I am 1/2 swedish, from my mother's side (the side celiac came from), part german, & french from my father's side. The fair skin has nothing to do with gluten. I have an olive skin tone and my mom tan's pretty good too.

You can always try out the gluten free diet for a month, just to do a test run to see if this makes her any better. If it is not gluten intolerance or celiac disease then I would think that her symptoms would continue to repeat themselves. I would give him cream of wheat cereal, which is pure wheat, this way you or the doctor doesn't have any concerns about the other ingredients in the wheat cracker being fed to him after going gluten free. Lara bars are great to snack on and give you that quick energy you need without coming down hard later. Costco sells them in bulk. Costco has some other snack "bars" that are also gluten free. -

I got the lettuce wraps. They were great. I did have to ask for the gluten free menu, as they said nothing about it, and it wasn't mentioned in the regular menu, nor was it posted anywhere in the resturant.

When I first started the gluten-free diet, I could not tolerate anything fatty including meats. When i first went gluten free I lost 5 pounds in 2 weeks. I only weighed 105, so dropping down to 100 was a big deal for me because I didn't need to lose any weight. If you feel better without gluten, then why still eat it? Two of my sisters decided to go gluten free, one without being tested and one with a negative test result. They both feel so much better and will never go back to gluten eating again. Test results are not always 100% accurate, you should not hold them to such gold standards that the western world... -

obviously you are not concerned if wheat [gluten] is killing you or not. How do you know that your villi have not been damaged by eating gluten? I guess giving up gluten is more difficult for some than others. For me it was easy since I finally had an answer to my lifelong illness. Good luck. -

Sounds like celiac. I would definitely be tested just to rule this out. Also, if after being tested (if you come out negative) and you still suspect celiac, you can always do a gluten [eating] challenge. -
