ARCHIVED How Far Ahead Do You Plan Your Meals?
love2travel replied to aeraen's topic in Coping with Celiac Disease
I'm a planner in a big way. I usually plan a week or more in advance. BUT if I am shopping and see some lovely fresh plump lemongrass or blood oranges or other yummy ingredients I am flexible enough to change plans rather abruptly. Ingredients inspire me. -

Homemade corn tortillas with spicy beef filling, melted cheeses and green onions. Jicama, daikon and broccoli slaw. Mango for dessert. Simple but good. -

They are brown papery bags that come in packages of 4. Each can be re-used up to 50 times in a toaster or toaster oven to prevent cross contamination of others' crumbs. I like it for B&Bs so I can take along my own bread and use it without fear. They are really cool! Also ideal for our toaster in our Croatia house as it is tricky to clean. I am... -
ARCHIVED Travelling And Living In Germany

We're flying to Frankfurt soon, too, but with Air Canada. Their gluten-free food is TERRIBLE!!! So, I have purchased several snacks (i.e. dried fruit and nuts, crackers, falafel chips) to take along and will be making my own crackers, etc. We are then flying to Venice where we will replenish my gluten-free stock and then drive to Croatia to our house.... -
ARCHIVED Vegetable Side Dishes- Need Ideas
love2travel replied to Teri Lou's topic in Gluten-Free Recipes & Cooking Tips
Roasting or grilling veg really brings out their sweetness (i.e. red peppers, tomatoes, carrots, all root veg). I also love to make several purees with carrots, parsnips, peas, roasted butternut squash, etc. Have you tried spaghetti squash with melted butter, sage leaves and Parmesan? I also marinate mushrooms for a bit of a change. Have you tried kale... -

Precisely! We do get up to 100F in the summer but not for long periods of time. My ideal temperature is about 60-70F at the most. Love it. Croatia will be nice - extremely mild short winters (in our area they get snow the odd time but rarely - two hours from Venice) and we'll just return to Canada in the summers to visit to avoid prolonged periods... -

It's funny but I don't do well in heat at all, either. It makes me wilt! -

Northern Alberta (several hours north of Edmonton) - unsure of the altitude. We've had snow on the ground continually since the beginning of November. Yuck. One of the many reasons why we bought a house in Croatia! -
ARCHIVED Good gluten-free Experiences In Venice And Rome?
love2travel replied to love2travel's topic in Traveling with Celiac Disease
Thank you SO much! I will print this and take it along on our trip. Gelato is one of those things one must do whilst in Italy and I'm glad that I can do it gluten-free. I appreciate all this great info. -

ARCHIVED Since A Few Seem To Be Missing Oreo Cookies...
love2travel posted a topic in Gluten-Free Recipes & Cooking Tips
For those of you who miss Oreos you can make your own (and I think they are MUCH better, anyway)... Open Original Shared Link Oops - I see I spelled Oreos incorrectly in the title. I am a stickler for grammar and spelling so it bothers me a little... -
ARCHIVED Really Disappointed....
love2travel replied to WinterSong's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
It is incredibly stressful and that stress can take a toll on you, that is for sure. It sounds trite but it is so very true that time does make things a lot better. My diagnosis was in February and I went through many phases emotionally including shock (I am asymptomatic), denial, grief and so on, right up to acceptance which happened in the last couple... -
ARCHIVED How Does Your 2011 Garden Grow?
love2travel posted a topic in Introduce Yourself / Share Stuff
We're still under several feet of snow with no melting in the forecast but that doesn't prevent me from dreaming about gardening! I'm a Master Gardener and used to instruct horticulture classes so cannot wait to smell the soil. Or even see it, for that mattter. As I have a serious back injury my husband built me fantastic tall raised beds with seating... -
ARCHIVED Really Disappointed....
love2travel replied to WinterSong's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
I feel for you. I had to fast for the colonoscopy and gastroscopy for 36 hours - I was only allowed clear liquids (i.e. water) and then nothing for 12 (had to drink a gallon of that stuff - forget the name of it). That wasn't bad. When I met with the surgeon five weeks later to discuss results he told me I still had a lot of stool in there! Weird... -

Just let me know when your flight arrives and I'll pick you up at the airport three hours from here. Dress warm - we still have at least three feet of snow and it is -20C. -

ARCHIVED Betty Crocker Brownie Mix
love2travel replied to NateJ's topic in Gluten-Free Recipes & Cooking Tips
I've never tried any gluten-free brownie mixes but love fudge brownies with a thick chocolate cookie dough layer and sprinkled with fleur de sel. Or drizzled with dulce de leche or salted caramel. Mmmm... -
ARCHIVED We Had A Luncheon At Work Today...
love2travel replied to Jenn624's topic in Coping with Celiac Disease
What an uplifting success story (except for the last bit). There truly are some lovely people out there. I'm so glad for you! This will help for future potlucks at your school, too. I like how people truly took it seriously. -
ARCHIVED Baking Desserts - From Scratch Or The Box?
love2travel replied to WinterSong's topic in Gluten-Free Recipes & Cooking Tips
I agree with starting with something easy such as brownies. Just take your regular yummy brownies and substitute gluten-free AP flour (I also add almond flour for great flavour) because the properties of the flour do not matter nearly as much as they would in yeast breads and so on. There are lots of wonderful chocolate chip cookie recipes out there that... -

I've never been a beer fan but I have used Guiness in making such dishes as Steak and Ale Pie. Are you aware of any gluten-free Guiness in Canada? I would like to be able to make the pie for my husband who has a hankering for it.

ARCHIVED So How Does This Work?
love2travel replied to samiam2's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
Same here! No symptoms so I must keep telling myself it is for my own good for my future health, although it is extremely hard to be motivated to go gluten-free when you feel good (and when you love food!). As I've mentioned a whole bunch of times (sorry!) I keep questioning my diagnosis as I feel so good (other than a back injury) even though I know I... -
ARCHIVED Favorite gluten-free Crackers?
love2travel replied to WinterSong's topic in Gluten-Free Foods, Products, Shopping & Medications
We only have one cracker choice where we live. I make my own crackers as I love to add things like sesame seeds, different cheeses and spice blends, flax seed and so on. I know exactly what goes into them.
