ARCHIVED Ugh! People Just. Don't. Get. It.
BeFree replied to zus888's topic in Coping with Celiac Disease
This is what I'm so afraid of--people not understanding. I'll be starting a new job soon and I'll have to tell all of my new co-workers that I can't eat gluten or dairy, can't really join them going out for lunch, can't join them in eating the birthday cake they bring to the office, etc. I don't want to start out my new job looking stand-offish, or like... -
ARCHIVED Anyone Recover From Chronic Insomnia After Going gluten-free?
BeFree replied to carrieanna76's topic in Related Issues & Disorders
Before going gluten-free I never knew what to expect at night. I made excuses to stay up at night because I didn't want to go to bed. I was plagued with restless sleep, nightmares, insomnia, night-time anxiety attacks, sleep walking and talking, night-time leg cramps, and I never slept through the night. I think this was all related to the gluten causing... -

ARCHIVED Question About Lactose Intolerance
BeFree replied to BeFree's topic in Food Intolerance & Leaky Gut
"Wow...it's been 3 months since I've been diagnosed and this is the first time someone explained WHY celiacs can't have lactose..my Dr. just said DON'T DO IT...she never said why!!!" Oh that's too bad--I think it's so important to your health to have that piece of information where you understand what's going in inside your body. I'm glad you could find... -

"I LOVE that cereal, also!" I was never even a fan of hot cereal until I tried this one! Bob's Red Mill products are awesome. "The gluten-free Bisquick is expensive but the biscuits it makes are fluffy and soooooo good!" Thanks, that's good to know. Is there a way to make you own gluten-free bisquick (cheaper?), or is it better to just buy it... -

The What's For Dinner Tonight Chat
BeFree replied to jess-gf's topic in Gluten-Free Recipes & Cooking Tips
Tonight's menu: Pork chops with apples and honey glaze, baked potato with broccoli (Yep, more potatoes!) "She didn't realize that an oven previously used to bake gluten pies etc. was a big no no for us" What? My oven will CC me???? I sure hope not, it's baking my pork chops right now. Do you mean she used a TOASTER oven, with a crumby tray... -

ARCHIVED Is Glutino Bread Good?
BeFree replied to BeFree's topic in Gluten-Free Foods, Products, Shopping & Medications
Oh thank you so much for your input everyone. I'll stick with the bagels then if I buy Glutino. The quality of the bread is important to me, plain old bread is what I like/miss the most. I can live without the cakes/cookies/desserts & sweet things, what I love is toast, sandwiches etc, so the bread really has to taste good. I really love the Udi's... -

ARCHIVED In Pain And Feeling Depressed
BeFree replied to hazesdaze's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
"They don't grasp the seriousness of cross contamination and think I am taking it overboard. Sometime I wonder if I am going to far but then I read these threads and realize I am not." Just remember, you are the one that knows your own body, be confident in eating what feels right to you. -
OK, it sounds like I could give it a try. I saw that there was a gluten-free section in the cookbook that came with my breadmaker, and I got excited & wanted to try the recipes.

ARCHIVED In Pain And Feeling Depressed
BeFree replied to hazesdaze's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
"everything seems to have gluten" Hang in there...it seemed like that for me too at first. You'll start discovering more and more things without gluten as you get used to the diet. There are a lot of tasty and healthy foods that naturally don't have gluten (like canned tuna, popcorn, hummus...) you just have to get used to a new way of thinking and it... -
ARCHIVED How Long For Gi Symptoms?
BeFree replied to pucaandpixie's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
My symptoms come on very quickly. I can tell almost immediately if I've eaten something with gluten in it and/or cross-contaminated. I start getting a gurgly stomach right away. The length of time it lasts and the intensity of it or amount of pain, depends on how much of it I ate. I think the more you get used to feeling "normal", the more you notice... -
"After last weekend I can say that a "I was diagnosed with celiac" yard sale makes customers feel like they've won the lottery." LOL...yeah I'm thinking I should get rid of it all and tell everyone I just want new kitchen things for Christmas. Ooh a brand new clean kitchen for New Year's, I'm excited already!

"I try to look at it the other way round (Pollyanna warning here!), that that's just a whole bunch of junk that I don't have to look at any more, and I think how much time I have saved myself and how much simpler my life is" You're right...I used to crave fast food all the time. Every time I drove past a Taco Bell or a KFC I was so tempted. Now fast...

OK. My recipe book says, "Wash out your breadmaker between baking gluten-free and gluten-full bread." I thought that sounded a little dangerous. Has anyone out there that lives in a gluten-free and non gluten-free household, actually tried this?

I know I have to get a new toaster, but is there any way to clean my breadmaker? I'm gonna be making a lot of my own bread, and those things are expensive. I'd like to be able to use it again.

ARCHIVED Question About Definition Of Celiac
BeFree replied to BeFree's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
Hmmmm. Thanks for the info. It's really interesting learning how different foods affect people in different ways. The book that I'm reading talks about the history of celiac and how scientists went about discovering that gluten was the source of the problem. It's interesting. -
ARCHIVED Question About Definition Of Celiac
BeFree posted a topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
I am reading a book about gluten-free diets that says: "From the standpoint of celiac, the term gluten is used to describe proteins found in wheat, barley, and rye that must be avoided on a gluten-free diet. Strictly speaking, however, gluten is a protein found only in wheat." Does this mean that if you react only to wheat, you are gluten intolerant... -
ARCHIVED Four Months In And Feeling Alone
BeFree replied to mollydee88's topic in Coping with Celiac Disease
"Anthropologically, not eating wheat for whatever reason really hits people where they live. It can profoundly upset them, on a very deep level. I thinks that's something we, as celiacs, also need to appreciate when we're trying to communicate with the larger community." I haven't figured out how to explain this to my mother yet (which I'll have to do... -

ARCHIVED Avoiding Too Many Processed gluten-free Foods
BeFree replied to BeFree's topic in Gluten-Free Recipes & Cooking Tips
"we are the cusp of a really exciting time, no?!" Yes! I'm really enjoying trying all these new foods actually! Thank you for the detailed answer about different foods. I have heard a lot of good things about Mary's Gone Crackers and I'll have to try those. I did try to choose my pasta & sauce pretty carefully, all natural ingredients (I was... -
ARCHIVED Avoiding Too Many Processed gluten-free Foods
BeFree posted a topic in Gluten-Free Recipes & Cooking Tips
I know that I'm not supposed to overload on the processed gluten-free foods, but which of them are the healthiest? Last night I had some brown rice & flax-seed pasta for dinner, I thought that was pretty healthy, but does the pasta also count as one of the "processed" foods to eat sparingly? I want to be healthy, but I also want to eat the widest range...
