kmag - I really feel like I could have written this response! I was doing great for a while and then ate some cheese and some ice cream and now it is flared up really badly. Gah! So, I am back on strict low iodine and am planning on staying with that until long after the rash clears this time, instead of rushing to trial something when it is just barely cleared...

ARCHIVED Interesting Article On The Correlation Between Wheat Consumption And Heart Disease
ItchyAbby replied to ItchyAbby's topic in Related Issues & Disorders
Goodness, that is a meaty article. I am enjoying it but really don't know how to talk about this stuff much yet. I am in the "sponge" stage - soaking up as much info as i can! IrishHeart - question away, if you wish! I'll still talk to you. I enjoy a good dialogue and some healthy skepticism. I have no personal attachment to this study at all. -
ARCHIVED Need Help Finding Specific Cookbooks (Or Recipes)
ItchyAbby replied to Oria's topic in Gluten-Free Recipes & Cooking Tips
I am not sure if these will be exactly what your are looking for but here goes: Primal Body, Primal Mind by Nora T. Gedgaudas, CNS, CNT The Perfect Health Diet by Paul Jaminet, Shou-Ching Jaminet Eating Well for Optimum Nutrition By Dr Andrew Weil -
ARCHIVED Chocolate Croissant, Or, The Holy Grail Of Gluten Free Pastries
ItchyAbby replied to BelleVie's topic in Gluten-Free Recipes & Cooking Tips
Here ya go! (Though I have not tried this recipe yet - it looks like a LOT of work): Open Original Shared Link Croissants were the first thing I thought of when I realized that I would never eat gluten again. I might have cried a little... -
ARCHIVED New Here...feeling Stuck
ItchyAbby replied to Laurenskii's topic in Coping with Celiac Disease
Welcome! You have arrived at the right place even though no one really wants to be part of this club at first. I am fairly newly diagnosed - been about 4-5 months - and I remember the feeling you are talking about all too well. Suddenly the whole world of food seems closed off to you and it feels terribly unfair and scary at times. It's okay. Allow yourself... -
ARCHIVED Upset Stomach - Gluten Or Stress?
ItchyAbby replied to addmoms's topic in Coping with Celiac Disease
I am learning that there is no such thing as "just" stress. It is just as real as say, getting a cold or eating something disagreeable with regard to how it can affect one's health and autoimmune symptoms. Because we cannot "see" stress and because it is such a part of our culture, we often disregard it as a real health issue that we need to address. I actually... -
ARCHIVED My Experience At The Expo
ItchyAbby replied to Adalaide's topic in Coping with Celiac Disease
That's awesome, Adalaide! And nice scores on the goodie bags. My local GIG chapter does a gluten-free food fair but it's not until the spring. There is a gluten-free food fair happening next weekend in the neighboring city at a community college. Neither will be as big as the expo, but I might go check them out anyway! You've inspired me! -
The What's For Dinner Tonight Chat
ItchyAbby replied to jess-gf's topic in Gluten-Free Recipes & Cooking Tips
Thank you! It was a really fun night. I was so nervous when I got to the restaurant and saw "sourdough" and "pasta" on the menu that I flagged down the server to double check. It happened to be the same woman I had corresponded with prior to going. She assured me that they are indeed, 100% gluten free. I felt a huge wave of relief and settled in for what... -

You can make Pandebono, colombian cheese bread: Open Original Shared Link or something like this: Open Original Shared Link I like to use it mixed in almond flour recipes - too much almond flour gives me "nut belly" -
The What's For Dinner Tonight Chat
ItchyAbby replied to jess-gf's topic in Gluten-Free Recipes & Cooking Tips
My sweetheart is taking me out for dinner tonight! This is an especially big deal because I have not gone out to eat in months, since the diagnosis and being low iodine just makes it really hard (plus I was terrified of all food for the first month or two). I am absurdly excited. We are going to a restaurant that just opened this year and is 100% dedicated... -

ARCHIVED What's For Breakfast Today?
ItchyAbby replied to GlutenFreeManna's topic in Gluten-Free Recipes & Cooking Tips
Oh yay! More threads where I can see what other people eat and glean ideas! Today I had: Shredded parnsnip "hashbrowns" (cooked in home rendered lard and sprinkled with coarse flake salt) Pork sausage patty (ground pork, allspice, granulated garlic, fennel seeds, s&p) Some mizuna, frizzled in the pan after the sausage comes out. A peach (almost... -

Friend (who has just found out that I cannot eat gluten and I'm low iodine): So what can you eat? Me: Oh lots of things. There are many foods that are gluten free naturally... Friend: I made this amazing stew you would like. I made it for Michael - he's vegan, so I bet it would be good for you too. Me: Ummmmm This has happened several times lately... -

ARCHIVED Symptoms Improved But Haven't Gone Away.
ItchyAbby replied to jimhalpert625's topic in Coping with Celiac Disease
I am going to echo what has been said here a bit, but for emphasis: Start including WAY more vegetables in your diet, especially green leafies. Your current diet is lacking quality, nutrient-dense whole foods. And all those gluten free breads have things like xanthan gum in them, which some people have a really hard time digesting. (If you want to read someone... -
ARCHIVED Newly Diagnosed, Not Optimistic About New Lifestyle

Everyone here has already given such good advice that I am not really going to add any more. I will say welcome to the forum! I, too, am/was a carb and baked goods... -

This thread is great! Being a newb at this, I am getting hit with all these things for the first time. I imagine these questions and comments are common: "What do you eat?" (often accompanied by a truly alarmed look) I want to answer: "Oh, you know, twigs" But I keep trying to remember that this may be a teachable moment, so I tell them all the things... -
ARCHIVED Gluten Free 4 Months And Dealing With Fatigue
ItchyAbby replied to ItchyAbby's topic in Coping with Celiac Disease
I think you and I are about on the same timeline! Most mornings I feel ready to get up and go - then by 2pm, major nap attack. Thank you. It makes sense that I would need extra sleep through the healing process. I think I am just so afraid of missing something (again!) that I am hyper sensitive to any little feeling. Reassurance from the community helps... -
ARCHIVED Gluten Free 4 Months And Dealing With Fatigue
ItchyAbby replied to ItchyAbby's topic in Coping with Celiac Disease
I had mine checked back in July - my TSH was normal. But that was right when I started the low iodine part of my diet. Maybe I should check it again? And is there something besides TSH that should be checked? -
ARCHIVED Gluten Free 4 Months And Dealing With Fatigue
ItchyAbby replied to ItchyAbby's topic in Coping with Celiac Disease
I had my nutrients checked and everything looked really good. My B12 was ever so slightly low. But maybe I should check again? I am taking supplements, including a chewable B12 (gluten free). I have had some higher highs! (If I am understanding you correctly...) I feel pretty great sometimes, and good most days. The bad days are fewer and farther between... -
ARCHIVED Gluten Free 4 Months And Dealing With Fatigue
ItchyAbby posted a topic in Coping with Celiac Disease
Hi all - Today marks 4 months for me being totally gluten free. I do not go out to eat at all. I cook all my own food from scratch instead and I am feeling much better. My DH has cleared significantly (thanks goodness) and some other symptoms have diminished as well. But for the last two weeks, I have been SO tired, especially in the afternoons. I have been...
