Michelle, just got around to trying your chocolate cake recipe. Only made half in an 8x8 pan, and it turned out great. Used Hagman's flour mix and frosted with Pillsbury gluten-free frosting. My grandson (l2 yo) loved it. Thanks for sharing! -

We like chicken dipped in canola oil and then in seasoned bread crumbs with a little gluten-free flour. Onion and/or garlic seasoning, seasoned salt, paprika, parsley, and/or parmasean cheese flavor the crumbs well. Then bake at 450 degrees for about 20 minutes. This is delicious, not greasy. Agree with Kim that Quinoa is the best pasta we've found; both the spaghetti and macaroni. Make sure there is enough boiling water, stir while cooking, rinse with hot water, and drain well. You mentioned using Equal for sugar. Our Gastro. said many Celiacs have problems with sugar substitutes, as well as dairy, etc. Don't know if this could have any bearing on your problem, but it is worth considering. Thank you, Tyki, I will look for gluten-free items at our Meijer store tomorrow. This exchange of info is so helpful. Have found 2 breakfast bars that the companies say are gluten-free: Post Carb Well Bars by Kraft and Quaker Q-Smart Snack Bars. -

Have heard good things about the gluten-free Yellow Cake mentioned above although I haven't yet tried it since my grandson is a chocoholic. Had notes from someone that she reduced the sugar to 3/4 cup and added 1 pkg of flavored jello. This should work with lemon jello for a lemon cake. Please let us know if you try it. -

We are Protestant (Christian Church) so the wafers and wine are separate. We can bring our own gluten-free bread/wafer and already have individual small wine cups. I bake for my 11 yo grandson and have used Asian rice flour and tapioca & potato starch for years without any problem. It saves a great deal of money. All the products are in individual packages (usually 1 lb), which I think is safer than bulk items, which can often be found in health food stores. Have not had a problem with the Asian products.
