  1. That is so awesome. What a feeling it is to feel safe and in control. I feel that way in Croatia as well. They really know the Slow Food Movement - some places we ate at did the ZERO Mile diet, not just 100 miles! Amazing to have fresh lobster, octopus, sea urchin, fresh fish just caught a few feet from the restaurant an hour before. At one gelateria...
  2. It's a hot one today so we are grilling again... Korean Flank Steak, marinated and grilled, drizzled with a Korean vinaigrette Zucchini "carpaccio" with goat cheese, pine nuts, fresh mint and honey orange vinaigrette Baby Garden Potatoes with Fresh Herbs and Garlic Strawberry Fool
  3. So true! I've been to Italy about 11 or 12 times (still not enough - will be there again October) and have only been there gluten-free once. But it was far easier there than here! It is mandatory there to get tested for celiac disease by the age of 5 so they are very knowledgable. Cannot wait to move to Europe for soooooo many reasons. I LOVE EUROPE...
  4. There are others on this board who are in the same boat as me. Actually, according to many studies and celiac specialists about half of those diagnosed with celiac disease have no gut symptoms! My villi were flattened in all the biopsies. My doctors believe I likely have had it for many years according to the extent of the damage. My bloodwork was positive...
  5. I, too, am a Christian and being in constant pain (fibromyalgia, herniated discs, etc.) for the past few years has made me rely on myself less and on God for everything. I have grown stronger spiritually and have learned so much about myself and God's character which can happen when you go through difficulties. This pain truly has caused me to persevere...
  6. Ensure it is not safflower you are getting - it looks similar to saffron but is a very poor imitation (i.e. it would definitely turn a person off if s/he thought it was saffron). The good saffron from Iran and Spain is very expensive (about $40-$50 for about 1 tbsp) but as mentioned the grocery store stuff is cheaper (but sufficient and sort of similar to...
  7. Sorry to say this but true brownies do not contain milk! The liquid comes from eggs and melted butter (or other shortening). Are you interested in brownie recipes anyway or would you like chocolate cake recipes that use coconut milk? The following are amongst two of my favourite gluten-free brownie recipes: Open Original Shared Link Open Original...
  8. Nearly all weddings out here in the rural areas are catered by the farm and/or church women of that community which usually means perogies, cabbage rolls, buns, chicken and gravy, etc. Sadly I have not heard of any that have any clue about celiac disease. City weddings here would likely be a different story as caterers have guidelines. Not to stereotype...
  9. I was gluten free for five months proir to my three month gluten challenge but I do not become obviously ill eating gluten so it was simple (and enjoyable!) for me. I ate gluten for 14 weeks and the biopsies were unfortunately positive. The amount of time gluten is ingested makes a HUGE difference on the tests. Several days/weeks after being gluten free...
  10. When I had my gluten challenge admittedly I enjoyed it thoroughly because I had no obvious glutening symtoms. So, I actually drew up a list of what to have for the last time and it included about 90 things! Some were: - Steak and Ale Pie (with puff pastry crust) - Chicken and Dumplings - Chicken and Leek Pie - phyllo pastry - croissant - doughnut...
  11. Talk about disturbing and incredibly frustrating. I really feel for you and empathize with your plight. I hope your precious little girl gets well very soon. Not sure what to do about that mortifying situation, though. I can only try to imagine how sickened you must feel.
  12. Admittedly it was awesome. As a perfectionist, I am very critical of my own cooking and am often not quite satisfied. However, this was pretty darned good. So, who hires the lawyer - you or I??
  13. Had to fast for bloodwork so had a late breakfast. But it was worth the wait - Eggs Benedict! I have not had that for awhile. I used gorgeous fresh farm eggs, local ham, a gluten-free bagel and made delicious hollandaise.
  14. Yum! Those pancakes sound good.
  15. If you are so inclined they are simple to make (with a pizzelle maker, of course)... Open Original Shared Link
  16. We are going to Mexico tonight (well, kinda)... Chile Rellenos (stuffed with a superb local cheese) Orange and Cumin Glazed Baby Carrots Green Chile and Onion Rajas Watermelon Basil Granita Tomorrow we are going to Korea!
  17. Thanks! I'm pleased because I was expecting the scan to show some loss and it was perfect! I am nearing middle age and my dietitian said I MUST have a bone density scan done (she is knowledgable about celiac disease and is a huge advocate here in our community) so when I saw my doctor this week I simply requested one. He said, "That is a good idea." That...
  18. Your great attitude will really take you far. That is seriously much of the battle. I know what you mean about rude people and those who do not get it at all. Many people ask, "Can't you have just a little?" Sure - I'll have a little arsenic (some people here equate it with rat poison and other goodies). What helped me was to think ahead to only...
  19. Have you considered rubs for chicken instead of breading? They are super simple and there are literally thousands of combinations and add tons of flavour. (Oh, I forgot to add in my previous response that Parmesan added to breading is very good.) Anyway, you can do either wet or dry rubs. An example of a wet rub would be chopped rosemary and thyme,...
  20. I tend to be an adventurous and experimental cook! Some may think it I am OTT but I LOVE it! Anyway, do you have a spice grinder or food processor? My mortar and pestle does not work to grind the lentils as they are too hard. I grind in my spice grinder - not to the point where it is powdery but still maintains some texture. Red lentils do tend...
  21. Oh, I'm sorry to hear of your news! It is always hard to hear news like that, especially in the beginning. My passions include cooking and baking (I also teach culinary classes) so I felt like you to begin with. I was crushed and devastated and was focusing on what I could not have. I was diagnosed in February and it took about two months to really come...
  22. From scratch as always - Mexican Street Tacos with Chimichurri and Potato Salad.
  23. I don't buy slurpees but love to make granitas and fruit ices which are so refreshing and far healthier because you use actual fruit and none of that extra stuff.
  24. Unfortunately as this was my first bone scan I did not have a baseline established but I am SO curious about whether my going gluten-free helped or not. I like to think it did (mainly because I did not have obvious glutening symptoms when I was on my three-month gluten challenge so I am looking for some positive changes!). I am not lactose intolerant (although...
  25. Great news! So it sounds as though there will be a fifth date!
