  1. Has anyone been successfull making plain white bread with the 3 rice flour combination? After so many failures, I'm discouraged to try again. Did make a good chocolate cake - just like the real thing - using the 3 rice flour combo. Would love to hear from anyone who makes a good plain white bread (grandson doesn't like the taste of the bean, sorgham, etc...
  2. Michelle, just got around to trying your chocolate cake recipe. Only made half in an 8x8 pan, and it turned out great. Used Hagman's flour mix and frosted with Pillsbury gluten-free frosting. My grandson (l2 yo) loved it. Thanks for sharing!
  3. We like chicken dipped in canola oil and then in seasoned bread crumbs with a little gluten-free flour. Onion and/or garlic seasoning, seasoned salt, paprika, parsley, and/or parmasean cheese flavor the crumbs well. Then bake at 450 degrees for about 20 minutes. This is delicious, not greasy. Instant potato flakes seasoned to taste also make a good coating...
  4. Would love to share "tried & true" recipes. Have had so many failures when trying recipes found in gluten-free cookbooks, etc. Our 12 yo grandson is celiac disease, so have collected several good cookie recipes. Also, have learned to modify my own recipes for the best success. Here's a "Baked Breaded Chicken" that the whole family enjoyed: 1 1...

    ARCHIVED Baking

Under the topic "All Rice Flour Mix", Connie shared her discovery of using a combination of equal amounts of Asian rice flour, Asian glutinuous rice flour, and American rice flour to produce a baking mix equivalent to regular white wheat flour. Look up this topic on the forum and read about others who have had good success with cookies and cakes. I plan...
  6. Agree with Kim that Quinoa is the best pasta we've found; both the spaghetti and macaroni. Make sure there is enough boiling water, stir while cooking, rinse with hot water, and drain well. Only my grandson is celiac disease, but he likes this best of all we have tried including rice, brown rice, and corn. He loves mac & cheese and takes this for lunch...
  7. You mentioned using Equal for sugar. Our Gastro. said many Celiacs have problems with sugar substitutes, as well as dairy, etc. Don't know if this could have any bearing on your problem, but it is worth considering. Our grandson cannot use aspartame (is that in Equal?) and my husband cannot tolerate any type of cheese, because it causes cramping, diarrhea...
  8. If the instant breakfast is Walmart Brand, they will check for you to determine if it is gluten-free. We use Carnation and find it is cheapest at Sam's Club.
  9. Thank you, Tyki, I will look for gluten-free items at our Meijer store tomorrow. This exchange of info is so helpful. Have found 2 breakfast bars that the companies say are gluten-free: Post Carb Well Bars by Kraft and Quaker Q-Smart Snack Bars.
  10. For another good no-bake cookie, try the Scotcharoos recipe listed under the Recipes and Cooking Hints at this site. Kids and adults love this cookie, and it is so easy to make. Hope you like it! Jo Ann
  11. Sweetie, I was surprised to learn that your Meijer Store is carrying gluten-free bread mix. Where do you live? We are near Indianapolis, IN. Did you especially ask for gluten-free bread mix at your store? The only one I've found is Old Bob's at Kroger, and that mix has a strong, bean flavor which my 12 yo grandson won't eat. He likes the plain, white...
  12. Connie, I'm intrigued by your all rice flour mix. Does this work well with yeast bread, too? My grandson won't eat anything made with the stronger tasting flours like bean, sorgham, amaranth, etc. Tried Old Bob's bread mix, which seemed like a great loaf of bread, but the strong flavor was too much. I buy rice flour, potato & tapioca starch at the...
  13. Have heard good things about the gluten-free Yellow Cake mentioned above although I haven't yet tried it since my grandson is a chocoholic. Had notes from someone that she reduced the sugar to 3/4 cup and added 1 pkg of flavored jello. This should work with lemon jello for a lemon cake. Please let us know if you try it.
  14. This is a good lemon bar cookie. My grandson is celiac disease, but didn't like the lemon flavor, so the rest of us (not celiac disease) ended up enjoying them. Lemon Cookie Bars 1st layer 1/2 cup shortening 3/4 cup sugar 1/2 cup potato starch 3/4 cup cornstarch 2 tsp. baking powder 1/2 tsp. salt 1 1/2 tsp. xanthan gum 1/4 cup milk Preheat...
  15. Heard Dr. Phil's wife Robyn say she did not eat gluten and wondered, too, if she had Celiac. Sent an e-mail to his website, but did not receive a reply. Mickey Redmon, former pro hockey player, who now does hockey commentary for Fox Sports out of Detroit has said he is celiac disease. He mentioned having to forego the donuts, etc. the other broadcasters...

    ARCHIVED Safe Restaurants

Dear Laura, Could you please check the bread mix you mentioned "A Wonderful gluten-free Bread Mix" and give me the name of the manufacturer. We don't have Safeway store in our area, but the health food store could possibly order it for me. I've been trying to make a decent bread for years. I bake for my 11 yo grandson, and he likes to take sandwiches...

    ARCHIVED Communion

We are Protestant (Christian Church) so the wafers and wine are separate. We can bring our own gluten-free bread/wafer and already have individual small wine cups. The bread and wine are only symbols of Christ's body and blood, so I don't understand why a church cannot be understanding of those with celiac disease who cannot tolerate wheat. It is not safe...
  18. When eating out or away from home, if you question a food just ask to see the ingredients list. Most restaurants, vendors, etc. are more than glad to let you read the package list of ingredients. We have done this in restaurants, at food stands (hamburgers, hot dogs, ice cream treats, etc.). Many larger restaurants are learning about celiac disease, but...
  19. My 11 yo grandson is the Celiac in our family; however, that doesn't stop us from eating out. More and more restaurants are becoming familiar with celiac disease. Many fast food chains (Wendy's, McDonald's, Steak & Shake, TGIFridays, etc. will serve meat products w/o the bun and can usually tell you if Fries are cooked in separate oil, etc. Plus Wendy...
  20. I bake for my 11 yo grandson and have used Asian rice flour and tapioca & potato starch for years without any problem. It saves a great deal of money. All the products are in individual packages (usually 1 lb), which I think is safer than bulk items, which can often be found in health food stores. Have not had a problem with the Asian products. Hope...
  21. My grandson has used Mary Kay sunscreen for years without any problem, and he tans beautifully. The CSA/USA Cooperative gluten-free Commercial Products Listing of Aug. 2002 lists the following contact re Mary Kay products: Nicole Geerts, Consultant, e-mail: nicolegeertsmk@aol.com. She has researched the ingredients and will share a gluten-free list of...
  22. Jenni, our local library finally located a copy of Lyn Rae Rie's book, but they want $10 just to loan it out. Is there a plain white bread recipe in it that you have found makes a good bread? The last mix I used was Bob's Red Mill white bread, but my grandson didn't like the bean & sorgham flour taste, and I can't blame him. Hate to buy a book for...
