  3. It may appear as a main ingredient, or may appear in parentheses as a subingredient. But it will be there, so if you read whole list, including sublists, and don't see it, it is not there. It you see the name of a gluten source anywhere, avoid the product.
  4. Some salad dressings have gluten, but there are lots you can have. Most Kraft dressings are gluten-free--just read the ingredients. If there is gluten, Kraft will clearly disclose it. Golden Italian and French are the two I use regularly. Wish-Bone is a Unilever brand--they, too, will clearly list gluten in the ingredients.
  5. I was 45 when I asked my long-term primary care physician to test me. He said it was a rare childhood disease--I was too old--but he made the referral.
  6. No, flour would not work--when damp it gets sticky. Cornstarch is possible, but the most likely candidate would be cellulose powder. It imparts no flavor and is allergen-free.
  7. The candy might have contained gluten in the form of malted barley, a sweetener. It is highly unlikely to have been coated in gluten. Gluten is sticky--using it would have to opposite of the desired effect. I have seen finely powdered sugar used that way.
  8. Actually, this is not so clear in Ontario. The doctor who ordered the test owns the results. I have never had a problem getting actual specifics, but it isn't clear that I have a legal right.
  9. You are seeing negative results for foods that you are no longer eating. Autoimmune diseases, including celiac disease, produce antibodies in reaction to certain foods. If you do not eat those foods, there will be no antibodies--the tests will be negative. This is positive confirmation that your attempts to follow the gluten-free diet are succeeding.
  10. You are in Australia, I believe. In Canada and the US, the oil for the first (partial) fry at the factory contains a flavor that has a milk derivative.
  11. Tocopherols are a natural antioxidant. The Canadian Celiac Association lists tocopherols as a safe food ingredient for us, without qualification.
  12. Among others, five big companies that will clearly disclose all sources of gluten (in alphabetical order): ConAgra, General Mills, Kraft, Nestle, and Unilever. They each own many, many brands, but look carefully on the label as the parent name is almost always given.
