  4. Our typical wait lists for specialists vary from 6-18 MONTHS. I had to wait 8 months for an MRI after an injury; 16 months to see an orthopedic surgeon; 18 months to see a chronic pain management physician; 12 months for a neurosurgeon and so on. Pretty grim here in Canada in many ways. Thankfully I only had to wait to see a gastroenterologist 4 months...
  5. Perhaps I could also contribute. I have had complex recipes of my own creation published in national magazines. I have also worked as an editor. I am fanatical about correct spelling, grammar, punctuation and so on. You could call me a geek I suppose!
  6. I also like to freeze things in ice cube trays such as tomato paste, pesto, bouillon, etc. then you just pop out and add to the recipe. Some herbs freeze well (i.e. chop basil, place in ice cube trays and add water). For those of you who cannot have dairy coconut milk freezes just fine, too. The texture can become a little grainy but that disappears...

It is possible to use rice flours for crispy chicken (i.e. cooking at home) but family restaurants like that would almost certainly use wheat flour.   8. The pain you must be going through is unfathomable. My dad died young as well and it was devastating to see my Mom in such agony. Thankfully we had lovely friends to help us survive. Hold on tight to your support - it is really a blessing and relief that you have close compassionate friends. I am so, so sorry. I will make sure to pray for you!
  9. I tend to make my own snacks including fibre-rich dips such as hummus or roasted red pepper and walnut to eat with homemade crackers. I have tons of raw fruit and veg as well as make lots of smoothies (i.e. coconut milk mango, blueberry banana with flax, strawberry kiwi lime, etc.). Sometimes I like to roast raw nuts - favourites include rosemary cashews...

  11. Sounds very similar to my side effects. In fact, when I went off gluten I felt worse than when I was on it (felt good on it). Anyway, I was absolutely famished at all times. For the first time I remember I actually got up to eat in the wee hours of the morning as I could not stand it. I was so strict with gluten-free that I know my new bowel problems...

  15. We like butter a little too much at our house. Last time butter went on sale from $5.99/lb to $3.99/lb we bought 25 lb of the stuff. Thankfully we have two large freezes in addition to our two fridge freezers! A lot for only two of us, I know. We can be gluttons at times...
  16. I am house/dogsitting in the country this weekend so made a big pot of chili and rice and cornbread to take out there so we don't have to use others' utensils, etc. Pretty boring on my side of things as well tonight... Oh. And some minted peas.
  17. Thanks for your suggestions! My pain mostly stems from an accident I had nearly four years ago and has not changed much. Surgeons have all told me that the nature of the injury (discs and so on) is such that it will likely never heal - there are anular tears and such. Not only that but I have degenerative disc disease which will progressively get worse...

  23. If all you are going to use the mixer for is bread I would not bother buying a heavy duty mixer, actually. You may be disappointed. But if you use it for tons of other things (already mentioned) it would be worthwhile. Mine sits proudly on the counter in all its splendor - it is seriously one of my most treasured possessions. But then I use it often!
