ARCHIVED Can Of Tomato Soup
love2travel replied to aeraen's topic in Gluten-Free Recipes & Cooking Tips
Please, please do not take any offense but I've always hated Campbell's Soups; actually, all purchased soups. But then I LOVE to cook and create recipes. One of my most favourite ways to make tomato soup (and other veg) is to oven roast the veg first - excellent for roast potato soup, roast pepper, and so on. The veg caramelize, adding tons... -
ARCHIVED Feeling Worse After Being gluten-free?
love2travel replied to taffers's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
We unfortunately have no Trader Joe's, Whole Foods or anything even remotely like them in rural Alberta, Canada. So, I have not been snacking much but have been doing a lot of experimental gluten-free baking. Man, this afternoon I have had the worst craving for something sugary and I don't generally like sweet stuff, much preferring savoury... -
ARCHIVED Honeymoon Suggestions?
love2travel replied to Kate79's topic in Traveling with Celiac Disease
Congratulations on your upcoming marriage! Although when one thinks of Italy (i.e. bread, pasta, pizza) it is one of the better-informed countries in Europe when it comes to celiac disease and so on. I've been there often but only once while gluten-free. It is so hard to tell whether I got glutened or not as I am a silent celiac but I took along... -
Having been diagnosed two weeks ago with celiac disease I jumped right into making all my baked goods from scratch. I teach cooking classes (cooking is my obsession) which is even greater incentive to make the best gluten-free bread, pizza dough, doughnuts, croissants, English muffins, bagels, pasta, tortilla shells, pastry and so on rather than rely on...

ARCHIVED Boston Pizza's New Gluten Free Menu Items
love2travel replied to Kemmanuel's topic in Gluten-Free Restaurants
Had the gluten-free pizza at BP this week and for what it is, was quite impressed. Crust not so great BUT together with yummy toppings was quite good. As mentioned, the gluten-free toppings are clearly marked and the staff seemed to really be well-versed. I would return. -
ARCHIVED Feeling Worse After Being gluten-free?
love2travel replied to taffers's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
I've only been gluten-free for two weeks since my official diagnosis by biopsies. I had been gluten-free for five months prior to my gluten challenge and was a little ill off gluten but not bad - just nauseous. In fact, I definitely felt better ON gluten than off. No symptoms that I was aware of but of course that can change in the future. The past... -
Definitely the convenience of being able to go anywhere on the spur of the moment without worrying about CC and so on. The most difficult is traveling to other countries where language is an issue (even with restaurant cards). As far as food goes, authentic Italian wood-fired pizza. And great fresh pasta. Have been making fresh gluten-free pasta but...

ARCHIVED What Are Your "glutened" Symptoms?
love2travel replied to LauraZ's topic in Coping with Celiac Disease
Symptoms? None that my husband or I have noticed. However, I would have no clue if I were accidentally glutened (i.e. CC at a restaurant). -
ARCHIVED Diagnosed After Gluten Challenge?
love2travel replied to salexander421's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
After finding my sister was gluten intolerant I requested the bloodwork. My doctor and I were both shocked to find that it came back positive. So, I went off gluten immediately (for 5 months) then was told to go back on for my gluten challenge. I was on gluten for 3 months and LOVED IT! I had not experienced any pain, gas, bloating, GI issues, anemia... -
ARCHIVED Biopsy Or Not?
love2travel replied to JonnyD's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
This is exactly my story. My bloodwork revealed it was highly likely but I wanted to be certain as I did not feel ill or anything at all - loads of energy, not anemic and so on. But the biopsies did definitively show celiac disease. Whilst it was a huge shock two weeks ago I am well into my gluten-free lifestyle now. I am very glad I had the biopsies... -
I was diagnosed nearly two weeks ago and was stunned at the diagnosis. Anyway, I went through my pantry and took some stuff to the Food Bank. Then I came home, stood in front of the pantry, and began to panic. It was quite pathetic. I had been off gluten for five months before my gluten challenge and I was used to it then but to be told definitively is...

