I have never been to Vegas but I do travel on long-haul flights, etc. and eating gluten-free can be challenging. If you do not have a small cooler it would be helpful to purchase one. All the canola oil I am aware of (here in Canada) is gluten-free. Right now I have so many oils on hand it's not even funny (all serve different purposes due to smoking point, flavour, etc.). What sort of thing will you be breading? Using an eggwash, buttermilk, sour cream, yogurt, etc. allow better adherence. I use my homemade bread heels for breading... -

Thanks, Shauna. You're right - it can be difficult knowing how to measure the whole gluten thing if you do not obviously react. As I have read about so many people who react far more severely once being gluten-free for several months and longer I am not exactly eager to try to find out! So I am as strict as can be. This was my first scan so I could have had healthy bones all along BUT I choose to believe (hee hee!) that it is due to being gluten-free. It could very well be! Oh, poor guy. It is sad when the words "gluten free" sometimes can be so misleading. I recently saw a product state "Gluten Free" on the front but "wheat" was listed under the ingredients. I know it must be under 20 ppm but I don't care. If I can help it no wheat is going to cross these lips of mine. Maybe we should make some bright orange poison... -

...were perfect today! That means I am absorbing. YAY! To this day I cannot tell whether I have been accidentally glutened (I know I was once in the last six months but didn't feel different at all) so these results show I am at least heading in the right direction! -

To my knowledge I have only been glutened glutenated or contaminated once in these past six months but I do not know (and I do not intend to deliberately find out). I do not think "contaminated" is too harsh - it may be the jolt some folks need! It is like poison to our bodies, after all. Probably a bit better than walking around wearing a poison or... -

Oh, you poor thing! Sometimes people sort of get it but truly do not fully grasp all the implications. It seems they think of the food itself more than cross contamination at times. Hopefully this glutening blows over very quickly. -
Me, neither. I would never try samples from anywhere (unless it was a gluten-free facility and the employees themselves were gluten-free). There are just too many variables for me.

You may already do this but if you rub butter/herbs under the chicken skin prior to roasting it flavours the meat nicely! Can I also suggest cutting a lemon or two and roasting cut side down when you roast the chicken? You can then squeeze roasted lemon juice over the meat which makes it flavourful and succulent. We prefer other cuts of chicken to breasts because they tend to dry out faster and have less flavour. BUT because they are so neutral you can do a lot to them! I would recommend pounding them thin so they cook quickly and evenly and deglaze with vermouth and add roasted grapes. Or do a parmigiana. Chicken breasts are also fine in stir frys and good poached... -

Thankfully it is simple to make cakes, brownies, cookies and pastry gluten-free - it is the yeast products that are tricky to replicate. In addition to what others have recommended I love adding some coconut flour in such recipes for nice flavour. You could also use a bit of sorghum. -

I so agree. Risotto sounds difficult to some but it is incredibly simple to make! We have risotto often. One of my favorites is roasted butternut squash with crispy sage and mascarpone. Have you tried chocolate risotto? -
