    Good point. There are flours and other things, such as xanthan gum, in gluten-free goods that are not typically found in other food products.

    MSG can be extracted from any protein. It occurs naturally in every protein as as glutamic acid. When the protein is broken down, the glutamate gets loose. If it finds sodium, it bonds, forming Monosodium Glutamate. Some people, including some celiacs, react to concentrated MSG. But it has nothing to do with celiac disease.