ARCHIVED Good Deal On Udi's Bread
love2travel replied to Roda's topic in Gluten-Free Foods, Products, Shopping & Medications
Wow - I am jealous! Ours is $8.99 per loaf. That is one of the reasons I make my own! -
ARCHIVED Do Most People Challenge The gluten-free Diet?
love2travel replied to zus888's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
Although as I mentioned above I have no symptoms I will never, ever cheat. Ever. Even though I like what I see out and about. I am absolutely adamant on that point. -
ARCHIVED New Here! Any Point In The Scope
love2travel replied to Jungle's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
No apologies needed! I know what you mean - my Mom exhibits nealry every single symptom in the various lists I have seen but does not want to know if she has celiac disease. She is a terrible cook (sorry, Mom!) and cross contamination issues would be very challenging for her. It is difficult being informed about a disease or disorder, living with it, recognizing... -
ARCHIVED A Cook Going Shopping For A New Book
love2travel replied to Emma-Lee's topic in Related Issues & Disorders
When I was first told I likely had celiac disease I went out and purchased several gluten-free books without really planning ahead. However, I was very disappointed unless there was a huge baking/pasta/pizza dough/flatbread, etc. section. So many mainstream cookbooks contain tons of intrinsically gluten-free recipes, anyway, that are so easy to adjust ... -
ARCHIVED Do Most People Challenge The gluten-free Diet?
love2travel replied to zus888's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
I can totally relate. I fear it, too, especially when eating out. It is one reason I avoid eating out much (thankfully I LOVE cooking!) because I just do not know. Because I generally feel so well it almost seems silly to avoid gluten in one tiny corner of my brain but of course I imagine my scope pictures the surgeon showed to me with all the flat villi... -
ARCHIVED New Here! Any Point In The Scope
love2travel replied to Jungle's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
I personally highly recommend the scope to ensure there are no other problems going on. In fact, my doctor wanted me to have both the gastroscopy and colonoscopy. I am glad I had both. They showed nothing else was wrong. But my story is different than many. Although my bloodwork highly indicated Celiac, I had a hard time believing it as I felt so good... -
ARCHIVED Do Most People Challenge The gluten-free Diet?
love2travel replied to zus888's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
I confess to being thrilled with the challenge! I have had no symptoms that I have noticed (which may change, of course, as I am off gluten longer) so I was pleased to eat tons of gluten for three months although I knew at the same time that internal damage was being done, whether I could feel it or not. I had lots of gluten and did not feel any worse... -
ARCHIVED Kinnikinnick English Muffins
love2travel replied to Diane-in-FL's topic in Gluten-Free Foods, Products, Shopping & Medications
Yes - we have been to Planet Organic but I found prices there to be higher than at Ed's gluten-free. However, PO has a lot of yummy-looking snack things. Darn it - we missed the pies you mention! I am trying to stay away from processed gluten-free snacks to prevent weight gain and am trying to make nearly everything myself. So, I am experimenting away... -
ARCHIVED Kinnikinnick English Muffins
love2travel replied to Diane-in-FL's topic in Gluten-Free Foods, Products, Shopping & Medications
Yes - we have been to Planet Organic but I found prices there to be higher than at Ed's gluten-free. However, PO has a lot of yummy-looking snack things. And produce. I am trying to stay away from gluten-free snacks to prevent weight gain and am trying to make nearly everything myself. So, I am experimenting away! We love the Strathcona Market... -
What an intriguing bunch! My occupations have changed several times and now I do what I love. So, I teach cooking classes (that has now taken a slightly different direction as I now have celiac disease - am still in shock about that) and cater to small groups. My passions are cooking and travel. Oh, and books. I am also a volunteer at a shelter...

ARCHIVED What Would You Like To See For Products?
love2travel replied to Diane-in-FL's topic in Gluten-Free Foods, Products, Shopping & Medications
Man, if only Lea and Perrins Worcestershire was gluten-free in Canada! We have to get family to bring it back from the U.S. for us. WS is difficult to replicate. Same with some awesome soy sauce, kecap manis, ponzu, and so on. A yummy filling breakfast cereal would be nice, too. We do not get Chex in Canada, for example. I also hear that Betty Crocker... -
ARCHIVED Kinnikinnick English Muffins
love2travel replied to Diane-in-FL's topic in Gluten-Free Foods, Products, Shopping & Medications
Being a recently-diagnosed Celiac (last week!) my husband and I immediately drove three hours to Edmonton to do some shopping. I was off gluten 5 months on my challenge so tried some pretty sordid products. When I tried the Kinnikinnick English muffins I despaired and cried. Then I tried Udi's last week and was awakened to new hope. It is amazing how desperate... -
ARCHIVED Rudi's gluten-free Bread Costco
love2travel replied to LDJofDenver's topic in Gluten-Free Foods, Products, Shopping & Medications
Man, I know how you feel. I'm in Alberta and am seeing the same prices but we have no bakery in town - the nearest gluten-free bread is 3 hours' drive to Edmonton. So, I make my own bread (not in a maker) and am having good success. Whilst I like Udi bread ($8.99) my homemade is better. I'm still experimenting, though. -
ARCHIVED How Do Some Celiacs Put On Weight?
love2travel replied to adm07's topic in Related Issues & Disorders
I've been about 30 lb overweight for five years - lots of cooking and eating (and less exercise)! The only times I have less of an appetite are when I am ill. Was just diagnosed with celiac disease last week and have been gluten-free since, of course. The whole celiac disease thing was a shock to both my doctor and I since I have never been anemic nor...
