  1. The flours/starches are interesting to work with. My freezer holds 17 kinds! It is fun experimenting - I just wish they created the same texture/consistency as gluten but there simply is no such thing, sadly. But coconut and almond flours in cakes, cookies, quick breads and so on are wonderful!

Hopefully this is not too redundant but I attended a lecture by one of Canada's leading celiac disease experts, a gastroenterologist and professor at med school, the other night who said one must be on gluten for three months and have the equivalent of four pieces of bread daily for an accurate result.   11. We live in northern Alberta but thankfully not in the area where there are catastrophic forest fires. Actually, that puts things into perspective. This is unusually cold, even for here. To speak in gardening terms, we have on average only 87 frost-free days per year and are Zone 1a. No wonder I cannot wait to live in Croatia!!

  13. I emailed Crest re their products and they said that their toothpastes are gluten-free. However, they did also say that their Crest Pro Rinse and Crest Whitening "...could contain trace amounts of gluten.   14. I live in Alberta and HAVE seen bacon containing soy sauce derived from wheat! Cannot recall which brand, though. So, carefully read the labels.

  21. Last night I attended an interesting lecture by one of Canada's leading authorities on celiac disease (a gastroenterologist). She said that only 39% of all biopsies (in Canada, at least) are done correctly! She said to make sure that at least 8-11 biopsies are taken, not just the usual 3. Interesting stuff.
