I've gotten sick from a relative's cutting board, too. It is important to have a segregated house if you don't erect a no-gluten allowed fence around the house.

ARCHIVED Could I Be
Kay DH replied to lmnap's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
Keep in mind that a negative result can still mean a person has gluten sensitivity, sub-clinical celiac, or just wasn't eating enough gluten to ping the antibodies and get a positive blood test. If the test is negative, you might try the gluten-free diet for a while to see if it makes a difference in your GI and other symptoms. My GI dismissed my having... -
Welcome to gluten free. Lara Bars are great to have with you, as are nuts for snacking. Cheese is great if you can handle the dairy. Lot of fruits and vegetables. There really isn't a big difference in diet between gluten-free and gluten-full, except most processed foods are off limits. People with celiac are sometimes low in vitamin D and water-soluble...

ARCHIVED New And Overwhelmed
Kay DH replied to mommyto2cuties's topic in Parents, Friends and Loved Ones of Celiacs
While it doesn't seem so now, your life is changing for the better. The diets can be daunting. Do you have a Vitamin Cottage or similar grocery in your area that has a nutritionist for advice? Your doctor can refer you to a nutritionist, as well. Since you are on a tight budget, 2nd-hand stores frequently have cookbooks for special dietary requirements... -
ARCHIVED Recent Diagnosis - Dh & Celiac
Kay DH replied to jammom's topic in Dermatitis Herpetiformis
It took about 6 months for my rashes to go away after going completely gluten-free, and can take 1-2 years for some people. If I get glutened then the areas of the rashes tend to be itchy for a few days, but no bumps. I had to go completely gluten-free because even minor cc caused me problems. I'm more sensitive to gluten now than before I went gluten... -
ARCHIVED Good Gluten Free Cookbooks?
Kay DH replied to Rowena's topic in Gluten-Free Recipes & Cooking Tips
I like the Easy Gluten-Free Baking cookbook by Elizabeth Barbone. The chocolate cakes are great, and the bread recipes work well with my zojirushi breadmaker. It has a good mix of cookies, pizza, breads, cakes, waffles, granola, and an explanation of flours and such in the front. I use it more than my other gluten-free cookbooks, and have given a few away... -
ARCHIVED Could I Be?
Kay DH replied to absentee thoughtlord's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
There are so many symptoms and potential symptoms of celiac and gluten sensitivity. It can hit anything, and not everyone has GI symptoms or damage. Even with negative blood and biopsy results, the best test is to see how you are when gluten-free. My symptoms started a year ago, a couple of weeks after getting the flu. My symptoms are fairly typical for... -
ARCHIVED How Strict Does A Gluten Free Diet Need To Be?
Kay DH replied to Courtney101's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
My celiac panel blood tests were negative in 2008 (minor GI problems) and this January. I had the endoscopy and 1 biopsy in May, and it was negative. The tests were flawed for various reasons, but I was still left with not knowing what I have. I do have the HLA-DQ8 gene, like about 12% of the population. It would be good for you to go completely gluten... -
ARCHIVED Genetic Testing?
Kay DH replied to Carin3's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
Kimball Labs ( Open Original Shared Link )does genetic testing for HLA-DQ2 and HLA-DQ8 celiac "genes", as well as other genetic testing. I have the HLA-DQ8 marker, which about 12& of the population has. Around 30% of the population has HLA-DQ2, and almost 100% of people with celiac have either or both genetic markers. My GI and other symptoms started... -
ARCHIVED Family Thinks I Am Nuts..=)
Kay DH replied to norahsmommy's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
Would it make a difference with your MIL if you had a note from the doctor saying to keep you daughter off gluten until the next test? If so, then you would still need to have gluten-free foods for your daughter. CC is such a problems with gluten intolerance. I even have had problems with labeled gluten-free foods that were "processed in a plant that also... -
ARCHIVED Have Been Told I Dont Have Coeliac
Kay DH replied to smile's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
It would be good for you to keep a food diary, both to track any reactions that you might have and to see if you are getting enough calories. Your doctor should have run a poop test to determine if there are any pathogens in your GI tract that are influencing absorption, and to check malabsorption. Make sure you are not getting cc'd from all the places... -
ARCHIVED Thanksgiving Desserts
Kay DH replied to missy'smom's topic in Gluten-Free Recipes & Cooking Tips
I'm making cherry cobbler. I'm making almost everything for Thanksgiving. I've been saving my gluten-free bread croutons for stuffing. My sister-in-law is bringing Stovetop Stuffing" in case people don't like my gluten-free stuffing (she's a bit stuffy). -
ARCHIVED Biopsy Negative, Now What?
Kay DH replied to enolah's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
My biopsy and celiac panel blood tests were also negative. My GI/mood/brain fog/joint/muscle symptoms started a year ago, after getting the flu. Only positive test I had was for the HLA-DQ8 genetic marker. So, I had to go gluten-free because my symptoms on eating even trace amounts of the nasty compound molecule are quite marked. Other people are not... -
You should probably make an appointment with a dermatologist that is very familiar with dermatitis herpetiformis and other rashes that can result from gluten. Wheat allergies can also have some unusual symptoms, so good to get tested for allergies. Check the web for allergy symptoms. My reaction to gluten was skin rashes on my calves, back, and arms that...

