  3. Man, I must admit I'm jealous. There is nowhere even remotely close around here that has gluten-free pizza (or gluten-free food for that matter). Well, ok. Just one. Boston Pizza. Other than that there is absolutely nowhere I can eat out unless we go to the city three hours away. But that's ok - I love to cook and can better avoid CC that way!
  4. Just can't bring myself to do it. I feel like it's all or nothing with me and must, knowing my personality type (!), go the full 100%. I don't get sick from gluten (i.e. was accidentally glutened, felt good on my gluten challenge) so must be extra, extra careful in case I do get glutened without knowing it.

  8. I find her recipes to be amongst the best in my opinion. Some of her recipes are a little different from the usual boring dull themes which is sooooooo refreshing. Try her coconut layer cake, too - it is brilliant!
  9. Being such an avid baker and cook I remember the gluten stuff so very well. A stand mixer will make all the difference in your baking, especially gluten free.   11. How long did the B12 take to work for you? I started taking it about five weeks ago an feel no different yet. My insomnia is severe (due to an extremely painful back injury) and is only helped by prescription drugs. Wonder if B12 would help in my case??!!
  12. My insomnia is extremely difficult to bear. It is mainly due to severe back/hip/pelvic/shoulder/leg pain from a severe back injury three years ago. The only reprieve I get is with prescription sleeping pills. It's a horrible cycle. If I can't sleep my muscles cannot replenish themselves so the pain becomes worse then I cannot sleep because of the pain...
  13. I did the gluten challenge for three months and had NO symptoms whatsoever (but then I did not have any before, either). But my biopsies and bloodwork show without a shadow of a doubt I do indeed have celiac disease.
  14. Since I've become gluten-free two months ago I've noticed that as soon as I do not have enough fibre (that I used to get from tons of gluten-laden products) I have those symptoms. When I get enough fibre no problem. Perhaps something else to look into? My dietician told me to get 25g per day so I am really trying to adhere to that.
  15. For pancakes I like a bit of almond or coconut flour for yummy flavour. My favourite mixes include millet, one of my favourites.

I have never owned a bread machine as I love to make my own but gluten-free versions take all the fun out of the kneading and such.   21. The good news is that most of the recipes are intrinsically gluten-free anyway. And those that are not are easily done with substitutions.
  22. BTW, you can easily make gluten-free cornbread! It's delicious.   23. I make my own hummus but purchase my gluten-free cacao nibs at Nutters (local health food store - don't think you have them in the US?). The brand is Organic Traditions and is gluten-free, non GMO and nut free. Plus it is certified organic. What do you use your cacao nibs for?
