  1. There are several acceptable blends of flour out there to try - it will be cheaper for you starting out to just buy a blend than go hunt out and purchase all the specialty flours. I am fond of: Gluten Free Mamas Coconut Blend for cookies and desserts. Open Original Shared Link She has an Almond Flour Blend for regular baking that does wonders too. ...
  2. Having been there recently myself I can also add Lazy Joe's Fish and Chips - the first time I have been able to enjoy top notch Fish and Chips without having to make it myself. Roy's Hawaiian Fusion - top notch food and service, took extra care of me, the manager even came out with our sever and visually identified me as the gluten-free customer (so...
  3. Last summer was my first show season Gluten Free, and it is a little bit of a pain but there are things you can do. Bring your own food for heaven sakes don't eat the vendors food, the chances of cross contamination are too high. Even if you get a salad chances are the dressing would NOT be gluten free. I have a Living Quarters Trailer that I stay in so...
  4. Me too! I grew up on sweet thick cake like cornbread - not hard compact crumbly stuff. The recipe I used to use for this i adapted as follows: (9 ounce) corn meal - medium grind 1 box of Betty Crocker gluten free yellow cake mix 1/3 cup milk 4 eggs 1/3 cup butter, melted 1 cup water I constantly tinker with the last 4 ingredients based on what...
  5. Yes - but it can mean any "Gluten Free Flour Mix" if you were to say use "Bobs Red Mill Gluten Free All-Purpose Flour Mix" you will end up with a loaf of bread that has a really strong bean flavor to it as Bob's already has alot of garfava (bean flour - like garbonzo bean flour) in it. I would recommend a gluten free flour mix with NO bean flour, as it departs...
  6. That is an impressive oven/range - it would help us out tremendously and be easy to fit! Thanks for the tip!
  7. If you can tolerate fruit: Young Coconut (Thai Coconuts) make me feel like a million bucks. I will make a smoothie out them or drink them straight. Add a half a mango and a half a banana, all the meat to the coconut (no a reg brown coconut doesn't have the same effect) and all the liquid - blend and enjoy! Also try this one: fresh pineapple combined...
  8. Thank you - that is the first logical reason for getting an official "you have celiac disease" diagnoses. That makes sense and seems like a prudent thing to do. I too have missed alot of work because of "being glutened" and I know they think i am out having fun somewhere because it does happen more frequently than say a "cold". I have been on here for...
  9. Within this coming year I am going to remodeling my kitchen, not only is it "time" but my small confined kitchen is just not cutting it now that we cook EVERY meal at home and sometimes two meals (gluten-free and regular) each time. I believe I will have a chance to replace some of my major appliances. Is there an oven or type of oven/range that is preferable...
  10. All good info - thanks, though I can't afford it right now, I am planning on purchasing a new one with a gluten free setting when i get my tax return for the year.
  11. Gonna second Better Batter's all purpose flour mix. Works nicely. Also going to agree with everyone else on the Bob's Red Mill gluten-free AP Flour. The bean flour serves a purpose but man it's nasty, and my friends and family KEEP buying it for me! Since I was diagnosed they find in the store and buy for me and present it like it's a great hidden treasure...
  12. Seems like coconut flour might be a great substitution in that recipe. Might want to give it a try....heck I might give it a try, sounds yummy....
  13. Have you tried Soy Milk, Almond Milk, or Rice Milk? Most of the bread recipes I use allow for the use of your choice of "milk" - when i come across one that doesn't I have substituted anyways and never noticed anything but a minimal difference.
  14. Something no one has mentioned - along with Imodium, Tylenol and Pepcid AC for accidental glutening, I also pack some enzymes I got from Super Supplements called "Gluten Free" supposedly when taken before a meal they break down the gluten before it reaches your small intestines, it also has enzymes to help break down lactose and something else too, I can...
  15. I have heard some good things about the All Purpose flour from Better Batter - just google it and you will find it.... Mostly rice and potato flour but they seem to have a nice combination going for them my friend makes some great stuff with it...
