  8. That's what it is called where I get my flours. Another suggestion - garfava flour is even better IMHO - a blend of garbanzo and fava.
  9. Me, too! Some days on my gluten challenge I think I literally did have half a loaf of ciabatta, lots of pasta, pizza, croissants, whatever. Anything I wanted. Not a single thing happened. Not even a twitch. As I've said elsewhere here I still wonder if my surgeon got my biopsy tests right! Well, I know he did, but still.
  10. Totally agree. 100% is the only way to do it. Period. I have NO symptoms and find it extremely hard at times to be doing this - where is the motivation? I feel as though I have no disease or illness at all. I am full of energy and don't get sick. Sometimes I question my bloodwork and biopsy results that prove I am celiac. I do have chronic back pain...
  11. I am a silent celiac so have no symptoms that I know of yet! Sometimes it still surprises me to say I have celiac. Sure doesn't feel like I have anything! No anemia, no malabsorption issues.   16. Chicken and Dumplings and biscuits are a great idea for this. Mine wasn't biscuit-like - it rose tall and was very light. But the texture is still not real focaccia. It still is really good for what it is and fixes a craving fairly quickly. I appreciate your input! It really helps me learn.

  18. I live in Alberta so am doubtful about the Minnesota farm. However, there is a huge bison farm close to us, too. The onion powder is McCormick's which I have been reassured by email is truly gluten-free - it had better be!! They also have roasted garlic powder which can be nice in BBQ rubs and such.   20. You're welcome! We CAN have tasty focaccia, darn it! Anyway, I think that brown rice flour would be fine but as you know, it is a little gritty, which shouldn't affect the texture enough to be a problem. Another good sub would be amaranth if you have that.
  21. Until I found out for certain I had celiac disease (bloodwork and biopsies) I was denial, too, because I didn't feel sick at all! I was convincing myself that the test results were mixed up with someone else's or that there was some technical error. Nope! And I wondered how this could happen to someone who teaches cooking classes and plain just loves food...
  22. As someone with celiac disease but asymptomatic I would agree. In ways it does indeed feel like a life sentence because I feel no different off gluten (actually I had more energy on gluten). It seems as though I have nothing to aim for (i.e. feeling better, etc.). And I love food too much! Having said that, I still will NOT cheat. Ever.
  23. Ooooh...I LOVE bison! My dad was a hunter and provided us with moose, elk, venison and so on so I grew up surrounded by all sorts of things (on a farm with lots of animals and birds). My husband and I also lived WAYYYY up north (where you have to fly - can't drive) where we had beaver, caribou... Bison (and other game in my opinion) are underrated and...
