  2. Thanks for the Pamela's substitute recipe. Sounds great except that we have to use a dairy substitute. This is probably cheaper since we buy most flours from an Asian/Oriental market. The fours are individually packaged - no bulk items! Sometimes I wonder if the manufacturers aren't taking advantage in charging such high prices for gluten free products...
  3. Have not been able to make a good white/yellow cake -- have great luck with chocolate. Tried the mayo cake at allrecipes.com and it turned out very dry. Looking for a tried and true recipe for my daughter's birthday -- something I can make dairy free with substitutions. Thanks! Jo Ann
  4. Yellow Rose is right. Cut wax paper or parchment to fit the bottom of the pan, and grease/spray the sides. I do this with cakes as well as breads. Also, banana bread should be mixed by hand; the electric mixer is too powerful. Hope this helps! Jo Ann

However, I know she uses superfine brown rice flour from Authentic Foods. Cannot get this in any stores in our area, and ordering on line costs more for s/h than the product.   9. I put the loaf of bread in the cool oven and turn on the light. This seems to make it just warm enough that the bread rises beautifully. Another suggestion is when you're doing the washing, put the pan of bread on the dryer on top of a cooling rack. This works well, too. Jo Ann

  11. Haven't tried the Blondies by Namaste, but we love their chocolate cake mix. Based on this I just made their vanilla cake, and we thought it was awful! If you don't like the Blondies cookies, I have a great blonde brownie recipe with dates & nuts that everyone likes (celiac disease or not). Jo Ann

  25. Mopsie, don't throw out your bread failures. I save (freeze to get a large amount), dry out (low heat in oven), and make bread crumbs in food processor. These crumbs are great for meatloaf, meatballs, casserole topping, etc. This way I don't feel like it's all been a waste.
