I love adding chorizo to meatloaf. Thankfully I have access to gluten-free chorizo in an Italian specialty shop three hours away. I used it the other day in my Jambalaya as well. There is also a farm close by that makes artisan cheeses and dry cured meats - all gluten-free at a dedicated gluten-free facility. They are adding chorizo as well! -

For me weight gain stems from a few things. When I had my bloodwork done initially and was told that it strongly suggested Celiac Disease I went off gluten that very day. Have you tried free-form meatloaves? Just shape it onto a broiler and bake. That way the fat drains off and doesn't just sit inside the pan. I always sautee the veg prior to adding. I also and add milk to the breadcrumbs so they suck up the moisture (this is called a panade). Soft breadcrumbs work best for this. Adding freshly-grated nutmeg adds... -

When I did my challenge my dietitian told me to introduce 1 piece of bread for three days and introduce another for three more days until I worked up to 4 a day. She said then I could eat all the gluten I wanted which is what I did. I had absolutely no trouble with it. But then I am probably in the minority. -

I forgot to mention that a leading Canadian celiac expert last week said at a lecture that only 39% of all biopsies are correctly done in Canada. Not sure about the US. She said those who are getting biopsies must get at least 8-11 of them for greater accuracy. Not to dissuade you if it is what you want/need to do - just to let you know to request numerous... -

Great to see someone as in love with nettles as I am! I have yet to use them in pesto (thanks for the idea!) but I do make at least 10 kinds of pestos (i.e. mint, arugula). Mmmmm....looks yummy. I would use my own blend rather than a mix but I love to experiment! Not everyone does. The array of things one can make using a bread blend is staggering. I'm working on recipes for authentic apple streudel using gluten-free pastry. -

Our store that stocks gluten-free stuff has 20% everything in the store the first Tuesday of each month so I've been waiting until this Tuesday. It helps to whittle a bill down from $200 to $160! I know they just got in Udi's hamburger buns and hotdog buns so I am going to try them. Homemade are pretty good but it's so weird having to make buns in muffin... -

Are the buns better than the bread? I tried the bread while in Croatia and it was one of the creepiest gluten-free things I've ever had. It was like a crumbly sponge interlaced with old burlap. Very weird. -

You can buy the rings if you find the thought of using bodies daunting. Then all you would have to do is whip up some tempura batter, dip the rings and fry. It really is that easy.
