  3. I have a breadmaker and make my gluten-free breads. Those that get stale or come out of the oven a bit deflated either become crumbs or croutons and reside in the freezer. If you wanted to try non-cornbread stuffing, then cubing and drying some of the gluten-free breads works well.

  12. Perhaps consider that your being proactive is not just good for you, but is good training for the restaurant staff and maybe could prevent another celiac from getting sick in the future. If it is more difficult to voice your needs, than as another poster indicated, the dining cards work well (at least the staff are more likely to listen to you).
