TSH was 3.58, even though I fit about 95% of hypothyroid symptoms, my TSH is "normal" I did have an increased sedimentation rate but the test for rheumatoid arthritis was within range. I am SLE positive but my ANA was negative, and I'm anemic again. She wants to follow up in a couple of weeks but I have decided that I would...
  11. What a wonderful post. I know your children must be so proud of your accomplishment. I know from my own experience how difficult it can be to go back to college and take care of a family, but I can't imagine battling such major health issues as well. Congrats on finishing that last exam. Just so you know I think this board is just as proud of you, you were...
  12. Thanks for the reply, giving up soy has been a real struggle and I have not been totally successful--yet, I don't even want to think of nightshades yet :)food intolerances are not for the faint of heart, lol
  13. Just a quick update, the joint pain has pretty much gone away but the fatigue persists which is primarily due to my newest complaint--my arms falling asleep at night-- as the feeling starts to return it wakes me up, the left arm only takes about 15-20 minutes to feel normal, for the right it is extremely painful as the feeling is returning and it takes about...
  14. No everything is pretty much the same. I had a couple of days at the beginning of this where I thought I might be getting the flu because of the way I felt but no new products. I'll try dropping the soy--I think that will be hard for me but possible. I keep hoping the meds will kick in but I'm just getting worse so I think you are right about that as well...
  15. No she did not do any blood work, she felt since I was already dealing with one autoimmune condition that arthritis was the likely cause. My shoulders were hurting yesterday when I woke up and she had worked me in because I seemed to be working my way through all the joints. I had been in a few weeks earlier with extreme fatigue-she did a vit D test, (I was...
  16. This may be totally unrelated to celiac but I believe it may be. Last week I was the most fatigued I've been in 10-15 years, then came the joint issues-first my hands and ankles. I then developed a sharp pain in my throat on the left side when I would swallow (about where the thyroid would be) I saw my dr. yesterday and she felt it was arthritis and gave...
  17. Last year at Thanksgiving--pre-diagnosis--I was so dizzy that preparing dinner for family and friends was difficult. My brother had just been diagnosed a couple of weeks before and as I worried about safely preparing lunch I never suspected that I would be positive, I just thought wow this is going to be one bad migraine with this much aura. I am so thankful...
  18. I think sometimes that if a reaction to gluten was similar to peanuts and the need for epi-pens (I know it's NOT an allergy but an autoimmune response) people would take it more seriously. When I read the conversation with the aunt I immediately thought of my dad who at 85 is always offering me food (often gluten laden), I think it stems more from lack of...
  19. I'm so glad you found a great doctor, I think that is half the battle. I found out after a screening after my brother was diagnosed, other than migraines and random thyroid issues, I had no symptoms, and actually didn't know those were symptoms. Two of my children are positive as well, my third will have his yearly physical later today and that is one of...
  20. Looks like I'm going to need a doughnut pan. I can't wait to try this recipe.
  21. I can definitely identify with you as could my also gluten free brother. I use to eat a full meal then leave the table and still be hungry. It didn't matter if I was sick, I could still eat, there was never a feeling of being full. I would often have a bowl of GoLean cereal in the morning for breakfast and it has something like 13g of fiber and be starving...
  22. Thank you for your reply. I don't think he is interested in the biopsy. I wish we had known about this illness years ago when he first started having issues. I must admit though I feel so much sadness that he will have to deal with this diet. He has other allergies (trees, grasses, cats, etc) but meds take care of those so well. I wish there was a pill for...
  23. My 19 yr old son got his blood results back today. My brother was diagnosed in Nov, me in Jan, and my mom in March. He decided he wanted to be tested after a lot of debate. The final straw was when he had a really weird form of dandruff return. The first time was about 3 years ago when he dropped about 30lbs (5'10, down from 170 to 140), which at the time...
  24. Thanks, I will call my GP today, she is new for me, I've been with her since Feb. (my old dr who I had known since I was a child was replaced after the celiac issue began--for not listening)I haven't really discussed thyroid with my new dr. as we've worked more on the anemia and other assorted gluten related issues. Thank you for taking the time to reply...
  25. I'm currently not on any thyroid medication, however when I lived abroad I was taking Eltroxin daily. I haven't kept up with current research on thyroid conditions, though I know I felt a lot better when I was actually taking it than I do now.
