Sadly just had gluten free chicken strips and oreida fries for dinner tonight. We ran out of Thanksgiving leftovers and have yet to venture into the grocery stores to replenish.

Come to texas and I will feed you! LOL... for something I made on a whim, turned out real good. Hubs thinks its hilarious when I eat gravy by itself, but I very rarely make it.
It would be fun to visit some other Celiac's households... But Texas is kinda far for a quick trip!
Today we are having beef tacos. I baked some lemon poppy seed muffins for my boyfriend to take with him to work for breakfast. He will still buy the glutenous muffins from the grocery store and just bag them immediately and store them separate from our other food. But he didn't feel up to making a trip to the store and I felt like baking so it was a win/win. I glazed them, too. Turned out pretty good.

Tonight I was inspired by something I picked up at the grocery store meat counter... going to make steak fingers (fried strips of tenderized breaded cube steak for those unfamiliar) with some mini potatoes and something like peas on the side. Gonna make some white gravy, too, to dip them in or it just wouldn't be right. Yummm
Can I come over for dinner? That sounds wonderful!

I made a Thai red curry tonight from the cook book Artisanal Gluten Free. I would recommend to add green peas, snap peas, carrots and fresh basil (fresh basil as a MUST - add at the end of the recipe). I had a favorite dish at a Thai restaurant in Davis and have CRAVED it for a year now. I can now say my home recipe is 99.9% similar and my taste buds cannot decipher the difference. I am so HAPPY!!!

I made a few recipes this weekend to try and get out of the food rut I've been in. I made a recipe from Against the Grain cook book this weekend. It was the slow cooker beef chili recipe. I thought it tasted good however the sauce reminded me of a mole sauce. So with a few tweaks and change to turkey breast I am going to turn it into one next time!
I also tried my hand at Arepas this weekend. I think I over cooked them because when I sliced them through when I thought they should be done the knife had some doughy residue on it. But I think that is what is supposed to happen?! Can someone advise? They were edible but not as I remember having at Pica Pica (in Napa). I saved them however to eat with my chili and they work well as like a corn bread disc. LOL
I made the ATG slow cooker orange sesame chicken... I over cooked it and burned the sauce. My crock pot only has 4 settings (2 low heat, 2 high heat). I think I need to invest in a new one. Anyone have recommendations? I usually only cook for 2 people but do entertain for Thanksgiving.

It was heaven. I wish I had the energy for more spontaneous meals like this but usually default to grilled chicken, rice and veggies. I need to invest in a weekend day organize crock pot freezer meals.

Tonight I had a big juicy beef burger on an Udi's bun with some crunchy tator tots. Such a naughty yet satisfying meal.

I buy Mission tortillas all the time. Not saying it's out of the realm of possibility but there are many here that have safely eaten Mission tortillas.

I made chicken fried steak and potatoes Saturday to mimmick the birthday dinner for my boyfriends Grandpa. Apparently it looked so similar people were asking if I was cheating. HA never! I brought everything over and heated it up in the microwave and ate with the folks like I was one of them. Moosie for the win!

Last night I had a NY strip steak with a baked potato and broccoli. Simple yet totally delicious. Don't know what I'm having tonight but we have chicken breast thawing and some Aidelle sausag in the fridge.

My eggs were given to me by a coworker that is raising some turkeys for Thanksgiving. He found out about my chicken egg intolerance and kindly offered up his turkey eggs. He said he will continue to collect them for me if they worked out.. I emailed him this morning with my success story!! Duck eggs are usually bought from an asian market. I will be trying those next since I may eventually run out of options come November...

I julienned some potatoes and made some awesome hash browns for breakfast yesterday and then fried a turkey egg and plopped it on top. It was so good that I did it again for dinner. Happy dance for me because I successfully ate turkey eggs with NO reaction! YAY!

Thank you both for your rub/marinade ideas! I tried a rub that was a little too peppery (as in chili peppery) last time. It was good but it struck me as imbalanced.

I have a pork loin to roast tonight and some chicken breasts to grill. I'm getting a little tired of my normal routine. Anyone have a good spice rub for the pork? Aherm.. I see Karen you have a rub mentioned in your post???

I haven't decided yet- But I wanted to try and make some gluten free bread rolls tonight. I made some last night with no yeast and they came out a little too flat. Delicious, but flat. I forgot what fresh baked bread smelled and tasted like.

Last night I made a roasted pork sirloin with an herb spice rub recipe I got off of allrecipes.com. Served with brown rice and broccoli. I'll be eating it again for a few days.

I made an on the fly chili last night with 3 chicken breasts, keilbasa sausage, black beans,kidney beans, onions, roasted red peppers, jalapenos, rotel tomatoes and corn. I used a homemade chili seasoning. Turned out so great!

Glad you are back!
I can not have eggs either, but can eat them in baked goods. I keep testing it (last 20 years) but no luck! Made a soft-boiled egg two weeks ago or so, and it made me sick. Ugh!
Tonight is grilled pork tenderloin, salad and some asparagus.
Yeah.. I seem to have the same fate with eggs as you. I can eat them when "mixed and diluted out" in baked goods. But I used to eat egg whites every morning and I love a good fried egg. *sigh*

Been sticking with grilled chicken, rice/potatoes and veggies lately. However I did make a pretty fantastic lasagna a few weeks ago. But the cheese proved to be too much for my poor GI to handle. I am very dairy light these days. Figured out I have an egg intolerance which makes me sad... but at least I don't have crazy GI issues from it anymore.

So, I am going to address the relationship question. 1) Does your boyfriend treat you poorly since diagnosis? 2) Has he implied or stated that he feels you are a burden since your diagnosis?
I went to therapy after I had my diagnosis and I felt terrible about my boyfriend having to adjust to my new lifestyle. I had a lot of guilt over it. My therapist said that if he stuck around and was willing to adapt with me, that I need to trust him. He questioned if I trusted my boyfriend before I had the diagnosis. I said yes. So then why would I not trust him now if he's willing to do the work? I couldn't argue with that. He is now my husband of 7 years, almost 10 years together. I am not saying that this relationship will be the everlasting love, but give it a chance. Don't necessarily reject him before he even has a chance to reject you.
Ask your boyfriend to brush his teeth before being intimate. If that is a huge problem then that may be a red flag. Dining out may be difficult in the beginning, but as you become more confidant in your questioning of the staff (ask for a manager) you'll have more options open up. You will probably have to fend for yourself in social situations. As others have suggested, host! I host a gluten free Thanksgiving for my family every year so I can eat! Everyone loves it and I get the leftovers. You'll adapt. It's all very new and A LOT to take in.
