  1. Not a coffee drinker (although I love the aroma of brewing coffee!) so that is the main reason I have not been to a Starbucks.

  4. Exactly. Although I am not a sensitive celiac we have a no gluten allowed house. Then there is absolutely no quesetion of whether this or that is safe. It just is.

  6. That was probably me. Our local health food store does carry them. They come in a pack of four for $6.99 or so I believe. I have used mine many times and really like them. You can also stick some cheese/condiments between two pieces of bread and toast (if your bread is thin enough such as Udi's bread). Each bag is supposed to last at least 50 times...

I apologize to those who have read this information fifty times already but a celiac expert (she is a gastroenterologist) in Canada says that only 39% of biopsies done here are done CORRECTLY so that means that 61% are inaccurate.   10. It is simply stunning. You're right - it does border Hungary as well. As we go 2-3 times per year I think our next May trip will include a week in Hungary first. I truly do hope you are able to visit there, too! I could not begin to explain how wonderful most of Europe is - it defies words.

  12. Croatia is on the Mediterranean. The province where our house is called Istria which is a peninsula shaped like a cluster of grapes right across from Venice (2 1/2 hours by ferry or car). The country is very oddly shaped - probably the weirdest shape in the world. Much of it is very long and skinny - you must go through Slovenia when you drive from Italy...

My chronic pain management doctor put me on magnesium glycinate 900-1800 mg per day (mega dose) three months ago for chronic pain/muscle spasms/fibromyalgia and the difference in my calf spasms is definitely noticeable. I no longer need get up at night to stretch my calves. My chiro also recommended I try magnesium glycinate as well as malic acid.

  17. Three hours' drive from Edmonton but that is where we go for our gluten-free food and specialty food store shopping (i.e. Italian Centre, T&T).
  18. I have two new favourite pizza crust recipes - one for a crispy thin crust; the other a softer base. Both are very simple; the second one requires rest overnight in fridge but also very easy.   19. See? That is wonderful! We went to Croatia/Italy in May without any celiac mishaps. Sure, the smells from the bakeries were insanely good but I did it! Trips can really give you a gigantic sense of accomplishment, can't they?
  20. We are going to Nigeria tonight (well, at least in the kitchen): Nigerian Goat Stew Joloff Rice Dodo (fried plantains) Lemon streusel muffins for dessert (couldn't be further from Nigerian, though!).
  21. Isn't that unbelievable? Hilarious in ways but scary in others. It is not a good sign when you speak with someone at a restaurant who has to ask what gluten is.
  22. I neglected to mention that food is probably the topic I think of more than anything else. Cooking is a HUGE part of my life. I do not think it would be possible to be more passionate about it! If I am not cooking I am reading about it; if neither I am dreaming about what I will be creating that evening. I teach all sorts of cooking/baking classes, test...

I was told I must ingest at least the equivalent of four pieces of bread per day for three months prior to my gastroscopy and colonoscopy (went with the colonoscopy to rule out other things at the same time). Since I did/do not have GI symptoms I actually quite enjoyed eating gluten again. I made myself an exhaustive list of things to eat for my last hurrah...
  24. Aren't the waits insane? I was told I could fly to the U.S. for an earlier appointment but as I had to eat lots of gluten for at least three months anyway I decided to go ahead and wait. (I went on the gluten challenge as gluten gives me absolutely zero GI symptoms and as such I was somewhat in denial - I need proof on paper!)
