ARCHIVED Anyone Feel Like A Full Time Chef?!
alex11602 replied to GFreeMO's topic in Coping with Celiac Disease
Yes, but for me personally it's awesome. I wanted to be a chef, but due to some unexpected things was not able to use my scholarship to culinary school. But with all the time I spend in the kitchen now I am able to still enjoy my passion and teach it to my children too. -
ARCHIVED Daughter Going To Kindergarten. Help1
alex11602 replied to divamomma's topic in Parents, Friends and Loved Ones of Celiacs
My oldest daughter was supposed to start kindergarten in the fall and we had gone to register her and while we were there we spoke to the school nurse about celiac (one of the most ignorant and unresponsive people I have met, she told me that I should just give my daughter a little gluten everyday and she would get over it) and other food issues which are... -
Thank you so much! I guess I will have to keep looking:( We are avoiding gluten, dairy, soy, eggs, fish, bananas, sweet potatoes and she can only tolerate little amounts of corn, so thank you again.

I honestly can't remember if caffeine made me anxious since it's been over a year and a half since I had it last, but I do know that it hurts my stomach really bad. I can get away with maybe one sip of my husband's soda, but any more then that and I'm done.

My daughter has a problem with all soy so she can't handle it in the chocolate, but we did just see that Lindt 90% dark cocoa has no dairy or soy in the ingredients. I loved that one beforehand so we will be trying it soon for the girls and I.

ARCHIVED Easy Peanut Butter Cookies
alex11602 replied to Elfbaby's topic in Gluten-Free Recipes & Cooking Tips
I tried it with the applesauce and read that you use 3 tbs of applesauce for 1 egg. I had made a double batch and while they tasted really good they ended up very runny and more like eating globs off plain peanut butter. -
ARCHIVED How Do You Handle Your Child's Birthday Party?
alex11602 replied to alex11602's topic in Parents, Friends and Loved Ones of Celiacs
Thank you! I'm crafty as far as making a few things, but it doesn't hurt to try. She had asked me for a pinata, but I thought I remembered paper mache being made with flour. Never would have thought to use the glue and water. I guess it's a good thing we are starting to get everything ready early. -
ARCHIVED What Is Your Dream Career?
alex11602 replied to love2travel's topic in Introduce Yourself / Share Stuff
I am right there with you on the FBI profiler and chef. Those used to be my dream careers although right now I am more then happy to stay home with my daughters and keep them healthy and educate them. Actually one of the ways that I teach my almost 5 year old math, science and reading is through cooking and baking. She is showing alot of interest in both... -

ARCHIVED How Do You Handle Your Child's Birthday Party?
alex11602 replied to alex11602's topic in Parents, Friends and Loved Ones of Celiacs
Thank you everyone!!! I decided that I am just going to feed everyone what my daughter wants. She decided on a small menu so far and it includes hot dogs that are cut into octopus, mini pizzas made in a muffin pan, blue jello with fish in a fishbowl, strawberries cut into seashells, cucumber and watermelon cut into starfish, a pepper cut into an octopus with... -
ARCHIVED What's For Breakfast Today?
alex11602 replied to GlutenFreeManna's topic in Gluten-Free Recipes & Cooking Tips
This morning I made breakfast cookies for the girls and I. They tasted a little like oatmeal cookies, but was made with rice chex. My almost 5 year old has gotten very interested in cooking and baking since we cut out a bunch of foods so we got her a kid's cookbook and it was one of the recipes in there, after a bunch of adaptations (I guess we used it... -
ARCHIVED How Do You Handle Your Child's Birthday Party?
alex11602 replied to alex11602's topic in Parents, Friends and Loved Ones of Celiacs
Her party is on August 6th, but I needed to figure out food already because people were already giving me grief about it. It's a very hot button issue right now since there are people who do not believe that my children have a problem with food since the doctor diagnosed based mostly on dietary response. I am hoping that the party will go well, if not I may... -
ARCHIVED Looking For Dairy Substitutes
alex11602 replied to waterlily-'s topic in Gluten-Free Recipes & Cooking Tips
If you use frozen fruit or fresh fruit with ice you don't really need to use yogurt or any type of dairy. They end up still being very tasty. My daughter's favorite is using frozen strawberries, canned peaches and a little bit of orange juice. Good luck finding something that works for you! -
ARCHIVED Products Question
alex11602 replied to modiddly16's topic in Gluten-Free Foods, Products, Shopping & Medications
If I to chose something in a package it would probably be Better Batter flour. There are very few things we eat packaged right now and with all our other restrictions it was really nice to just be able to make a normal loaf of bread. For my daughters I think it would be peanut butter and jelly larabars. -

alex11602 replied to alex11602's topic in Parents, Friends and Loved Ones of Celiacs
Thank you for clarifying. And the dessert part is the easiest...I adapted a recipe for a chocolate cake that I found and even my gluten eating sister loved it, at least til I told her it was gluten free:) -
ARCHIVED How Do You Handle Your Child's Birthday Party?
alex11602 replied to alex11602's topic in Parents, Friends and Loved Ones of Celiacs
Thank you. I'm just trying to keep everyone happy and safe. Like when the youngest has soy she ends up with gritty, coffee ground diapers, I just have to keep keep them safe. I even toyed with cancelling everything but this is a huge deal for the birthday girl. -
ARCHIVED How Do You Handle Your Child's Birthday Party?
alex11602 replied to alex11602's topic in Parents, Friends and Loved Ones of Celiacs
That's a really good point. I guess with that I'm concerned about cross contamination, how would you handle that? As far as outward symptoms it isn't a problem for the birthday girl, but it is for her sister. A few weeks ago my sister didn't wash her hands while feeding my daughter carrots (She was eating pizza.) and 4 hours later the runny diapers started... -

Oh thank you!!! I think I am still in the mindset of "I have to replace this food exactly." and I am trying hard to get out of that. -

Thank you! I definitely got at least one great idea from the thread, my daughter is thrilled that everyone will be able to decorate their own cookie...and maybe I could make them in the shape of sea creatures. -
ARCHIVED How Do You Handle Your Child's Birthday Party?
alex11602 replied to alex11602's topic in Parents, Friends and Loved Ones of Celiacs
Thank you. My daughters and myself were diagnosed only 3 months ago so I haven't really cooked gluten free things for other people and for a tea party of all things. -
ARCHIVED How Do You Handle Your Child's Birthday Party?
alex11602 replied to alex11602's topic in Parents, Friends and Loved Ones of Celiacs
The party will be mostly adult family members with a few children under 5 and the standard thing for our gatherings have been meal food and kind of buffet style. And I am extremely fortunate that my kids will eat almost anything, I can't think of any food that she won't eat. 4 years old and her favorite foods are peas and strawberries so I am very lucky... -

ARCHIVED How Do You Handle Your Child's Birthday Party?
alex11602 posted a topic in Parents, Friends and Loved Ones of Celiacs
My daughter is turning 5 in two months and I am a bit stuck on how to do her party. At our family events there is always food and it's usually the same menu which is mostly gluten, dairy and soy containing. I have been told to just feed everyone else normal food and to let my children eat something else, but I don't think that would be right. So how do you... -

And if you can't have egg...I made them with egg replacer this past weekend. It was a 15 oz jar of natural pb, 1 c white sugar, 1/2 c brown sugar and the egg replacer for 2 eggs. Let's just say between 8 people they were gone overnight
