  4. Both are correct. There is a risk of cross-contamination in every mainstream product, since no mainstream company tests all their products for gluten.   8. Yes, you could indeed be temporarily intolerant to lactose until your small intestine heals. Lactose is the sugar in cow's milk. To digest it, your system needs the enzyme lactase, which is produced in the villi of the small intestine.   9. In the US, as stated, if it is wheat that fact must be clearly disclosed. It is most commonly tapioca* or corn. It is never rye or barley, so in the US if it does not say wheat then it is gluten-free. *Some people, including some celiacs, are sensitive to tapioca.

  17. Some products are simply labeled "gluten-free." The manufacturer does not have to have a gluten-free facility, or do any testing. If they have shared equipment, or a shared facility, they may choose to voluntarily disclose that, but they are under no obligation to do so.   18. This is a fairly common problem. When you upload a new avatar (or photo), the file name does not change, although other attributes do. Having an old, cached, version of an avatar (yours or another member's) is not unusual. Press F5 to refresh the page, and the problem will be resolved.

  22. That is what I call an honest answer, but not one that worries me. What it means is that they don't test for gluten contamination (no mainstream company does), and thus can make no legal guarantee. It does *NOT* mean that the products are inherently unsafe.
