  1. Smaller spaces certainly do change the arrangement of things in the kitchen. A KA mixer will NEVER fit in our Croatia house but I am still buying one somewhere in Europe because we have a huge and lovely outdoor wood burning oven that is simply crying out for various flatbreads and pizza. Unfortunately because of the different configuration of electrical...
  2. Spackle! That is EXACTLY what the dough is like! I do have one recipe that you can actually knead but cannot at the moment find it but I must as it is my favourite thus far. Good advice re KA mixers. Because I use mine nearly daily (for pasta and other savoury preparations, too) I found it necessary to go high end. But I thankfully got it from eBay...
  3. Hi! Unfortunately nearly all gluten-free bread dough is unkneadable by hand because the texture is soooo different. It is more like really stiff cake batter - you actually must spread it into a pan and wet your fingers to flatten the top. It has really taken the fun out of breadmaking in my opinion. I used to love the action of rolling it, proofing it...
  4. Sorry to be confusing! I felt it was dangerous to go off the gluten-free diet just because of what can go on inside a gluten intolerant or celiac person. I have recently read on here somewhere that a person went back on gluten for a time but had to be taking to the ER because of severe pain or illness resulting from the gluten. But then I put myself at...
  5. Plus for an endoscopy you need to be eating the equivalent of 4 pieces of bread each day for 3 months. I had both scopes done at the same time but here in Canada we are covered for that, thankfully.
  6. As we have a lobe of gorgeous duck foie gras we are having: Pate de Foie Gras with Cucumber Gelee (takes hours so I'd better get moving!) Black Truffled Pureed Potatoes Micro Greens (from the garden) including tiny beet leaves, radicchio, sorrel, arugula, radish leaves, mustard, frisee with Citrus Honey Thyme Vinaigrette Preserved Lemon Granita (as...
  7. That sounds sort of dangerous! But at the same time I can sort of relate. When I went on my gluten challenge for three months I, too, felt better eating gluten than not. I have more diarrhea now (when I do not have enough fibre) than then (never). I have been off gluten now out of necessity (positive biopsies) for nearly five months. Not feeling any...
  8. Fran, you are amazing to go through all this and have the presence of mind to inform us on what is happening. I'm SO glad the prepping was better than you expected. We've been praying for that! Glad that cancer is not in the ducts. You are right - this IS truly in God's hands, thankfully - the best hands you can get! But I also believe you need...
  9. You're right - no recipe required! I just dip the chicken into buttermilk then panko (or my own spicy breadcrumbs I make from gluten-free bread heels) that has been seasoned with lots of herbs and spices and Parmesan. Maybe some lemon or lime zest. Usually I make an aoili or honey mustard dip or cool ranch dip (or all three). If I make an adult version...
  10. Recently I had to buy more. We are having relatives stay with us for a few days so one evening I am making a really interesting adult popsicle that includes honeydew and coconut milk amongst other things.
  11. Oh, Coolclimates. After I typed that blurb I felt bad because I did not want to start a pity fest for myself! I am moving on and above that now. Are you beginning to heal and feel better? That kind of pain is probably one of the worst a person can have, especially initially when in the acute stage. So, I feel for you. Take care of you!
  12. You took the words right out of my mouth! gluten-free panko crumbs, crushed gluten-free corn flakes (and other cereals) work well, too. Have never tried the BC potato buds - I don't think we have them here??!
  13. It's cool (get it?) that you posted this as "adult" popsicles are one of the Summer of 2011 food trends! And why not? They are fun, unique, easy to make in advance...such as coconut pineapple, limone, pomegranate, honeydew cream with toasted pistachios, herb-infused lemonade, blackberry honey... I think it is sort of a sentimental thing, too. I'm...
  14. You know me so well! Great idea re dried fruit salads and dipping in chocolate. I haven't dipped in chocolate for a long time. Dried apricots, blueberries, cranberries etc. are wonderful in salads with torn buffalo milk mozzarella or ricotta and something crunchy like toasted macademia nuts or pecans or something peppery like arugula and peppered...
  15. I like to measure with a scale by volume, too. So sorry that your treats did not turn out! On thinking about it again, I do not think that homemade marshmallows would necessarily work in this application BUT they are so worth making for hot chocolate, etc. Were they good to eat on their own?
  16. Can you post the marshmallow recipe you used? This is one of the recipes I like (but it contains corn syrup): Open Original Shared Link
  17. Weird combo of leftovers tonight: Leftover roast loin of pork with guava glaze Roasted potato salad with herbed oil Grilled corn on the cob with maple chipotle butter Roasted Strawberries with Balsamic
  18. Some of my all-time favourite desserts are naturally gluten-free. How about meringues or pavlova? Pavlova looks impressive, SO simple to make and tastes amazing. Same with dacquoise - it is layers of almond and hazelnut meringue chocolate (or other flavour) buttercream. Panna cotta is also lovely. Oh, and granita! So cool and refreshing. Or roasted...
  19. I've had chronic insomnia for years but the past nearly four it has worsened due to severe chronic pain. It takes a couple of hours to fall asleep then I wake up probably 20-30 times a night. It is difficult for me to get into a good position so I must move often. It would be AWESOME if I were to find that this is also related to my celiac. I have...
  20. Thought of just a couple more things I like to make for lunch - omelettes of all kinds and quiche. Strata is delicious, too.
  21. Yes - it is a very thick paste so you will need to add liquid, cornstarch or flour (or arrowroot).
  22. Yum. Sounds like you're in for a treat!
  23. Oh, man. I LOVE that stuff! Haven't made it for ages.
  24. My husband and I travel regularly to our house in Croatia and spend time in neighbouring countries. Though I have not been in Slovakia, Czech Republic or the Ukraine since my celiac diagnosis, I was in Croatia, Italy and Slovenia in May. There are similarities. I took along a lot of snacks from Canada and am glad I did, especially for long flights...
  25. You brush it on raw then broil. I like maple syrup best as it remains ooey gooey and sticky.
