KayJay has a VERY important point - don't limit yourself to gluten-free cookbooks. Not only will you get a much smaller variety of recipes (I think ;-) ) but you won't learn how to make real-time substitutions. cross contamination is a hard one to avoid, and I've been using Bob's stuff (the gluten-free ingredient items not produced in their gluten-free plan) without a problem, but some people do notice problems. it's not - by the anecdotal evidence - like the contamination problems that Arrowhead Mills was having (at least a little while ago) but still a risk....

I don't think there is any reason to be quiet about this. I think you should be quite vocal. The hospital would be liable if they killed someone with a peanut allergy by telling him to eat his peanut soup after they had been informed, and this is no different. Once the hospital is informed, they have an obligation NOT TO HARM YOU! Please do speak up...

Does apple butter count as a fruit dip? If so, it's as easy as simmering chopped apples with cinnamon (sugar, if you want it, I suppose), a touch of lemon juice, and maybe allspice and nutmeg if you want as well, stirring occasionally (more at the end) until it's the consistency you want.

leelee, I'm not one to regularly suggest that biopsies need to be performed, but in this case, if they're going to get him in quickly, I would make an argument for it. Not because it is a "better" diagnosis, but because it is a more easily accepted diagnosis in the medical community and that may aid you in dealing with your child's doctor(s), teachers... -
Congrats! That sounds so great. It's the sort of thing I'd love to do if I had the time/money - that is, it's a pipe dream for me! :-) I wish we'd get more stores like this out in SoCal - we've got a lot of vegetarian/vegan places, and a lot of ethnic places, and a few raw food places, but a guaranteed gluten-free place... I agree with celiac3270 - if it was an absent minded thing because you haven't been on the diet that long, remember that it'll take some time to think of food as "guilty until proven innocent" (with respect to gluten content, of course! ;-) ). A positve reaction to the dietary challenge IS a valid test. As for the diet, it need be neither bland, nor cause you to eliminate an entire food group. There are a lot of gluten-free grains that you can use. I'm confused when you say that most low carb foods are not gluten free... Meats, nuts, oils, non-starchy vegetables, leafy greens... all these are staples of a low-carb diet and naturally gluten free. Could you be more specific about the conflict you're seeing?

I don't remember how long you've been gluten-free, but with practice, it doesn't feel like "coping" at all. You get the hang of eating gluten-free just like you would otherwise. Do you find it hard to eliminate millet from your diet? Probably not, but because you don't regularly eat millet. When you're used to not regularly eating wheat, it will be easier...

I agree with finding another doctor. Whether or not your insurance will cover it depends on your insurance - we can't answer that question, but mine did. The doctor clearly is not cooperative, and remember, you are paying him to perform a service for you. Expect more from your "employees"! :-) -
