Most staff is clueless about what they use in their foods. That's why when I do eat out I'm just hoping for the best and try not to stress out. A lot of waiters/servers give you the, "oh not another health nut" look. I had one waiter at brewzy tell me where the low calorie food selections were after I asked him if the had gluten free plates. -

I don't follow it to the T either. I eat dairy because I tolerate it. There's nothing for me like a piece of Brie! I eat tubers and fruits mostly fir my carbs. Love the nuts! -

Anything involving a wrap, tortilla, or sandwich like is asking for trouble. I just avoid Mexican food that isn't carne asada. -
Anyone here following the paleo/primal movement to manage their celiac? I find it easier to manage this disease being paleo. No grains so far has meant no contamination, no need for an additional toaster, more control of my blood sugar, and easier on my adrenals. The only hard part is figuring out the fat/protein/carb portions. I find that if i cut on carbs...

Yes, I had all the symptoms prior to being diagnosed. Positive antibodies and positive biopsy. Just in this one instance i had respiratory problems, but i didnt actually ingest the breadcrums, i mightve breathed them in. Maybe there's something else in that room that I'm allergic to, who knows? -

It's been really tough. I had to quit my job because I was foggy. The thing is that my blood sugars are normal (high 80's low 90's fasting) and If I follow a moderate carb diet, they stay that way. The problems begin when I have something high in processed sugar. The coke spiked up my BG to 184 after an hour (was feeling really foggy) and within 8 minutes... -

Some spices have gluten in them, especially bulk ones. Read very single label!!!!! Also try eliminating other grains like corn and see how u do. -

@RIceguy: You are very right! I'm beginning to find new fondness for carrots and squash, zucchini, and I'm beginning to see that if I increase my fruit intake, I don't crave carbs as much. Who would've known that I could be well fed on a diet full of fruits and veggies? In my country it's not very common that you don't eat your breads and rice, so my family... -
Let her try to eliminate grains (rice, corn) and then add them one at a time to see if she reacts.

Thanks for the advice, guys! I guess it's better to stay off grains, period. If I eat veggies, potatoes, fruit and meat I feel good all day :-). Just miss the good ol' carbs. I used to LOVE my bread! The gluten-free brands don't do it for me. Good luck with trying out the buckwheat and I hope others can add it to their list of foods. -

The box said clearly gluten free, but you know how it is, you can't trust anything. I still feel like there a brick in my stomach and it's been a day. I was reading about lectins and how they affect some people with autoimmune diseases. -

The brand I bought was "kasha" and it is labeled gluten free. I wanted to give it a try since I love my carbs but can't seem to tolerate any of them (my post above was a typo, too many days of rice will constipate me and bloat me to the point where I can't wear my clothes). Does anyone else react to buckwheat and feels ill after having corn, rice, etc? I just ate some buckwheat (they say it's safe) and feel awful, brain fog, stomachache, bloating... I started feeling better in gluten-free to then feel worse as the days passed by. I found out I was deficient in a lot of minerals and vitamin b's.