gluten-free dough is usually too thin to knead; it is more soft mounds than cake-batter consistency for breads (at least at 1.6 km elevation). However, it is good to mix the dough completely so it is homogeneous. Just an observation, but the xanthan gum seems more elastic if the dough is mixed well. If using a breadmaker, I usually have a full "knead" and...

ARCHIVED Effect Of Colds On Gi Tract And D?
Kay DH replied to Kay DH's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
No, I'm not taking any medicines. The only thing in common with the two D's is coconut shrimp. I made it from "Let's Go...Organic" coconut flakes that the company website indicates is gluten-free. I'm usually a cold virus magnet, and going 10 months without a cold is very unusual. I suspect I only caught this cold because of being glutened by a wheat pita... -
ARCHIVED Effect Of Colds On Gi Tract And D?
Kay DH posted a topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
Can having a cold make symptoms from getting glutened worse? My celiac symptoms started 13 months ago, a week or two after getting the flu. I quit eating bread and pasta almost immediately because of the D and other symptoms, and went completely gluten-free in January. Six days ago I got glutened bad at a restaurant I go to frequently; 3 days later I caught... -
It is a bit of a gamble. How well did they clean the equipment of wheat before they processed the gluten-free grains? The first run after processing wheat probably has more contamination than later runs. I have gotten sick from labeled gluten-free hummus and other grains that were "processed in a plant that...". If you are very sensitive to cc, then you...

ARCHIVED Blood Work Neg But Biopsy Showed Shortened Villi
Kay DH replied to Maryann10's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
Bring your own food. Even if a food seems safe, did they use the same spoon that they used to stir a gluten-full dish? We have been through this transition phase, a grieving, and it gets better after. You may be in detox phase, or you might still be getting cc'd. My tolerance for gluten dropped once I went completely gluten-free. -
ARCHIVED Another Allergy?
Kay DH replied to Hamster101's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
After I went completely gluten-free in January my body became a lot less tolerant of gluten. Before this, cc did not result in obvious symptoms, and now minor cc does. I have to make sure that flours that I use are certified gluten-free. Binned flours commonly have cc with other grains. If a labeled gluten-free food has "processed in a plant that also... -
I was able to get contact the manager at the Lakewood Le Peeps and he was very nice. He wrote down my server, what I had, and what was contaminated (bread). He said he would talk with the server about gluten intolerance, check out what went wrong, and asked me to talk with him next time I am there. So much nicer than managers that blame you for getting...

I actually tried the comments section of their (above) website. I could only enter a bit of the info and then it kicked me into a new comment form, which I started to enter, then it kicked me back. Probably poor web design built by a failed commedian, since my web options are good. One of their corporate officers has celiac, and she has initiated the trial...

I'm feeling a bit betrayed. Even if you have been eating at a restaurant that promotes gluten-free, you can NEVER relax your vigil over that nasty compound molecule. Strange emotions considering it was just a waitperson at a that resulted in the gluten. Some of the restaurants have been going through a gluten-free trial period with dedicated grill, waffle...

My weight is much more stable than when I could eat gluten. Junk food has gone away and I'm much healthier now. Going gluten-free means smoother emotions and more stable digestion, both of which help with weight control. There is a transition phase when people try to keep eating like they were, and that can cause gain and (or) loss. It is rather like...

Another point is that the gluten probably was an immune system irritant for me for decades, but the flu was the trigger. I have a number of friends and family members that would not fit under the celiac umbrella in that they do not have anemia, short stature, thin, etc., but they have significant associated symptoms. I haven't seen much information about...
