I'm thinking there aren't too many kids out there, save for the siblings who were tested once their brother/sister was diagnosed, who were diagnosed with celiac disease but were "silent celiacs." Hi Mizzo, It could have been my misunderstanding; it was a week post-diagnosis when I took the class and my head was spinning from all of the info. She may have said to read Soy sauce labels carefully and I heard otherwise. I do think the class was extremely helpful. Didn't realize you are in the Boston area too. -

Hi Pink Lady I learned that my 6 yr old has celiac just 2 mos. ago. I wish I knew the statistics back then, after her bloodwork returned positive. (She had no symptoms, long story, the blood test was accidentally ordered). The other night I had family coming for dinner and was running behind. I needed a dessert that my gluten-free daughter could eat, so I made the Betty Crocker choc. chip mix, added in some peanut butter chips, greased an 8x8 pan and poured the mix in as an experiment to make cookie bars. Until you have some time under your belt with gluten free baking (requires some trial and error becz of the flours involved) I would recommend the Betty Crocker gluten free cake mixes, comes in both yellow and chocolate. Stephanie, I think they're talking about when ordering in a restaurant or explaining to a stranger in a similar circumstance. And you were right! They told me at the market tonight that the slicers are cleaned every night. If I call my order in at night, they'll prepare ours first thing in the morning before any other orders are done.
