  1. Thank you Ali and Mia for the detailed explanations. It is all so very complicated! I have to admit that for the past several years I have been focused on my thyroid/adrenal issues (which I am quite familiar with). While digestion was looked at previously - it was not something that was focused on and I never researched it. I can see a gastro doctor...
  2. Oh man, I tracked down this doctor (he had moved). I knew he wasn't on my insurance plan. Actually he does not take insurance. He is a DO, specializes in allergies, description of practice indicates: *Family Medicine *Environment Medicine *Airborne & Food *Allergy Testing & Treatment *Gastric Analysis A new patient visit is...
  3. I had been put on a variety of digestive enzymes, HCL, etc over the years. I am sure Betaine was in there somewhere as it seems I had taken a variety of things. I still have Metazyme left, which is from Metagenics. That one has the proteases, amalases, etc in it (so not the HCL). One of the last things I was put on was something called Kristazyme (An...
  4. Mia - Thank you for the info on what Nexium is and what it does (and the tip on the HCL) I have taken HCL before. I remember I could only take a little of it - caused burning. I agree, organization is key to making this work. It is funny, sort of, but I contemplate what to do to make this easier - and I think that using some canned items would be helpful...
  5. That's a good idea Sherry! I think Valda had written about finding coconut milk in an Asian store that didn't have any guar gum or additives such as that that most other coconut milks have.
  6. Happy Birthday Shay!! JSN7821 - I am not Shay but I made a squash casserole today that ended up smelling just like how my sweet potatoe casserole used to smell. I peeled and cubed a butternut squash and simmered it in a little bit of apple cider with water with a chopped up apple. I then drained the liquid and mashed it in my blender with some butter...
  7. I hear you AliB! I have a feeling they would mostly be bad here as well. All are the same brand (even at different stores) - Melissa's. They are called "easy-crack coconuts." They have kind of a line around the middle. They do break fairly easy. But so far 3 of 3 bad (and I took them back to the store). I have one more sitting on the counter, but I...
  8. AliB and Sherry - thanks for your input on what goat milk tastes like. I think it is probably more the idea of it than anything, as you said Sherry. I might just give it a whirl. Thank you also for the varied food ideas Sherry! I have been sort of afraid of trying stir frys because I am so used to adding different oils and bottled stuff, which...
  9. Hi Sherry - I find that baking items with nut flours at a lower temp for a longer time is helpful. In making the almond muffins from the BTVC book, it seems the first time around I baked at 330 degrees. This last time I noticed the book called for 375 it seems. So I think I initially went with 350 but that was a little too high, not sure why. I had seen...
  10. AliB - I think the coconuts were old. They really didn't smell coconutty - and were more toward being flavorless - very little flavor. I might try again, following your instructions on using warm water - but I guess I would need to look for a coconut from somewhere else. Meanwhile, I keep making the dairy yogurt. I am thinking I might try goat yogurt...
  11. Welcome kkcarlton and Sindread! Wow - I don't think I was able to get online on Friday - and there were problems with the site over the weekend - alot of activity! I did try the coconut yogurt. I did not consider that a success. I drained the coconut milk, cut out the coconut, and blended it in the blender with boiling water. I then strained...
  12. Okay, so I am full of questions today as I research ingredients and think about what tasks I want to work on this weekend! I bought 2 coconuts at lunch - so Friday I plan on draining them and cutting out the white meat to make coconut milk, which I can then turn into coconut yogurt! Dry Curd cottage cheese - can't find in my area. Is this the same...
  13. Does it separate before or after straining? I was thinking that straining makes a thicker yogurt, not straining makes thinner. I like to make my yogurt in 2 quart batches. To start with 2 quarts of coconut milk, how much coconut cream would I need to use? (just trying to compare cost with making the coconut milk myself - balanced out with the convenience...
  14. Shay - by not straining the coconut milk for yogurt - how thick is the yogurt? I have been making mine from whole milk and half and half. This last batch was from whole milk only. It sets up very nicely. I like it thick so that when I stir in some honey or whatever else, I don't end up with liquid. What is a jelly strainer? I have a Cuisinart food...
  15. Shay - what do you do with coconut cream? How do you make whipped coconut cream? Does a little of this go a long way? I went to the website you posted - and they are doing like a BOGO - two 16 oz jars for the price of one. Shipping is just $9 - so doesn't seem to bad. But - want to make sure I know what I can do with this.
  16. Art Girl (or anyone who knows )- does it really take almost 1/2 cup of gelatin to make this? I have only seen gelatin in those little packets. Where do I find gelatin in bulk?
  17. I am thinking the answer is likely time. Probably have to eat simply and very plain for some time. While I started out okay this morning (not so much mucous), it was really bad mid-day (I had chicken soup and a hamburger patty for lunch - banana for a snack) but almost non-existant for awhile this afternoon - and not so bad tonight. I am not taking vitamin...
  18. This makes Day 7 for me. The main difference that I have noticed is that I have lost a few pounds. Still have mucous in my throat (comparable to the amount I had when I eliminated dairy, corn and eggs). I am still getting headaches. I seem to do okay in the morning, but toward the evening is when I will get a headache. I seem to only tolerate about ...
  19. Sigh. I made up a batch of yogurt yesterday. As I wasn't going to be home last night, I texted my daughter to turn off the crockpot and put in the fridge for me. However I didn't say fridge - I said freezer!!! So, I am looking for the yogurt this morning to check it out - and I find it in the freezer. She showed me my text - indeed I did say FREEZER...
  20. Hmmm...I always liked Muir Glen. This would apply to all their labels, would it not? Such as tomatoe sauce? (I haven't looked at the label on a can of tomatoe sauce - but will next time I am out). Although, just using the canned tomatoes would be very helpful (and a convenience).
  21. After eating my cooked apples with yogurt for lunch today, I had a headache. Not a bad one, and it passed within 30 minutes for the most part - but I am wondering if that means don't eat apples? They were not a problem before today. No other problems (other than the big C - I dropped all magnesium supplements and I have been taking those for awhile now...
  22. Sherry - That is baking soda mixed in water, right? I will have to try. Yesterday afternoon, last night the mucous wasn't quite as bad. Same with this morning. I was a severe asthmatic as a child, so that is interesting to note. I was on allergy shots for years. During my teen years I was able to be weaned off the shots - and was able to stop taking...
  23. Hi Lizard!! I am with you - breakfast has always been hardest for me - because I like "breakfast foods" for breakfast. That said, I am having to revise my ways. Anything you would eat for other meals have for breakfast (didn't seem very appetizing to me at first - but it is working). Since you said allergic to egg whites, I am thinking not an...
  24. Once upon a time, years ago, I went on a candida diet for a year (plus a ton of supplements). Never sure if that was the problem - but this was back when this all started. Actually, I am sure "all of this" started way before then - but that was when I first started having the brain fog and other issues that made me sit up and take notice. Interestingly...
