They would seem to be implying that the villi damage can be seen without microscopic imaging, which I don't quite buy. Probably another example of medical professionals who do not understand celiac disease.

    So I met w/ my doctor, 4 months after going gluten-free. My most recent blood work came back normal. I told him that I still had some loose stools, but that the D was gone as are most of the cramps I used to have. I also told him that on day one of gluten-free, when I drank a tall glass of milk, it went right through me. "Oh, wow, you have lactose intolerance...
  9. One other thing.... once the water is hot enough, I turn off the heat and put a lid on the pan and let it sit there for a good 3+ minutes. Then put it in cups w/ tea bags. The longer you leave the spices in the stronger the flavor. I always make this tea after we have indian food. Which is about 2x a week at my house.
  10. Oooh! I make awesome, easy spiced chai at home.... Put enough water in a pan or teapot on the stove for two cups. Add the following to the water when you first turn on the heat: 1 cinnamon stick About 5 or 6 whole cardamon pods About 5 or 6 whole cloves. Now just make tea as you would, but using this water. You can strain the spices out easily...
  11. I typically eat one shiny granny smith a day, and have since going gluten-free. My blood tests last month were all negative. If I am getting glutened by the apples it is not affecting my blood tests. Yes, I know they could still be getting gluten into me, but I would have to think it has not. But I just may have to start peeling to be safe.
