ARCHIVED Biopsy Results And Still Confused.
Kimbalou replied to brendab's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
I don't understand her comment that there could still be some damage that cannot be seen with the naked eye. The reason for a biopsy is to look at the specimen under a microscope, because a Dr. can't tell for sure what's going on with the naked eye! Am I making sense? Celiac causes the villi to be almost non-existent in some cases...I'm not sure what food... -
ARCHIVED Why Do We Get More Sensitive To Non-Gluten Foods After Going gluten-free?
Kimbalou replied to GFshay's topic in Coping with Celiac Disease
I have noticed the same thing:( As far as milk goes, try Vanilla Almond Milk! I really like it, it's in the regular milk refrigerated section. I like the Silk brand. I don't miss regular milk at all! I use the Almond milk in cereal, too. It lasts longer and is a lot healthier. I'm new to all of this too, and I'm finding out that my stomach is more sensitive... -
Yesterday I ate a small bag of mixed nuts that had sesame seeds. No wheat listed on package. BUT, the sesame seeds made me have abdominal pain and "D" and bloating/gas all day! Have you had problems with sesame seeds or any other types of seeds? It seems like my stomach is more sensitive than ever now after going gluten-free.

It's still holiday time, and time for work potlucks! I get so upset when people around me can eat whatever they want. Now I'm supposed to sign up for a work potluck. I feel like signing up for "gluten-free oatmeal"!! That would make some heads turn! I'm just having a pity party right now. I know it's healthier to stay away from all the gluten-filled goodies...

Don't want to be too graphic, but I have to ask: how many times do you go #2 in a day even if you are not eating gluten? I keep waking up every morning going at least 3 times in a row even when I am on the diet! I am trying my best, but I'm wondering if it's dairy, too. Maybe those Reeses PB Cups?? I am not drinking regular milk, just Almond milk. I feel...

I just had one and felt tired for only 24 hrs. You should feel more awake soon! You must be sensitive to it!

Kimbalou replied to Kimbalou's topic in Coping with Celiac Disease

ARCHIVED I Want A Big Mac Or Taco Supremes Now!
Kimbalou replied to Kimbalou's topic in Coping with Celiac Disease
Thank you for the ideas everyone. I know I feel better on the diet, so I know it's the right thing to do. Tonight I went to a potluck Christmas party at my kung fu school and it went really well! There was actually a rice dish labeled "gluten free and vegetarian"...needless to say I ate a lot of that since everything else looked like I should stay away from... -
ARCHIVED I Want A Big Mac Or Taco Supremes Now!
Kimbalou replied to Kimbalou's topic in Coping with Celiac Disease
Thanks everyone. I resisted the urge! I found a good gluten-free chocolate chip/Peanut butter cookie recipe...so good. I know fast food is bad for you, I hope I lose some weight on my new diet!! Thanks for the tips! BTW...here is the recipe if anyone wants something quick, sweet and easy!! 1 c peanut butter 1 c brown sugar 1 tsp baking soda 1 egg... -
ARCHIVED I Want A Big Mac Or Taco Supremes Now!
Kimbalou posted a topic in Coping with Celiac Disease
ok, I'm tired of being a celiac already!! Sometimes I just want to eat crappy fast food! Especially when it's a certain time of the month..sorry if TMI!! Also, at work the other day there was red licorice...guess I can't have that either!! Then a co-worker said "Yeah...EVERYTHING has wheat in it!!" That did NOT help my mood! Sometimes I think I've... -
I have been having a lot of joint and muscle pain. I have been taking Kung Fu classes for over 2 years. I have never been a really good athlete, but kung fu has helped me a lot. However, I now wonder if all my joint and muscle pain is related more to having Celiac than just Kung Fu. Yes, the classes are intense, but I really don't think I should be having...

Even though I figured my results would be positive, it's still hard to hear it for sure! But, I won't look at it that way, at least I will try not to! I want to feel better. Also, I'm finding I like gluten-free pastas better than wheat pasta. I had corn pasta tonight and it is really good and light. I also find that I really like almond milk. I am looking...

Thank you for the information.

So, I looked up maltodextrin and it is described as a starch added to food, and in the US it is usually cornstarch, while in Europe it is usually wheat. I bought some instant coffee and wondered about it, and the label says it's Gluten free. Is this what is in Rice Krispies? If they use wheat for the maltodextrin, it is supposed to say so on the label,...

Chinese food is one of my favorites, can anyone tell me if any Chinese food is gluten-free? Guess I glutened myself without knowing it with their fried rice!
-
Wow. I went to Panda Express yesterday and only ate the fried rice. Well, I just looked on their website and in the FAQ section someone asked which foods are gluten-free? They replied "none of our foods are gluten free." Wow, just wow!! I can't accept it...boo hoo. that's just crazy if you ask me! I LOVE Panda Express. Now I wonder if ANY Chinese food is...

ARCHIVED Major Meltdown Yesterday
Kimbalou replied to bonnie blue's topic in Coping with Celiac Disease
I totally understand! I'm trying to be positive, but it is hard. Especially when people have different reactions to it. Have you seen the website "Gluten-free girl and the Chef?" She has a lot of amazing recipes. I just went gluten-free at the end of Nov., so I am new to this. I haven't tried her recipes yet. I think we should try to look at all the things... -
To Jenn: I've already had a positive blood test. I've had the symptoms for a long time too...mostly irritable bowel symptoms, etc. I know I need to be gluten free.

Dr. said it was normal today from what he could see. But I guess we don't know for sure until the biopsy results, right? Only a biopsy can detect the disease, you can't see it with the naked eye, right? I should know this, I'm a nurse...lol...but just wondering if I'm correct. 2-3 weeks to wait, ugh. But pretty sure it's positive.

I bought some crackers from Blue Diamond that are really good. Label said Gluten and Wheat free...but on the back it also said prepared in a facility shared with wheat, eggs, etc. Gluten only to 20ppm. Do you feel safe eating things with this kind of label? They had the Celiac Sprue Association label on it too, so I am assuming it's ok. But, it's so odd how...

ARCHIVED This Is Silly, I'm Staying gluten-free!
Kimbalou replied to Kimbalou's topic in Coping with Celiac Disease
The doctors like to get a definite diagnosis, and the only way is with a biopsy. I've decided to do it in case there is something else going on as well. -
I just wanted to mention how great my husband has been with my diagnosis of Celiac. He said he wants to support me in any way he can, and even try new foods along with me. we are looking forward to cooking at home more and exploring new dishes. He has been great! He listens through all my tears, and I am so happy for that! I hope everyone here has someone...

ARCHIVED This Is Silly, I'm Staying gluten-free!
Kimbalou posted a topic in Coping with Celiac Disease
So, my GI doc told me to "liberlize" my diet and go ahead and eat wheat, gluten, etc. My endoscopy is next Wed. Yesterday I ate what I wanted (a pretzel, scone, starbucks coffe, milk...and paid the price!!) I know for sure that the Celiac diet has helped me this past week, so when I ate what I wanted yesterday, it wasn't worth it! The horrible gas and abdominal... -
ARCHIVED Type Of Endoscopy Sedation...should I Do It?
Kimbalou replied to Kimbalou's topic in Coping with Celiac Disease
I'm considering waiting to see if the diet helps...it has helped some over the last 10 days. Then, if after a few months I still feel bad, maybe I will think about the endoscopy. My blood test was strongly positive for Celiac, so I don't see the need for endoscopy, except to get rid of any nagging doubts about it in the future. Also, I guess it will show...
