ARCHIVED Gluten Intolerance Question
UIDancer replied to UIDancer's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
I should know, but unfortunately I have no idea which tests were done. I'll find out when I go back. No one else in my family (that I know of) has Celiac. That being said, is it still possible for me to develop Celiac later in life if I'm Gluten Intolerant now? If it's possible, will remaining gluten-free decrease my chances for developing it? Thanks! -
ARCHIVED Gluten Intolerance Question
UIDancer posted a topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
I was tested for Celiac a few months ago and after my results came back negative, my GI doc said I must be gluten intolerant since my symptoms went away once I went gluten-free. So after being gluten-free for about 3 months, I decided to test the waters to see how badly I react since I have no clue of the severity of my intolerance. Well... I went all out... -
ARCHIVED Eating The Same Thing, Over And Over
UIDancer replied to mandigirl1's topic in Coping with Celiac Disease
I know where you're coming from. For me, going gluten-free has made me lose my sense of control when it comes to eating. When someone tells you you can't have something what do you want? You want that thing the most! So I feel like I've begun eating to gain back that control. It's only at dinner time and it's mostly on healthy things like huge quantities... -
I'm thinking of having a glass of wine this weekend but haven't had any since going gluten-free. What kinds, if any, can we have? I'm a huge dessert wine fan but any wines on the sweeter end would work. Thanks!

ARCHIVED Gaining Massive Amount Of Weight Overnight!
UIDancer replied to PreOptMegs's topic in Related Issues & Disorders
This is wishful thinking, but does anyone have any tips on reducing the bloating? I recently got glutened AND I'm on my period this week, so it's a double whammy. I haven't been able to eat much which is helping but any suggestions are welcome!! -
Just wanted to update anyone who is interested: I had the French Vanilla gas station cappuccino and did NOT have a reaction... take it for what it's worth.

ARCHIVED Help From You With Other Food Intolerances !
UIDancer replied to jenvan's topic in Related Issues & Disorders
I'm interested in being tested for food intolerances so I can have hard "evidence" on what to avoid. Could you tell me more about the process, where to have it done, and how much it costs? Thanks! Devon -
Does anyone know of a Celiac support group in Chicago? I don't have a car so the group must meet somewhere in the city. Thanks! Devon

Something funny my friend, DJ, said to me the other day that I thought you would all appreciate: "Friends don't let friends eat gluten." hahahaha

I bought a 5lb bag of brown rice at an Asian grocery store. I don't mind eating it as regular rice, but I'd really like to try to make flour, as it would be more useful to me that way. Could someone educate me on how to make flour from rice? Thanks!!

ARCHIVED Gluten Intolerance
UIDancer posted a topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
I had the necessary Celiac tests done, they came back negative, so my GI doc said I am just gluten intolerant. He came to this determination after seeing the results coupled with the fact that my condition improved/disappeared after going gluten-free. He lead me to believe that gluten intolerance is basically an allergy: if I ingest some, I will be sick for... -
Chicago, IL here I'll get around to that signature some day!

ARCHIVED Gf Aspartame/splenda-free Diet Soda
UIDancer posted a topic in Gluten-Free Foods, Products, Shopping & Medications
Wow, what a title! Does anyone know of a gluten-free diet soda that does not contain aspartame or Splenda? I suppose I'm okay with trying Xylitol but I'm trying to go with all natural and no or very low-calorie options. I'm asking for a lot, I know. Thanks! Devon -

ARCHIVED Cereal Anyone?

I just discovered Kashi Cranberry Sunshine. I don't believe it says gluten-free on the box, but the gluten-free food list says it's gluten-free. It's REALLY good!! -
I look at it as a way to try all of these new foods that I never would've tried before. Like Soy Crisps. Damn, those things are good, they come in a bunch of different flavors, and they're low in calories! A couple of suggestions... get in good with some of your favorite local restaurants. Maybe you could get them to make you a greasy sub on your favorite...

Does anyone know if the cappuccinos you get from the machines at the gas station are gluten-free? I know 2 coffee brands at gas stations are Red Beret Roasters and Millstone by Folgers but I don't know if those companies also do the cappuccino. I love those things but have been too afraid to have one since going gluten-free. Thanks! Devon

ARCHIVED Splenda

I react the same way to Splenda. Can you buy Xylitol directly at the supermarket? I'd like to see how I react to this. Thanks, Devon -
ARCHIVED Splenda
UIDancer replied to VydorScope's topic in Gluten-Free Foods, Products, Shopping & Medications
I'm confused. I thought Splenda had aspartame in it. What is the key artificial ingredient in Splenda? -
ARCHIVED Splenda
UIDancer replied to VydorScope's topic in Gluten-Free Foods, Products, Shopping & Medications
Anything with aspartame or any of its derivatives have a negative effect on me. I'll go without and be fine, then I'll think "hm... must have been something else." So I start drinking diet this and that again and start to get sick. I get headaches and tummy aches even after only having one or two diet drinks a day. This is really terrible stuff and even though... -
Reading all these posts on what people overindulge on is definitely not helping my situation. Does anyone have any solutions to keep their mind off of food or help them to stop eating once the rampage has begun? I know exactly what the "food hangover" feels like. It lasts for a couple days with me and makes me feel so terrible about myself. I've begun...

ARCHIVED Soda That Is Not Gf?
UIDancer replied to mytummyhurts's topic in Gluten-Free Foods, Products, Shopping & Medications
I believe we decided Diet Cherry Coke is NOT gluten-free because it was not on the verified list sent to someone by Coca-Cola. It may be gluten-free but if they don't come right out and say it is, I don't trust it. Devon -
I'm the same way. Not only that, but my meals have become so planned in case I go somewhere w/o gluten-free food or I get hungry while commuting home, etc, that the eating process has become mechanical. It's hard for me to listen to my stomach to know when to eat.

I just bought Bette's gluten-free bread cookbook and am just starting out with my new breadmaker. I would like to know if it is possible to substitute one of her base flour mixes in a non-gluten-free recipe (there are some recipes in the Betty Crocker bread machine cookbook that I used to eat and love!). I'm guessing I can't do cup for cup with non-gluten...
