  1. I hate to even feel the need to suggest this, but I'm going to anyway - If you already have people trying to tell you that the gluten-free/CF/SF (and vegetarian) diet is child abuse, PLEASE keep a meticulous food diary for her. Every food, every vitamin, record it. Food diaries are useful for us to identify other food intolerances, but in your case,...
  2. I think it's REALLY sad that people don't even know where their food comes from. Being so clueless about what sustains your life... And NOT CARING! I can understand ignorance - we're all ignorant about some things - but willfully maintaining that ignorance in an area that is so important to your health (whether you're celiac or not)... I don't get it. ...
  3. Kaiti, if you want to reduce sugar further, you may find that some of your baked recipes will simply take less sugar. When I make banana bread these days, I use half the sugar called for, and sub half of that with honey, and the other half-equivalent of that fructose. (I prefer fructose over sucrose because you can use less of it for the same sweetness...
  4. The genetic test won't tell you if you have celiac - only if you have the chance of developing it. Tests for diagnosis celiac simply aren't reliable that early in life - a recent study showed that biopsies weren't even reliable at 2.5 years - there were a number of missed cases that showed up during a follow-up at 3.5 years.
  5. "The point is though just about everything we eat though has sugar and the amount sugar people are getting today in food is pretty much excessive." And there's reason number two I'm so pedantic about not buying preprocessed stuff and doing the cooking at home from whole ingredients. :-) I definitely agree with you that most mainstream products have...
  6. grills are fine as long as you're not putting stuff containing gluten (including marinades) on the grill.
  7. I use the crystal. I love that thing and it lasts for ever. Definitely not an antipersperant (I agree, I don't like those), but works great on odors for 24 hours (or thereabouts).
  8. I'm appalled that they treated you that badly! I wonder if a lawyer calling them about reckless endangerment would have calmed them down at all!?! As for feeling better... Some peppermint tea or ginger tea? I also tend to go with a low-residue diet during those times so that my intestines have less to process. (I'd put down some ideas, but it's been...
  9. Yep. Some people find that canola oil makes their stools yet looser, and a celiac who's having D problems probably wouldn't want that, hence the reason some sites say to be careful of it. I've always used it (or olive oil).
  10. I thoroughly agree with terri-anne. Multiple flours is the way to go. I don't use rice flours often (mostly the higher-protein flours instead), but, except for amaranth pancakes, I never use a single flour...
  11. Depends... do they have to be casein free? If so, you've got like two choices: Follow Your Heart and _some_ of the Soymage stuff. If not, just read the labels, most are gluten-free, but you have to read the ingredients.
  12. Lol... the "why sugar is bad" article... classic! Sugar is not inherently bad. Period. It's in the vast majority of the foods we eat - and our body does exactly the same thing, strips it and simplifies it out of the foods we eat. The article does correctly state that it's the amount of sugar we consume that's the problem, and then later says "sugar is...
  13. If the blood test doesn't convince you (or your doctor IF (and only if) you feel the need for him/her to be convinced), then do the biopsy now, before going gluten-free. (You'll need to have her on gluten for ~3 months before the biopsy.) They do biopsies on children all the time, and virtually all the stories I've heard of young childern (younger/smaller...
  14. I think it's also possible (not like we need to make matters worse, but hey, we're human!) that as the first few days go by on a gluten-free diet, first few weeks and months as well, we tend to by SO hypervigilant about how we are feeling physically that we no longer overlook small things we may have overlooked in the past. So, because we're looking so very...
  15. I also think it's important to remember that the new testament, in particular, was written by humans, and given the political climate at the time and the historical evidence, it was almost certain a set of male writers. Whether they had specific intentions of "keeping females in their place" or not, they wrote in the context of their times, and times do...
  16. Buckwheat, amaranth, and quinoa are all gluten-free, as has been mentioned. Teff is gluten-free as well. Sorgum is also gluten-free (though it's closely related to corn). And millet is too(though some corn sensitive folks cross react with it). I use these in a number of forms: flours (all of them, as I don't like using the lower protein/lower fat/lower...
  17. BTW, Splenda is not derived from chlorine. It's regular sugar, with one of the two cyclics flipped over and an OH group replaced with a chlorine. While some people don't do great with it, studies have not shown it to be dangerous to your health. Of course, if your body doesn't do well with it, don't use it. (FWIW, there have been studies done on stevia...
  18. celiac3270's right - a recent study showed that many kids tested at 2.5 years came out negative in 'scopes, but when retested at 3.5 years, came out positive. 20 months can be too you for tests to be accurate. (Sometimes, not always.) As for whether or not you need to have a doctor's diagnosis... only you can answer that question. My blood tests were...
  19. Last time I was at a banquet (and I was getting an award), I made my requests and avoided what I couldn't be confident of. I went to two work-related Christmas parties last year where I just sat there and either had my own food or had eaten before. It's not quite as much fun as eating there, but more fun than missing the event, and definitely more fun than...
  20. There's the thought that those with nontrivial intestinal damage may have trouble with lactose, since lactase is produced at the ends of the villi (the first place damaged). Some of the rest of us have simply found that we don't tolerant casein well, even if it's not a milk allergy specifically. But I sure do miss yogurt! ;-) (Soy yogurt is not really...
  21. Yep, that's Arrowhead Mills for ya - they've had issues with cross contamination, and to CTA, they say "made with non-gluten ingredients" but usually put a "produced on equipment that processes wheat..." statement on the box as well. Some people have had a problem with their stuff, others haven't. I use their stuff sparingly.
  22. We can give you some ideas, but no one can really answer that question for you other than you. For me, I get some symptoms (head fogginess, disorientation) within 15-30 minutes, but not always to the same degree. I'll get abdominal pain and noisyness within 8 hours or so, and usually some change in my stool (not extraordinarily significant for me) within...
  23. A lot of people are allergic to wheat but can have the other gluten containing grains that we cannot. This stuff is for them.
  24. Entirely depends on your supermarket. :-) The ones I've gotten at various places: Environkids Gorilla Munch (a bit on the sweet side for me, though) Health Valley Rice Crunch 'Ems and Corn Crunch 'Ems Pacific Valley's Nutty Rice (NOT the corn variety) Erewon's Crispy Rice Nature's Path Mesa Sunrice and Cornflakes And, of course, hot cereals like...
  25. I just want to reiterate the statement that healing is different for everyone. While you may see some improvement in the first few days, you may find you continue to see improvement for months. It depends on your body, how much damage their was, and how careful you are about gluten-free now. Not to mention the other things in your life like how much stress...
