Thank you, WW340. I'm going to try the recipe in a regular loaf pan and see how it turns out. Will follow your advice and let it rise longer and bake longer. It is really delicious bread. The only draw back is that the non-celiacs like it just as much so it doesn't last very long. Actually, our 15 yo. grandson is the celiac, and he's always pleased when...

Thanks, cmom, we did read that on the internet; however, we ate the buns and did not have any problem with them. Our grandson is celiac and very sensitive, and he didn't have any reactin to them. We found them in a small bakery in Northville, MI and wondered if anyone else had tried them. I really would like to find a good recipe using millet flour and...

Recently tried Bette Hagman's French Bread recipe and want to thank whoever recommended it. It was so-o-o good. Is it possible to make this in a regular size bread pan -- maybe increasing the recipe another half? We would like to make it large enough for sandwiches, but hate to waste the ingredients if it would not turn out. If anyone has tried this,...

We receive so many wonderful ideas and helpful hints from this board, I wondered if anyone has eaten Sami's gluten-free baked goods. We tried the hot dog buns, and they were great. They are made with millet flour, and we don't have any experience with that. Has anyone been able to duplicate this recipe? Would really love a GOOD recipe for hot dog/hamburger...

Our grandson likes scotcharoos made with Cocoa Pebbles (less expensive), but Nature's Path makes a crispy rice cereal. Read the labels on the chips. We found some store brands are safe to use (Kroger and Meijer). These cookies can also be made using margarine, marshmallows and peanut butter. Either way, they are good and whole family likes them. ARCHIVED Fabulous French Bread Recipe
Jo Ann replied to WW340's topic in Gluten-Free Recipes & Cooking Tips
This is good French bread, although I have to make it egg free. My family would like to use it for sandwiches. Has anyone tried baking it in a regular loaf pan? Do you experienced bread bakers think this would work? Jo Ann -
ARCHIVED Gluten & Dairy Free Recipes
Jo Ann replied to Jo Ann's topic in Gluten-Free Recipes & Cooking Tips
Thanks so much for your suggestions. I panicked. Cooking gluten-free for a mixed family is hard enough, but now we have a very limited diet with protein. carb, & oil balance that's a real challenge. Colorful root veggies are preferred with some fruit allowed. This is for something called Adrenal Fatigue and the diet is overwhelming to a meat and... -
With Thanksgiving just a week away, I find out we must make it gluten and dairy free. Anybody have any good recipes for traditional type food you can share. Our daughter is on a diet gluten-free, DF, as well as avoiding white flour and all sugars and sweeteners. She's suppose to eat colorful vegies (i.e. sweet potatoes, squash, zuchinni, carrots, green...

Celiacs commonly are allergic/sensitive to other foods besides gluten. Our daughter has several food allergies including dairy (casein). Because she wasn't feeling as well as she should, she started checking into her meds. Many medicines contain dairy (i.e. coumadin, topamax, synthroid, etc.). Checking generics was next to impossible, because so many...

If anyone makes meatloaf or meatballs, make sure they have gluten-free bread crumbs (or other gluten-free filler). What about pork chops with escalloped potatoes. Brown the chops. Make escalloped potatoes with a gluten-free cream sauce. Put in dish large enough to put chops on top. Put a little sauce on top of chops, cover, and bake about an hour. ...

ARCHIVED What Do You Substitute When A Recipe Calls For Cream Of Mushroom?
Jo Ann replied to Aligray's topic in Gluten-Free Recipes & Cooking Tips
Our experience with Health Valley Organic Cream of Mushroom was just the opposite. We just had Salisbury Steak and used this soup for the gravy combined with some Lipton Recipe Secrets Onion Soup, and it was enjoyed by all. It's more like Campbell's than Progresso is. Progresso is more mushroom (which the kids don't like that much) and little soup. Health... -
We just had Salisbury Steak made with Health Valley Organic Cream of Mushroom Soup and it was great. They also make Cream of Celery and Cream of Chicken, but I haven't checked yet to make sure they are gluten-free. We're always looking for something to take the place of Campbell's and this Cream of Mushroom is the closest I've come -- much better than Progresso...

There are a lot of good suggestions in the above. At least he can have eggs and there are many good milk substitutes. Our daughter is on a strict detox diet, because of allergy testing, so I appreciate your problem. She makes a lot of stir fry meals with whatever meat and veggies appeal. How about omelets? Google gluten-free websites or recipe sites...

ARCHIVED gluten-free, Cf, Sf Icing

Your frosting sounds good, but how many cups of chips do you use with the 1/2 cup milk? Afraid I'm one of those "by the recipe" cooks who needs measurements. Thanks! -
ARCHIVED Baked Goods Drying Out?
Jo Ann replied to musicchick64's topic in Gluten-Free Recipes & Cooking Tips
I make a full batch of cookies, but only bake half. The other half I shape and freeze on another cookie pan; then put them in a plastic container dividing the rows with waxed paper and freeze until needed. Do this with several different kinds of cookies so there is an assortment. Sugar or cut out cookies freeze well in large balls wrapped in plastic wrap... -
ARCHIVED gluten-free Munchkins!
Jo Ann replied to Cam's Mom's topic in Gluten-Free Recipes & Cooking Tips
Well, I spent the better part of a morning trying to make these little things and could not get a decent batch. Used a pancake mix that makes great pancakes. Heated the munchkin maker on medium, brushed wells with margarine, filled 3/4 full, waited until bottoms looked done (about 5 min.), turned them for about 5 min. more, then turned them again. Tried... -

ARCHIVED gluten-free Munchkins!
Jo Ann replied to Cam's Mom's topic in Gluten-Free Recipes & Cooking Tips
H-E-L-P! Bought the pan, but the donut holes aren't looking like you describe, and they are not getting done in the center. The directions aren't all that great, so I must be doing something wrong. Am using a great pancake recipe that we like, but the puffs are disappointing. Would appreciate your advice. Jo Ann -
ARCHIVED Rollable Cookie Dough?
Jo Ann replied to Ridgewalker's topic in Gluten-Free Recipes & Cooking Tips
The following sugar cookie recipe was adapted from Crisco's recipe. It is easy, very forgiving, and makes great cookies. Gluten Free Sugar Cookies 1 1/4 cups sugar 1 cup Butter Flavor Crisco 2 eggs 1/4 cup light corn syrup 1 Tbls. vanilla 2 cups gluten-free flour mix* 1 cup sweet rice flour 1 tsp. baking powder 1/2 tsp. baking soda 1/2 tsp... -
I understand that if you can use eggs in the recipe you don't have to use egg replacer. Don't know why that is sometimes included, but that's what I read some place. Egg replacer is mostly for people who cannot tolerate eggs. My bread recipe calls for both whole eggs and egg white.

ARCHIVED Crock Pot Or Time Bake Recipes?
Jo Ann replied to lonewolf's topic in Gluten-Free Recipes & Cooking Tips
I've been told that Heinz Tomato Soup is gluten-free, but haven't found any in our stores to check the ingredients. Progresso makes a gluten-free Cream of Mushroom, but you have to like mushrooms because there are a lot of them! -
I don't know about sbustituting Pamela's Mix since it does contain some of the other ingredients. I make chocolate chip cookies from that mix, but we didn't care for the pancakes or muffins. I usually try to follow the flour ingredients called for in each recipe with very minor changes. If it works, let me know.

Here's a recipe I got from this board, I think. I've only made it once, but it was good.
