ARCHIVED America's 10 Hottest Food Trends
Claire replied to Claire's topic in Publications & Publicity
I think what Chelse says is what was at the root of my discomfort with this. That it will diminish the whole gluten-free subject - in the marketplace, the restaurant, etc. That would indeed be a setback for a problem just beginning to get recognized. Claire -

ARCHIVED Question About Abdominal Noise
Claire replied to odcdinah's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
I have had this problem to the point that the 'noise' kept me awake at night. Recently I was treated for h.pylori infection. The rumbling was worse than ever. It is better now but not gone. Very disquieting. Claire -
ARCHIVED Negative
Claire replied to smacky's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
Hi Smacky - Sorry to tell you - your doctor is wrong. Gluten free for 2 years and your test will definitely be negative. Don't ever let him talk you into a gluten challenge. Doctors just don't know too much, sorry to say. I have ataxia also though fortunately I have not fallen. Better not - I have quite severe osteoporosis. Did you have an MRI... -

ARCHIVED Rice Pizza Crust?
Claire replied to gointribal's topic in Gluten-Free Recipes & Cooking Tips
Hi Jaten: I certainly think it is a winner. It beats 'regular' crust for this family. As for the cheese. I would look into subbing soy cheese is you can handle that or some of the rice cheese substitutes that are available - better I believe than the soy ones and more acceptable for many people. ALSO: if you use very aged cheese - 6 months or more... -
ARCHIVED Rice Pizza Crust?
Claire replied to gointribal's topic in Gluten-Free Recipes & Cooking Tips
I see from replies here that most everyone is buying gluten-free pizza crust. I have never done that - even before going gluten-free. The recipe I put up was one I used for a long time as a standard. Unique and very delicious. I do hope some of you will try it. You will be surprised how good it is. It doesn't get soggy after standing awhile and reheats... -
I know that I recently saw a post about making yogurt with coconut milk. It went beyond just subbing coconut milk for regular - something additional to get the set. Maybe gelatin? Though I am very expererienced with computer searches, the search engine here defeats me. It doesn't seem to respond to the idea of finding a group of words together which...

I recently posted information on Sharon's Sorbet. I was told by the company that all their flavors are gluten free. The Coconut is not soy free. All other flavors are soy free, dairy free and gluten free. Claire -

I had constant itching - with no rash - for 10 years before I was tested and told that I had a Type II Delayed Food Reaction to wheat barley and rye. At that time no one was talking about gluten. With the widespread itching topicals were not a practical option. I used Solarcaine. I sprayed myself from head to toe - every night so I could sleep. I am...

ARCHIVED How Strict Do We Need To Be?
Claire replied to radman's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
TO RADMAN - Will address this to you but anyone is invited to reply. There is a post here regarding ataxia that 'went away' after 6 months gluten-free. This doesn't make sense to me. I was at once time a Rehabilitation Therapist and I alslo have a serious ataxia. Everything I know - medically - tells me that cerebellum damage that is visible on MRI... -

ARCHIVED Almost Ice Cream
Claire replied to Claire's topic in Gluten-Free Foods, Products, Shopping & Medications
I started this topic on Sharon's Sorbet. I have recontacted the company and have been assured that only the Coconut has some soy. All other flavors are gluten free, dairy free, soy free. What more can you ask! I am trying to get it into our new Marketplace- a great new local store with all kinds of gluten-free foods. Claire -
ARCHIVED How Strict Do We Need To Be?
Claire replied to radman's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
I was on a LGD for 15 years and while obvious intense reactions were eliminated - long term damage was not. I developed ataxia - gait and balance disturbance - caused by neurological damage to the brain.. I wouldn't chance it Claire -
I will post again this weight gain tip. It is an old remedy. Take gingerale and cream (heavy, light - even half/half) in equal portions - once or twice each day. A juice glassful is about right. This is rich, tasty and if you continue with it for a couple of months you will see definite results. Claire

ARCHIVED How Strict Do We Need To Be?
Claire replied to radman's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
SMALL AMOUNT OF GLUTEN! Oops. Here I am again to groan over any indication that a small amount of gluten may slow down progress but only do "a small amount of damage". The example a neurologist gave me will be offered here yet again. A grain of gluten put into a petri dish with a drop of blood from a celiac patient will initiate an almost immediate reaction...
