  1. Wow - good for you! I'm glad you went ahead with it and did not allow your pain, etc. to control you. You have taken such a big step and now I bet you feel as though you could do anything. It is thrilling that you were able to do this so early into your gluten-free lifestyle after such horrible crippling! Amazing.
  2. I do take a Vitamin B complex as well as B12 sublingual and eat TONS of garlic - probably more garlic than anyone I know!! Maybe the mosquitoes (HUGE here in Canada) just like my adipose tissue!

  6. I have been gluten-free for four months and am somehow more attractive to mosquitoes this year than ever. On the other hand, we have been inundated by the suckers more this year than ever before! Dumb things...
  7. Oh, yuck! I've been really lucky I suppose. But I keep Udi's bread in the freezer and grab a piece now and then. None of my homemade breads have gone moldy at all. Weird. ETA: I'm guessing it is weather related. We are usually very dry here.
  8. I would be lost without my KA professional series mixer - it is heavy duty and does anything (except maybe the dishes). The attachments are wonderful, too - the ones used most at our house are the pasta attachments. It is helpful for cakes/cookies, too. It sits in its magestic splendor on the counter as it is used so regularly.

  11. I was told to eat the equivalent of 4 pieces of bread each day for 3 months prior to my biopsies so I am afraid your 2 weeks may not have been long enough. Do you know how many biopsies were taken? It may be that only a few were which is not enough. Sometimes doctors are not the sharpest knives in the drawer!

  16. I have not yet tried Schar's crusts because I have tried the insipid bread and was horrified at how awful it was. I do like the breadsticks, though. What are the crusts like? Are they crispy like Udi's or kind of soft like Kinnikinnick?

  19. I have heard the standard CYA statement many times as well. Since I do not react to gluten I must be extra careful and not take any chances that I can knowingly prevent. Perhaps if I got ill from gluten it would be different so I would at least be able to gauge it!
  20. As I recall vividly how wonderful gluten bread tastes I still am having a difficult time with gluten-free bread. I almost always make my own; if not, I buy Udi's but they are $7.49 for one loaf. I made a huge beautiful bread yesterday that rose nice and tall with a good chewy crust. I do not known a bread maker so cannot help you on that front I am afraid...

  22. You've really been through a lot lately so take the time to heal, mentally and physically. Remember, too, that only 39% of all biopsies are done correctly and there are lots of false negatives. Do you know perchance how many biopsies were taken? Apparently at least 8-11 are needed for accuracy. Regardless, you know yourself far better than anyone...

  24. Yes, I would agree. After reading what I typed this morning I thought to myself, is there even any such thing as being too careful when it comes to gluten-free? A big resounding NO!!
